hi i'm duncan i'm passionate about fish in this video we're going to show you a few different methods on how to prepare cornish sardines beautiful product first thing you need to do is take your fish scaler or a blunt knife and just run the fish scale oil knife along the fish just to check for any loose scales to remove the scales then give them a quick wash if you're doing it this at home you should do it in a sink full of water the first thing we're going to show you is how simply to remove the gill and the gut of a sardine hold the sardine on its side we lift the gill open insert your finger inside the gill cover and then we're just going to cut straight down removing the pectoral fin and the gill at the same time we're then going to lie the sardine on its side we're going to just run the knife down the length of the gut to open it open the gut grip the tip of the gut with a knife and just remove the guts all in one and then you can give the sardine a wash and that is the way to get the sardine with this one we're going to show you how to take the head off you take the sardine line on its side with its back towards you take the tip of your knife and place it on top of the sardine so it's in line with the lateral line the objective to push down and cut straight through the spine behind the head then we're going to turn the sardine over and we're just going to cut a little v at the back of the gut just like so and then we're going to hold the head of the sardine with the blade of the knife and gently roll the sardine away and then just hold the gut with your knife and just gently pull and the gut will come out very efficiently and if it's for the barbecue you just put three scores in the top and that's the second sardine ready to go now we're going to show you how to single fill it to sardine you need to take the sardine by the head with your left hand holding it with the thumb and index finger then we're going to lie the knife on top of the fillet behind the head pull the knife forward until you feel it reach the spine and you lie your knife flat on top of the spine and do little tugs leading down the hole into the bone of the sardine and you produce a single fill it turn the sardine over the gut is towards you hold the sardine by the head place the knife at an angle behind the head go down onto the spine and then run the knife down very gently nice consistent movements to remove the second fillet and there we've got two beautiful single fillets finally we're going to show you how to produce a butterfly fillet or a cutlet first thing we need to do is stem the sardine up and make a small cut straight down onto the spine behind the head then we lie the sardine on the side hold it by the head put the knife into the first cut pull it forward until the tip disappears and then apply a slight pressure to the tip of the blade so you're pushing down onto the spine and draw the knife in one movement down the hole into the sardine and the first fill it will butterfly open now we turn the sardine over with the first fill it lying flat on the board hold the sardine by the head draw your knife into that original first cut with the sardine you have to hold the fillets and then we use the table to get this consistent bend in the knife and then we tease the knife down the length of the sardine and we lift away the fillet trim the tail and there is a butterfly fillet four different methods of preparing sardines
