our pal Michael Simon has released his fifth cookbook called rain so to celebrate he's showing us one of his favorite recipes in the new book what are we making today Mikey we're gonna make a little bit of Beer Can Chicken right the thing that makes it so delicious is the the chicken sits on a beer and as the beer is heating up it's it's throwing steam and the flavor of beer into the inside of your chicken which keeps things incredibly moist so if you are tailgating and you've drank maybe one too many beers or if it your my dad's house and he had three too many beers the the beer if you miss a little bit on your temperature you're still gonna be moist chicken so all I'm doing with the chickens I'm making a basic rub so I put in equal parts about a tablespoon of cracked tori under seed garlic powder oregano and a little bit of paprika and then I'm gonna put in some salt and and when you're making and I usually go if I'm visualizing it I'll usually go equal parts salt to whatever the spices is in total and then some cracked black pepper and you could make a rub like this and you could put it in a jar and have it in your in your pantry for you know a couple months but you always want to keep it on the fresh side okay what I do is I rub the whole exterior of the chicken with lemon and then I take my rub and I liberally coat it on both sides and inside because you know you need to season this whole sucker because the whole it's got to be tasty sprinkle not rub because this is if I was gonna do this over live fire I want to benefit from the flavor of the smoke so if I rub it in its gonna block the smoke from getting in clogging the pores yep all right so next thing that we do is we get a beer whatever your favorite beers open up the beer you need a little space to create the steam you actually don't need that at all but my dad convinced us that up as a young child and then we're gonna drizzle this is the one that has been sitting in our fridge overnight uncovered we were up a little bit of oil on top we take our chicken we perch him go on I'm listening yeah if you don't like beer you could use any kind of beverage you want you know we used to you can make them with soda you can make them with anything you can make them with wine but you know I feel the beer chicken is what I love all right so now we're gonna take this here's the key is couldn't could you yeah open up the grill for me so what we did with this grill is we kept one side on super high over here and one side off and we put the chicken on the off side and when we close it back down we've now turned our grill into an oven so if this is a you would do the same thing if you were building a charcoal or wood grill so the flavor and heat is over here it's gonna cook it almost like a convection oven and that's gonna get incredibly crispy and delicious event it's gonna cook for 45 minutes he's been resting for about 10 minutes he's very comfortable because he's got a chair and then you just slide this right off your beer and you start breaking it up all right well you're breaking it up I just got to tell you I'm so excited that this book has the wrestling recipe for the fireplace chicken that you have gentle on that one I am determined to do this fireplace chicken in my house I'm not sure how Damon and Mary will feel about that I think that we're good and then also this recipe for what do you call this as Clearasil and we've made that I'm showing this is Clevelander that's actually a dish that we feature at Mabel's our barbecue place to which you know one of the things that I'm very proud of of the book is it a big part of it is about barbecue and smoking food and in the in the beginning of the grill we what we did is we tried every single style of smoker so you could use a smoker that you have at home and use it with the recipes in the book so we kind of diagram each one explain what its best for yeah you really do talk about all the different titles yeah we went through every single small offset smoker vertical smoker kettles we got them all Clinton we got them all because I feel like there's one of the questions I get the most on social media is what kind of smoker do you recommend or where I have this smoker what do you think and and they all work it's just you got to figure out what's best for you I want you I want you guys to taste this and tell me what you think so it's just it's and one of the things again one of the things that I love about live fire cooking is you don't have to get really fancy the flavor is in the grill you know so you get a good chicken you put some seasonings on it that you love you love your let your grill do the work for you and you get this really moist flavorful bird super moist right I love this spice rub so much it's perfect [Music]
