[Music] hello everyone how are you doing it's lovely to see you again and as usual a very very warm welcome back to what's for tea I hope that I find you all very very well indeed it's absolutely freezing tonight has been cold all day I'll pop a couple of video clips up here and that's was you know where we are that this was this morning this was the front of the house in the back of the house and as you can see the rains coming down it sleet it's one day lovely typical Scottish winter weather but what can you do I mean I actually quite like it I don't mind the cold rainy windy aware there but you know just typical Scotland so I'm kinda used to by no but you know completely different to it you'll be used to if you're from like Australia even the states but yeah cold and chilly so what we're leaving tonight and a cold chilly night as something nice and warming and classic in comfort and just like this classic men's beef and onion pie now have you been watching my channel for a wee wale you'll know that this is one of our absolute favorites now I normally get my mince pies from the local butcher but they're so so easy to do yourself you know if you've got a wee bit of time why not give Argo and especially if you're using your you know that's ready-made puff pastry it just cuts the time in half basically so I'm going to quickly take you through this recipe and ended up wonderful all of the ingredients under weights you will find and the Box down below if you just click on the show more I'll bring everything up down there for you so let's go and see what I've got tonight so the first thing I've got is one beef auxo cube I've also got a good knob of butter know that that's just for frying but you can use oil if you prefer I've got one tablespoon of plain flour I've got one pound of beef statements I got this one from the local butcher and it's quite important you get a good quality men's because some of the cheaper ones you know you'll get an awful lot of liquid from them a bit you know bit quite giddy see and you know the texture just won't be as nice so if you can get your butcher I recommend getting it from your butcher I've also got half a paint of beef stock I've got a large onion which I've just finely diced I've got one egg yolk that's just for glazing your pastry at the end and I've also got a sheet of ready-made puff pastry no there's about 320 grams and not if I recommend you know going for the bigger box if you can get rained about 400 I would say go for that because I just I was a bit but short you know I could've been doing maybe about extra but I made it work in the end so let's go and see what we're doing next so this was the peach tree that I used today and there's 320 grams and this but I was just a wee bit short but I thought it we were patching up and it was fine this is this beef stock that I'm using it's just I ignore GLA port and I've also used 1 ox or cube now this is just a beef stock cube so you're going to need a 10 or a pie dish I used this one I actually get a pack of 10 of these which I'll link down below in case you want to go and check them out now these aren't nonstick so I've greased mine with some butter so first thing you want to do is go over to your cooker get your pan winter medium heat and melt your butter once it's melted you can pop in your onions you just want to stir these around and cook them till they're just beginning to color just like this thanking when and add your mince they just want to break this up with your spin and let it fry OE until it's nicely browned all over now as you can see this pan is bone dry because there's virtually no fat in the smells when should at that stage you can poop in your ox or cube together we start around and then your plain flour they just thoroughly mix their Sun and give this a cook for a minute or two just to cook out the flow a bit then you can add your stock so I'm using half a paint you just went together a good mixin and I decided to add a few splashes of Hendersons relish if you can't find Henderson's relish something like wish - our sauce will do it's very similar and I know it's very easy to get you just want to bring your men's up test simmer and let us cook until you know the water has soaked and a good button has grown a good deal thicker whilst you're waiting you can get your PhD done so you just went to unravel your pastry sheet you can use puff pastry or short crust it's up to you but some people put short crust underneath and puff on the top I'm just using old puff I'm going to draw the so quite thin because I know at this stage I'm not going to enough so I'm going at all as done as I can and using my 10 as a template you know yeah when you're wanting to circles basically the seam one for the bottom and one for the top now I looked at last I thought I am NOT going of enough already knew but you want to cut your piece J slightly bigger than your 10 because you want it to come up the sides this is your bottom you just want to pop that into your 10 give it a good place down and just make sure it comes up the sides and over at the top just keep sort of manipulating it you know massage your up the way and it will come over the top and just trim off any excess with the back of a knife you know the blunt end is easier and that certain easy peasy now you can actually beat this if you like before putting the mixture and I don't usually bother because it's so so thin you know what they cook say anyway but you can bake this first if you like just make sure to weight it down you know with some parchment paper and race or baking beans so that it doesn't rise now we're going to do the talk piece now and as you can see there's just a smidgen too small so I'm going to grab my QB extra bits from the bottom and just patch up just give her a quick roll over the top just smooth it down Evert battalion that's exactly what was looking for so you just went to do exactly the same for your taupe slightly bigger than your pie dish he just went to refresh it you know a little refrigerate that's until you're ready to put your men's mixture and just make supper easier to work with you know it's chilled so pop that into the fridge you just want to kill your men stone and this is what you're looking for lovely insects tell gravy in there but it's not soaking away anymore so once your menses Kuehl to get your pastry out of the fridge and get your men's unto your keys Pat it down will so it's nice and compact and then you want to wet the rim of your pastry just so that when you put the tour point it's stacks down we'll the last thing you want to do is pop your pastry on and I'm just going to go around the edge with my fingers and just place it down with my thumbs just to squeeze those two edges together you basically want to join the bottom with the top so that it creates a seal and again just cut your excess pastry are we with the back of a knife really easy this it's quite satisfying doing this virtually and you have a left with a nice pastry but he slipped like this and that's it as you can see that it's nicely sealed you know it's completely sealed there so this is what we're looking for the last thing you want to do is brush the top with egg York you know I like to use egg yolk because it's a lot rep cherry you know and it gives you a lovely brown shiny torpid use a Quay or a combination of both you went to cut a wee hole in the top to let the steam escape when it's cooking now I'm going to score the top I mean this is completely optional obviously so it looks pretty even it comes out the oven now you want to bake this in the middle of your oven forth between 30 and 35 minutes at gas mark 6 200 C or 400 F now halfway through I like to cover main with foil you know just to prevent the pastry burning and this was main just though at the oven lovely all you have to do now is cut it and serve now there's four of us for tea tonight so I'll easily get four portions with us so we haven't bruised new potatoes some garden peas and nuts the pie aveer a squash the front and I was taken out with it and dear that's better I'll be about of extra men's and that's a good to go absolutely delicious this it really is so that was that that was maybe a recipe like I said really really easy because you are using short bought Peachtree but I mean you don't have to have a bottom and the top we can simply put the pastry on the top feeling yeah I know a lot of folk that do do that feel the bottom on the top but like I said if you like I really just bottom pastry I would recommend that you bake your bottom piece tree first just before you put your felon and you know like I said just put me about a parchment paper and weight it down with some race or beans or bacon being something like that for 10-15 minutes left then fill your pie it just depends what you prefer but yeah that was maybe recipe so thank you for stopping by but just before you go I
