Please enjoy the process :) This is Grass Carp fish. It is a type of river fish that can stretch up to 140cm. This fish comes in limited amount and need to be reserved to enjoy it. The fishes will be prepared freshly on the same day. The most tricky part is the dissection of grass carp. It’s important to not cut into gallbladder and causes bitterness in the meat. Back in the restaurant, other team members will prepare vegetables & condiments. 1 day, they handle up to 15kg of potato leaf.
