this is pasta pomodoro to a large pan add some extra virgin olive oil finely minced garlic and a pinch of red pepper flakes try gently for one minute without burning the garlic then add soft cherry tomatoes and cook them on medium to high heat for about three to four minutes or until they're soft and juicy add whole canned peeled tomatoes some marsana will be the best if you can find them season with salt black pepper and let simmer for about 10 minutes just the time to cook the pasta crushing the tomatoes with a fork after five minutes bring a large pot of water to a boil and season with a small handful of coarse sea salt add in the pasta and cook it for about 8 minutes for this recipe we want the pasta slightly undercooked because we finished cooking it in the tomato sauce when the pasta is ready save about 2 cups of pasta cooking water drain the pasta and add it to the tomato sauce add plenty of basil about a cup of reserved pasta water and finish cooking the pasta in the pan with the sauce stirring often and adding more reserved pasta water if necessary when the pasta is creamy and al dente you can plate it and enjoy with tomato sauce on top and a drizzle of good quality extra virgin olive oil
