them your goals all right girl [Music] welcome back to my channel everyone hello darling how are you out there i hope you guys are staying safe listen today y'all it's a special day dad i know you read that title you know what we finna do today we are going to make my infamous macaroni and cheese southern style but we're going to make it the right way because i just seen y'all all across the internet making it how you want to make it okay all on tick tock all on instagram all on facebook some of y'all making it right some of y'all making it wrong and some of y'all stealing it like in y'all recipe and it really ain't i see you out there too you'll hear from my lawyer soon uh-huh yeah but let me tell y'all something about that recipe although it is a big huge recipe that everybody loves i actually didn't make it the way that we actually make it back home that is my mama's recipe and i'm going to be sharing with you guys a remake of how we actually make it back home using some of danny's secrets some of my mama speakers roll it so the first thing you want to do is start with some regular water actually so i know i told you guys in the original recipe to use chicken stock that ain't really what i'd be using though aha while you're out there stealing you sold it wrong okay i like to use guyong powder it's actually more concentrated has a ton of more flavor than actual chicken stock because we know that all chicken stock and created equal amen they ain't okay and all of they stopped up except when i come out with my chicken stock y'all gonna be running baby through there like buffalos and antelopes and lion king baby rolling through the stove okay ain't got time and then i'm gonna sprinkle about two capfuls in there macaroni and cheese y'all believe it or not it's all about just letting the recipe leave you okay that's how my mom and them did it back in the day and that's how she still do it and she only used one type of cheese when she saw me do that video she was like first of all you did that sour cream thing wrong and i was like well it was still sucked up she was like i'm your mama i slapped you you know how black mamas so we put the chicken bouillon in there actually have a little bit of salt in this water too to to make sure that we get that pasta nice and flavorful so we have about tablespoon of salt in there with the chicken bouillon you want to bring that to a boil also a little trick that i do actually add a little bit of oil to the water to keep the pasta from sticking put that in there make it anointed praise god that olive oil up in there making sucked up you want to bring it to a boil not a semi boil i mean it need to be boiling like an angry black woman at a protest you hear me hot as fish grease hot boiling like you didn't caught your man baby up in there that's in there stop the bed with somebody that may be a grease fire not boiling okay chad cause i know what's going baby i'll be up in that baby somebody gonna be getting a disability check out that the chicken stock and all that is boiling we're gonna add our pasta i typically use about a half a box of pasta or a whole box depending on how many people you gonna feed so if you're feeding about four to five people but i can't even say that because you know what people love macaroni so just let the spirit lead you on that you can do a whole box i think this is uh oh that's a lot of macaroni this is 32 ounces we don't need that much so i'm probably gonna do about 24 ounces of that and just stir this around that looking good already smell good okay i see y'all out there putting parsley and i see you doing italian seasoning and all that stuff let me tell you something it don't matter they don't make it never mind you put all that dry them dry herbs and stuff in their honey if you ain't got it seasoned right it don't even matter and then we're just gonna bring this to a boil and let it cook for about eight minutes or until they are big word al dente got it so a lot of times you feel like you got to have all these different type of cheeses to make macaroni and cheese and you really don't because each cheese can change the flavor now i like using smoked gouda and all that stuff and different things but the southern way the traditional way let me tell y'all my mama used one type of cheese growing up and my girlfriend holly couldn't believe it until i told her and she tasted when she came down to georgia okay we're originally from alabama growing up all she used was that sour cream one type of cheese she didn't even shred the cheese for real she just cut it into blocks and mixed it up and then took a few lip blops and put it on top of macaroni and honey was the best macaroni and cheese growing up a little salt pepper little paprika for color things like that and we was using larry's back in the day before they changed the recipe now y'all can start my season have me that phone back there mama look we filming you today we making your infamous mac and cheese again yes and i'm recreating the recipe and i remember you was telling me that when i did the mac and cheese you know this mac cheese got millions and millions of views but you remember you told me that i did the sour cream thing wrong that i coated the noodles i supposed to put it in my custard do i put the sour cream in with the custard or do i put the sour cream on the noodles like i did before that you said i did wrong [Music] look at all these people laughing at you look at all these people laughing at you girl i got all i care about all this stuff i just told the story about all the cheese on the cheese that you used growing up was one type of cheese which is cheddar cheese i remember you putting like just slicing it in there cold and then once you make it up okay sprinkle a little um shredded cheese on top of it okay tell them bye bye bye she's the best i'm i was like please don't cuss in my head i'm like please do not cuz y'all my momma cuz like a sailor she be like what you got me on these damn she gonna come back late on the life why you wouldn't tell me i wanted to surprise her so i get a natural reaction we're gonna strain this pasta it's ready to go so i'm gonna turn it off okay and i'm gonna get my oven mix okay now it is time to spend le pasta okay with our oven mitts in our hand we're going to take our strainer here which you can get from my amazon store if you don't have a good strainer all right so our pasta strain i'ma cook with this the whole time you want to take your noodles and put them in a bowl okay so you got your pasta here now we're going to add about a teaspoon of butter to that put that in there you want to stir this around to coat your noodles so that really was about four tablespoons of butter y'all okay just check the recipe in the description box it'll be available this is how my mama always did y'all she did it just like this y'all heard her y'all just heard what she said put your butter in there while your noodles are hot you want to add our secret ingredient i know in the video i use little provolone and mozzarella and like kobe jack and all that honestly you don't even need all that now if you want to have a distinct flavor you can use like smoked gouda and smoked cheeses and things to give you that smoky flavor but then call that a smoked macaroni and cheese don't call it southern baked because it really ain't but i just did that for y'all out there on the internet cuz i was like they gonna like this because other people be using a lot of other cheeses but this way is really the traditional way that i make it at home and also how my family make it cheddar we've got some mild we've got some medium and we've got some sharp i think right that's what we got y'all heard it you want to allow your cheese to come to room temperature before you actually add it to your macaroni and stuff it's going to melt beautifully and things like that we shredded it ourselves so you do want to kind of shred your cheese if you can on your own i'm gonna sprinkle that on top of the noodles look how amazing it looks when you shred it on your own don't that look good and you see it's just kind of almost melting already okay because we let it hang out just like you would do your meats let it hang out put that in there like that okay and we're gonna coat that pasta with the cheese okay and what this is gonna do when you add the cheese to the melted uh to that hot pasta rather it's gonna just kind of melt through it's gonna create like little pockets and clumps of cheese in there but when we put it in the pan it's gonna melt together boom that's what we want okay gonna add a little bit of seasoning to that you know we've got some paprika in there just with some color it don't taste like nuttin honey i don't care what they say hungarian and hungorian and hungarian and all these other guardians don't taste like nothing either put it in there in this i have that bouillon i have paprika we got a little salt in that mixture seasoning salt if you want to use that i'm going to use some fresh cracked pepper too okay now i know that i grew up in the hood and in the south and all that stuff but my mama in them did use fresh cracked pepper they did my daddy loves pepper on everything y'all and he loved the big granules of pepper i said a big word granules you heard that idea we known of coming on through so you just want to add some fresh pepper to that that's really hot make it out there stir that around you can see that cheese is already melting you know what put get back in here trying to run away if i did nothing to you you're gonna go and melt like all of your brothers and sisters all of y'all gonna be unified in macaroni today just stir that around you see it's already kind of melting right so imagine what it's going to do when you put it in that pot honey it's going to be good [Music] delicioso then what i want to do so i'm going to add a little bit of sour cream in here just for that tanginess okay and creaminess and i'm going to also add it to the custard which is what i didn't do in that first video so y'all thought y'all was feeling something baby you already really have it quite right stopped up look at that stir that around so i used about maybe a fourth of a cup of sour cream i'm gonna add just a little bit more i know some of y'all was using like cream cheese and all that don't do that it's gonna be harder than some of you uh some oh i can't even say that it's not gonna be sucked up don't do that to yourself see that looks great you can just eat that by itself so we're going to set this to the side and we're going to work on the custard now super easy don't waste no cheese ain't no cheese left behind this this is what i do and this is going to drive my cameraman crazy because he has otz but i'm gonna put these right here on that lid right there ocd he gonna be fine you don't like that do you he just fine we're gonna grab our bowl here another clear bowl so that you guys can see everything that's why we'll be using clear bowls over here cause they be like use the clear bones so the audience can see everything all the ingredients so to this bowl we're gonna add in some heavy cream i'm gonna use a pint but i'm gonna save a little bit for later the drizzle on top before we put it into the oven okay i'm gonna use some whole milk don't use two percent don't use soy don't use almond don't use cashew don't use oatmeal don't do none of that stuff so this is 32 ounces of milk we're going to use about 16 ounces you want the has milk half heavy cream i like to make it myself because if you buy half and half sometimes it ain't quite soft the way you want it so i just do it myself now we're going to take our biracial eggs we have here from dylan okay we've got all the cultures represented here we've got dark light brown caramel and then we've got bite we've got everybody this is how the world is supposed to get along so we're going to crack about three eggs in here boom put that down in there okay that looks good okay i should have just added the eggs first and then the stuff but it don't matter okay it's all going in one thing all right boom ooh baby you you just feel the top type but why would you drop down up in that egg yo okay you see that thing slid on down she dropped down slow baby what's going on and you just want to take your whisk here and give it a nice stir to break up the yolks now if you want to beat the eggs first and then add the custard you totally can to ensure that the egg yolks are beaten but better how my mama did it that's how she did and this is how i do it okay so we're just breaking up the yolks this is looking good look at that okay smack that thing all right girl we're going to add a little bit of seasoning to that you can use some seasoned salt and all that because we want to make sure that every layer is seasoned and the reason why we do this is so that when we pour it into the cast iron or your bacon dish the custard does not drown out the seasonings that you already put in your macaroni you want to add some sour cream to the custard too okay and just mix that around all right so now it is time to build les macagonis so i've got a cast iron skillet here now let me tell you this thing right here okay so you can bake it in a cast iron skillet but i want you to adjust your temperature because i saw some of y'all out there had that dry macaroni okay it wasn't quite macaroni okay it wasn't carter won't talk about y'all okay she was not okay that was not it all right some of y'all needed some macaroni rejuvenation but when you're making it in a cast iron skillet you want to adjust your oven temperature and also you want to adjust the cooking time because cast iron holds a lot of heat and it retains heat okay so it cooks things a little faster taking a while to heat up but once that sucker heat up it's gonna be like a woman baby that's ready to go all right it may take a little time to get there but once she's there it's over all right you know what i mean out there i am gonna be working big bertha today okay that's what we're gonna be working with so i have her nice and seasoned if you want some cast irons you can actually shop them through my amazon store in the description box below all right so we've got a grease and seasoning and all those things we're gonna add some butter to that now if you're gonna be baking in a baking dish you want to preheat your oven to about 375 or something like that but because i am working with a cast iron i have it at 350 degrees i'm gonna also adjust the cooking time all right so before the video said to bake it for what 45 minutes to an hour i believe something like that so the cast out i'm going to check it around 30 minutes or so it should be done because like i said cast irons hold a lot of heat but if i was baking it in a regular baking pan like a glass dish or maybe a regular metal dish or something like that we can bake it for about 45 minutes or so but you want to check on it around 30 minutes and this is a deep cast iron you can use a larger one like a 12 inch or 10 inch it's not as deep but because this is a deep one go d i'm thinking about some other stuff today but because this is a deep pot we're going to adjust the cooking time to about 30 minutes or so and check on it see how it's doing and then if it needs a little bit more time no more than 40 minutes i believe that this is going to be ready to go look at what dylan made this is so cute so these are just thingies plastic wrap that is folded so i don't mess my nails up and butter the dish so if you want to make these little pasta wrappings you can get it from our store down in the description box okay we're going to make a ton of these and we're gonna have them for sale at the dannyrose.com we're gonna take our salted butter this is so good this is good dylan thank you and we're gonna just put this butter around like this so you wanna just take this and grease it i want you to grease it like it's a greased pig that's ready to be shown off at the state fair honey i want you to grease this sucker and then you can just easily disre uh disregard not disregard discard the plastic and now my nails are not messed up and i don't have butter all in between them so it's a great job so it's time now to put the macaroni together my dad used to call it the macaroni pie that's actually what they called it back in the day a macaroni pie and if you watch i love that show high on the hog on netflix hey male girl they did talk about throughout the documentary where macaroni and cheese kind of came from and it was invented by a slave y'all it really was so um a slave that got free that was a good cook you want to just put a little bit of that macaroni down in there like this okay we're gonna put half down okay like this look at those clumps of cheese y'all this is what happened when you let that cheese come to room temperature don't that look good already making the macaroni and cheese making the macaroni and cheese put your custard down in the macaroni put half of that down in there like this and this is what's gonna make it really creamy and soft up oh yes thank you jesus now we're gonna add some mozzarella and we're gonna add some slices of it in there now i know i said we're gonna use one type of cheese y'all for just the stringiness but the flavor is really going to come from the cheddar cheese sprinkle a little bit of that mozzarella we let this shredded mozzarella and the sliced mozzarella come to room temp too oh it's so soft it feels like a beautiful like soft masculine mane we're gonna sprinkle some seasoning on there okay and it has that beautiful paprika garlic powder onion powder all that then we're gonna add some cheddar cheese now room temp oh this is going to be so doggone now we're going to add the remaining cheese macaroni and cheese oops add that in there sometimes you just got to use your hand too then we're going to add the remaining custard perfecto pour that on top lusciousness ooh praise god so i'm just going to press it down in there like this right here to make sure everybody get a little piece of that pie erika do say i know i'm a whole lot of woman but not enough to divide the pie wait hold on girl that macaroni rejuvenation was been working ain't it we're gonna add some mozzarella okay on top and we're gonna finish it off with the cheddar cheese just cheddar that's all you need now i tell you all the time life is already complicated food ain't got to be okay this is gonna be delicious and i can't wait to eat this we're gonna hit it with a little bit more seasoning okay just for a little bit of color and i want to do it this way whatever we're going to also hit it with some fresh cracked fat that's what they be doing on the cooking shows name is barbara i love cooking and this is ready to go so i'm going to pop this in my oven for about 30 to 40 minutes and we're going to check on it and then we will in the words of honors what's the i want to be back [Music] okay y'all so our macaroni cheese looking good and soft up and melonated and brown and crisp now it is time to take it out the oven you know it's time to take it out the event i used to be a dance girl in high school come on let's go so i'm not taught like a really good old girl my name is peaches and so i just made this remember cheese that it's ready for the fan union because my grandma know they love my macaroni cheese so it's time to get it out come on oh my god it's bubbling we got the pan down there because the cheese was bubbling and some of the oils from the cheese spilled over in the oven and we didn't want it to mess up our beautiful oven close the door let me give you what you've been waiting for that's what teddy pendergrass said baby i got so much love to give and i want to give it all to you listen i waited all day long yes baby that's looking good now you don't want to cut into that sucker okay you want to make it weight just like you should do for some of the men i think your dating ladies make them wait on it because if you cut into that sucker right now everything just gonna go everywhere see that's what happens when you do things too fast okay well you don't get to know some things okay so just like you would do a lasagna you wanted to wait you gotta wait on the lord and wait on your macaroni amen so we're gonna let this wait for about 15 minutes we're going to let this cool it's hot for 15 minutes or so and then we're going to cut right into this sucker so always let it rest just a little bit okay this looks great it has cooled down okay when i told you don't dive right into that thing okay let it cool down and now it is time for the big reveal they say it ain't over to the fat lady scene the fat lady has sung she's bowed out and now we're ready to dive in still a little warm want to hold this and we're going to oh look at that oh baby that macaroni in a pot baby oh oh my gosh look at that y'all oh my god jesus look at that i know y'all at that time oh i want that little piece of that little corner right there to have that big crust on top wow that looks insanely delicious and i'm gonna dive in here and get a delicious piece here we go wow [Music] i just gotta let it fall off maybe it's gonna oh girl you drop down to get your eagle on baby okay girl okay oh let's taste it that's all you need and it does the lord's work [Music] it tastes like my mama's because you know people like it tastes like my family is my auntie no it tastes like my mama's it's so delicious that beautiful crust on there i want
