to you communicate and that's exactly what to do with the whiskey all right okay so you need to come on your hello sixty-eight percent alcohol hit your nose alright so you forget the alcohol and you go back into the middle of it and you say how are you you've got two nostrils one will be better than the other that's why you've got to move around to make sure that the time of the day whether it be in the morning or the afternoon will tell you more you need to know but if your eyes start flickering when you're nosing this new spirit that means you're losing it too aggressively in this sample room I've had three women or collapse and faint in front of me over the period I'm because they've nosed it too aggressively you must do it gently so when you nose it it immediately tells you something with a spirit it says to you hello I'm in a bad mood I'm hot I'm fiery I'm peppery I'm aggressive I want to go to sleep I've got a better cereal note a bit of orange coming tying there but I've got also good damp leather and I've got baby sick and I need to go to sleep I need to sleep for at least 12 long years so when the illicit distillers started producing the whiskey they couldn't wait 12 years they could only wait 12 seconds that's why they put mint sugar fame into the whiskey then they drank it and within a half an hour they were dead because they learned the hard way they were only distilling it maybe once not twice it's only when it is still twice to do then purify it so that's the beginning of it okay that's the beginning of it there just to look at it just to show you all right thank you alright so what you got here there's the beginning of the whiskey it's not been in the cask alright this is very important this has not been in the cast so therefore it's not taking any colour from the wood okay okay so because you know wood maturing the whisky is what it's all about nurturing it the same way now remember the new spirit it should be any children yes many children because two boys it girls boys boys old are they 40 yeah 1721 1721 all right if you get them what you need to do is blame fold yourself and then smell them on the hairline and you should be able to date the difference between the two because when a mother is actually holding a baby she's real actually going to kiss her kiss their children on the hairline and that's where the smell is it's the same with the spirit here that's the basic smell that will remain all the way through the malt whisky and you'll see it reflected in this here all right putting on the wrong way so this is this is Dalmore this is Dalmore okay this is 12 years old this is 70 percent American white oak it's been matured 70 percent American white oak 30 percent sherry wood from her Ethel a frontier okay so there because the sherry wood is going to nurture it's going to soften it down it's going to give it a softness or roundness that's been in the cast front least finishing period of at least two years so it's going to have an influence like your pair fume that you're wearing today they'll have 26 different nuances it's the same with a whiskey so once again you put it in the glass put it on the nappies and everything else yeah okay that's the beginning when you smell the bus queue just is what you said when you smell it like that you'll see it's very hot fire is peppery it needs to settle down it needs to mature it needs the warmth of the wood not just any wood American white oak or all arose with sherry bucks from her elephant ear that's what we'll mold it so when you notice that second one here you'll see it very soft now see how it's developed it's softened down it's easier but when do you drink and how'd you drink it that's the problem so what you need to do is you need to more acceptable because if it's not the right strength if it's too strong your eyes will flicker you're not paying attention to my conversation you're like you're thinking the whiskey but people don't
