hello my old school soulful family chef jeffrey back with another video hey uh it's december y'all i'm trying to do some christmas recipes and for like your christmas parties and stuff like that this recipe you might not be for christmas party maybe it is might be for super bowl party but this is something i think everybody loves i know some people don't eat pork some people don't eat beef but i don't know nobody don't eat no chicken especially chicken wings i don't know anybody don't like chicken wings so we're gonna do chicken wings i'm i make chicken wings all different kind of ways but today we're gonna kick it up even another notch i'm gonna do my asian flavor garlic uh honey uh chicken wings a little sweet spicy salty all working together in these chicken wings very simple it's three steps to this i'm gonna fry take out make the sauce and i'm gonna refry i'm gonna fry the chicken twice that's what's gonna make it very very crispy so uh anyway before i get started make please youtube make sure you y'all see my videos when they come out so anyway let's get started here okay first thing i'm gonna do i'm gonna season up the chicken and y'all know uh i don't use for two or three seasons when i seasoned chicken a little granulated garlic when i season anything a little granulated garlic i don't use a lot of spices but spicy use a lot of spices you don't take the food you just taste spices that's why you never see me uh turn this fire down just a little i got my ease and walk there i got two of these walks here i use them all the time i never use them much in the video so maybe i started using them more okay i'm putting the cabinet seasoning y'all know i use my uh so old school soulful shake so that's a good thing now okay we're gonna mix these up in here matter of fact my hands here and i'll just wash my hands off going through handling this chicken okay set up really really good in here really really good and another thing you need to make sure your chicken is very really dry no water no way you dry it off with a pepper powder after you wash the chicken of course you wash your chicken first and you dry it off it's very important because uh wash my hands also when you get through handling chicken make sure you wash your hands very very important okay now like i say you don't want much moisture on this chicken because what i'm braiding in there let me get rid of the seasoning in here when i'm breading it in this corn starch and baking powder that's what's going that no flour no nothing corn salt and baking powder that's what i'm gonna break this in so that's why i say your chicken needs to be really really dry okay now what i'm gonna do now y'all know i do my shake and bake method on my bag i'm gonna put some cornstarch in here and i do three to one i do three parts of corn sauce one part of bacon powder now baking soda baking powder very important that's what i got in this bag here i probably can't see it this bag right here i got baking powder baking soda now what i'm gonna do i'm gonna cook this chicken now i'm not gonna overload my wok because i don't want the chicken to boil i want to fry by five minutes and i'm going to take it out put it on the rack here at that mixture next to my watch i'm gonna let it drain and dry and while it's draining i'm gonna put my uh sauce together that's what you want right there let me turn up just a little just a little here you definitely don't want it to i don't want to cook too much like i said all this is a corn starch baking powder we're going to cook this five minutes you don't want to add too much you want to make sure you have that sizzle like it's doing right now okay you don't want it like i said overload you want move it around here make sure they ain't too overloaded here you gotta get one man you got to do these in batches i'm going to do the first batch on camera and then i'm going to step off camera and finish them up and we'll come back and do our salt cause there's three steps to this okay but i mean i these woks are good to have i really suggest y'all invest in one you can go to an agent store and get them for a couple of bucks not a couple of bucks about 20 bucks or so they hold heat very well and you can fry in them very good okay moving them around here you have to turn them over you can most timely submerge already in the oil and this is just regular vegetable oil yo regular vegetable oil i don't want to cook them too long and i don't have my fire up that hot just hot enough for them to fry and when i do the second fry i'm going to turn that fire up a little bit hotter if you got a thermometer i'm doing about three for 330 here and then i'm gonna prime it 375 when i do the second run like i said it takes about five minutes each frying you don't want to be a real big fry on them gonna say i'm gonna take this first batch out almost step off here and i'm gonna finish the rest of them off and then we're gonna come back and we're gonna start to uh start my sauce for the chicken wings when the sauce gets ready we're gonna do the second batch because the sauce needs to be ready when the chicken is ready so you can toss it right in there [Music] okay don't take long here at all about five minutes we're gonna drain them take them off and we're gonna prime again really simple very simple recipe not better than chicken wings y'all take this one out put it over here and let it drain see that's all you want see that's all you want right there i'm not cooking it that long that's how you look that's how you want it okay now i'm gonna step off see how they look let me show y'all here y'all can't see that's how you want them now i'm gonna step off here and i'm gonna get the other one fired off and i'll be right back here and we'll start our salt so we'll be right back all right y'all we are back okay i got my all pushed to the back and i still got the heat look i still want to keep it coming up temperature because i don't want to have to wait for it to come back up to temperature when i do my second fry here see the chicken here getting here it's kind of drying out letting all drain off of it until i get my sauce ready so y'all with me here let's reiterate what i did i breaded the chicken and cornstarch the recipe and description of the video but i still like to explain it corn starch and baking powder three to one i always do three parts cornstarch uh one part uh baking powder meaning that's three if i use three-fourths cup of cornstarch i use one one-fourth cup of bacon powder braided that in there put it in the wok you can use skittle if you don't have a wall cook it for five minutes about 330 degrees you don't want the fry too hot just enough to get it seared off or whatever then we're gonna make our sauce here and then we're gonna put the chicken back in the fryer finish complete cooking it off completely it's only cooked halfway of course and then we're going to toss it in the sauce let's get this ready for the sauce here sauce is very simple all these are soy sauce equal parts of soy sauce and honey you can pour some soy sauce and honey stir this up garlic gotta have the garlic can't be garlic honey without the garlic y'all right and a little sriracha put a lot of rocks in there and shake it up here gotta have a sriracha in there so we got sweet salty with the soy sauce sweet with the honey and the spice with the sriracha and we're going to reduce it just a little i'm going to let it cook about five six minutes and turn it off it'll be ready see how simple that sauce is very simple let me taste it here and see if i got enough spice to it i don't like mine too spicy but i want to have a little kick oh yeah hey here's that kick y'all oh yeah so i'm gonna let that ball come to a ball like five minutes gonna get a little thick there and then we're gonna turn it off and this meal is almost ready let's say it's very simple y'all this is nothing to this this is an awesome sauce kind of created on the fly one day i said i'm on a asian flavor wing i want i want it sweet i don't want it too sweet i want some salt in it i want a little kick sriracha is the most flavorful spicy you can get i like sriracha because it has it it's hot but it has the flavor hot not like a tabasco or something like that tabasco is just hot it has no flavor to me so just so let it come up the boil just a little bit more reduce down just a little bit and it'll be ready you know it's coming up to a boil you gotta be very careful because soy sauce will come up open and boil over on you within a minute so you really gotta watch it see how it's coming up see how that's rising up it will boil over and mess up your stove believe me i've done that when i did uh was experimenting with this uh recipe it will boil over on your stove you gotta really stir it if you get too hot just remove it from the fire like this and it'll go back down a couple more minutes and it'll be ready that's it y'all we're gonna turn this off this is ready this is ready oh yeah definitely ready y'all okay now we're gonna move this here back over to the front and i like to test my oil and see if it's ready here by all i do is this is by experience it's definitely hot enough so all i'm going to do now we're going to put this chicken back in the fryer just like this we're going to put that mint in here but we don't want to overcrowd it one more piece and that's it to the side because i don't i'm gonna put the cook back on here with the with the semi cooking we're gonna go from there i'm gonna show y'all a couple of pieces and then i'm gonna step off finish this off we'll be back we'll toss it in the sauce and we're gonna have us some old school uh garlic honey grazed chicken wings y'all don't get no better than that don't get no better than that make sure you lure it around this is where it's gonna get really really crispy on you it'll be nice and crispy nice crispy on the outside and nice and juicy on the inside you don't get no better than turn them that here and get golden brown when they submerge in here like this you don't really have to turn it much but i still do turn it see that get nice golden brown that's what you want and you want to cook them all the way through so five minutes the first time five minutes the second time 10 minutes cooking time on this chicken wings so i'm gonna step off we'll be right back when i get halfway through the process and uh we're gonna toss these wings together so we'll be right back okay y'all we back here okay these are nice look how pretty these are see how pretty these things are nice and crispy and golden brown we're gonna take the last clear out here like i say you five minutes before the first frying let them fit and drain and i let them drain by 20 minutes actually and then you put them back in another five minutes cut them off and that's it move this all to the back i got my sauce here and then we're going to warm this sauce back up just a little bit then we're going to toss these in the bowl and we're going to have some chicken wings here in fact i don't even have to warm it up this is perfect that nice thickness on it okay now next step y'all ready this is the easy part put the chicken in the bowl here i like to toss it little by little i'm going to toss it too many at a time put this back here get my platter here when i toss it out that toss down very simple pull this i don't pull too much i kind of flip mine over like this you can do it like you want i just kind of flip mine just like this and then i'll put it on the platter like this yes like this see that make sure this camera's on me okay yeah working along tonight i guarantee the chicken wasn't gonna be here long though that definitely can eat me about me about a dozen of these suckers i like to do it in three batches here but i don't want it you don't definitely don't want to uh ruin the chicken i don't like the you know when i'm tossing it get that thing soaked in there look at that we're gonna post of course we're gonna pour some extra sauce on top actually after this greenish here let's put it right up on the platter here like i said this would be awesome to serve you know how you have a little christmas parties you know this year is a little different with the pandemic going around but a little kids parties and get-togethers coming up to christmas this would be perfect okay last batch y'all last bat this sucks so crystal you can hear the crunch on them that's what that cornstarch baking powder does to it rest of the sauce in there toss it up in here in the bowl and let that sauce just soak up in there y'all that's the key it's all soaked up in there all right put these rest up on there nicely you can see people eat with the eyes y'all you know that already people definitely eat with their eyes look at this one coming all off on the count i gotta clean up a mess here nothing a mess okay now i have a little soft left over hold on a second let me clean this up here i'm gonna move this platter over this way now i got a little sauce left over and you just pull that little sauce over there like that look at that look at that i'm still not through now one more thing to do i got some sesame seeds you can put on it put your little sesame seeds on there a white sesame seed got some green onions here i put on the bias put on the bite i cut on the bias there make it look a little pretty there it actually tastes pretty good on this too y'all to be honest a bit more sesame seed that's it that's it now i'm gonna let these cool just a little i gotta do a thumbnail and we'll be right back and we're gonna have some good old chicken wing we'll be right back okay y'all now it's time to taste these good old things i like the flax that's my favorite part of chicken wings the flats some people like the uh dress dress drumstick i'm telling y'all and she can come off the bone like that you know it's good hold on y'all look at my hand it's so good finger licking and you don't even need a sauce for this you got some wings you got dick dipping in a buttermilk ranch or something like that not these these him it's just like that you got the sweetness of the honey the saltiness of the soy sauce that little kick from the karate it all works together you know me i'm all about balancing flavors you know i seasoned it with my only three seasons i didn't know the season where you the taste of the chicken come through and then i balance those seasoning with the other flavors and what you get i've been working on this in a while y'all but anyway hmm every time i make these i'm just i just i clean the bone come off the bone all right let me cut this video off close this video y'all try this
