- We're gonna give pasta night a nice upgrade. Creamy roasted red pepper pasta. So delicious. Probably the best pasta I've ever made. And that's saying something 'cause I make a lot of pasta. You know I learned this tid bit of Italian wisdom from an Italian Nona. Pasta does not wait for the sauce. The sauce waits for the pasta. I think it's a proverb. Yeah, you don't want your pasta to finish cooking before your sauce is ready. You gotta work in harmony with the pasta. You gotta work simultaneously. Water is bubbling and we are going in with some Rigatoni. To start working on this sauce, begin by sauteing your garlic in a little bit of extra virgin olive oil. This is key to giving you a lot of flavor. We're just gonna go ahead and make the sauce. A little bit of garlic that goes right in here. Some roasted red peppers. You could roast your red peppers ahead of time. That's what I did. You could also use jarred bell peppers because it's a no judgment zone, you know what I mean? Half a cup of milk. Any milk of your choice that is not sweet. And then we're going in with a nice big pinch of kosher salt and a nice big pinch of black pepper. And a little bit of oregano, about a half a teaspoon or so. And some paprika, also a half a teaspoon or so. Once this whole party is in your food processor, we're gonna go ahead and blend. Okay, let's take a look. Ta-da! Nice and smooth. Before we drain the pasta, let's grab some of this pasta cooking water. Facial time. It's free. It's a free facial. Back to our pot with our beautiful Rigatoni. I love that it has ridges to hold onto the sauce. And from here, we're gonna pour the sauce all over the pasta. You know the one thing I never understood, David, about when people make pasta? People don't mix the pasta in the sauce. A lot of people just like... you know what I mean? they don't mix the entire pasta and the sauce. If you want it to actually have flavor, while the pasta's still warm, you're gonna want to toss it in the beautiful sauce. You can help it out if you need to with a little bit of the hot starchy pasta cooking water. The starch will help make it creamier. And then we can go ahead and add some Parmesan. Yes, flavor party. I like to add the Parm kind of in layers as I go. And keep stirring and adding a little bit of the pasta cooking water. It will thicken and get more creamy as you allow it to sit for just a minute. Don't go anywhere. Got a last final finishing touch for you. A sprinkle of basil, fresh basil. Oh, yeah. So we've shaken up the pasta night game. Probably the best pasta I've ever made. Sweet, smokey roasted red peppers combined with the Parmesan. A little bit of garlic and olive oil. It is out of this world.
