here in Hawaii we all love to eat potato mac salad and today keone is gonna show us his favorite version of potato mac salad so what makes your is so special well you know that's a good question right I wouldn't see it mind is like the most special in the world but I think what I what I think is good is that I'm I want to stick to what I think everyone tends to do in Hawaii to make a great mac salad potato mac salad and you could make just potato salad or mac salad or you could mix them together but I thought we would talk about and make something that is reminiscent of what you would tend to see if you go to Hawaii and you have one or you want to make your own so the first thing that we start with typically is let's start with it let's start with the potatoes I want to talk about potatoes here so you can go about these in the bowl but what's important about the potatoes is you're gonna go ahead and you want to cook them and you want to cook them well so that the edges are starting to actually come off and what's important about that is when you finally makes the potato salad the edges sort of starts to come off and then it kind of smooths everything out as opposed to having individual pieces that are just floating in meanings it makes yes so when you're boiling the potatoes how do you test it to know that this is what and you know that as well as you know you go either boiling and or simmering because if you're boiling and that's a good point you don't want to boil them you bring it to a boil then you simmer because if you boil they'll start to fall apart when they're cooking because it boil and then simmer so there's a gentle and then you're cooking them and then you're gonna take a fork and you want to pierce into a piece okay and the fork should go into the potato and slide it and and not fight against the fork okay that's fork tender so when it's fork-tender you're good to go well and what's important to do is you know you always want to when you're cooking you should be tasting and checking and using judgment right so you check to see that it's fork-tender and if you're not sure take a piece off bite into it and they should have give it should yield to your teeth okay okay all right so now we're gonna season go ahead I got some pepper here you can put all that pepper anything interesting so you season right away yes and then I have garlic salt that we're gonna put in and the reason I'm using garlic sauce is because that garlic salt is like total staple in Hawaii and that garlic's gonna add some flavor as well now we have vinegar here that's going to go in here and and your point I'm seasoning and putting the vinegar into my potatoes and the potatoes are cool but they have not been refrigerated because I want it to be room temperature and not warm because if warm and the mayonnaise would be a little scary right but I wanted to room temperature so that the vinegar and goodness stirs I want to make sure that the garlic salt and the pepper and the vinegar has a chance to work its way into the potatoes so I'm seasoning the potato you see how it start to break up oh yeah that's good so now we're going to go and add the macaroni in go ahead and pour it all inside there now the thing about the macaroni is you want to cook the macaroni till it's very tender so not not al dente yeah for this deal it's not al dente you don't want outdated because it should be tender and soft if it's al dente then you're making not always done that myself potato mac salad okay so we have that together that's perfect and now we're gonna add our inclusions into the process here so we have peas and the peas are gonna give some nice color and it's gonna give sweetness to the dish and then we're gonna add a gonna add egg in the last minute though because I don't want that to to break up too much and then we have some shredded carrots that are gonna go into the mix for color flavor and texture I feel like your potato cubes are so huge is that because I'm going to smash it we okay so now we have this is the this is the this is the other very important part is the is the mayonnaise and in Hawaii the the I think everyone in Hawaii or a lot of people in Hawaii use best foods and that's the best foods is the brand of preference for for a lot of things in Hawaii and that's what this I mean is for mayonnaise and we're gonna put mayonnaise in here so that's go ahead and you start mixing when I put that in there go ahead and fold that in yeah I can see how you could add different things to this you're at this point right like crab you could add crab you could add cucumber cucumber people that tuna you can add surimi which is imitation crab bacon what else can you put in there yes so you can make this as kicked up as you really want to make it but the the general sense the the the one the basic standard one is the one that we're sort of making here notice that we're being very liberal you want to add a little bit at a time though because you don't want it to be well I start I start with a recipe amount and because we're using judgment here sometimes potatoes are bigger or smaller than others when you're making the recipe and you know some people like to put a little bit more a little bit less I think that's good and and some people like to put a little bit less so we're gonna stop there and I'm gonna add just a little more seasoned because the thing that we want to do is we we season as we go okay and I we we do and if you're doing this for the first time you want to taste it more freaking even because I've done this like okay I'm a seasoned professional anyway in this case here so I want to put a bit more cuz I I know it's them seasoned got it well that wasn't a joke to me okay now that's good I'm gonna go I'm gonna add this I'm gonna add I'm gonna add all this but I'm gonna leave some for garnish okay that in make a Japanese potato mac salad so how do you do that what do you add that's different in that one cucumbers mmm that one at least for me at least I put the cucumbers in there and then Japanese cucumbers Japanese yeah okay so that looks good you want to try taste oh did you see the gyro and I just said you like chai taste right it's so local that I had to say that okay taste it really good okay so let's go ahead and put in a bowl look this is you know so we can make it pretty you can go ahead scoop it out so the key is to make sure the the macaroni is just right and the potato is just right and the seasonings are just right and if you do that it's like it's a piece of cake right so go ahead put then I'm gonna garnish it a little bit okay so we're garnish it for some color go ahead and put some green onion curls on there and now this local
