I'm in Washington Square Park in New York City and I'm hanging out with the absolute Legend the Dosa man himself getting Dosa tips uh this man has over 22 years of experience making Dosa right here um the lines are crazy and so I get the privilege of getting to know him and most of all getting some great Dosa tips for you so you ready for the master himself on an average day how many doses do you think you make 22 years never C somewhere unfamiliar bring me back to where we started up Mr kandas Swami thumar is a legend in New York City and I don't say that lightly this man is an absolute Lenton so it was an honor to come to New York just to get some incredible Dosa tips from somebody who I consider a master in so many ways 22 years 22 years this man has been making world famous dosas right here in New York City born in jaffna in Sri Lanka the Dosa man has been really bringing the heart and soul of Dosa to New York for such a long time his philosophy is very simple and meeting him it really expounded upon his core philosophy do things that are vegan do it with integrity and treat everyone with kindness these are the three things that I observed from him every single solitary second that we spend the morning together first of all he gave this incredible tea that he makes every single day and to just have that as a nice way to start our interaction was beautiful but then I wanted to jump right in and really ask him what are three tips he has for making incredible Dosa and after 22 years believe me he has some incredible ones but you're going to have to watch the entire video to get the tips from the man himself sir was so kind to give me a sampling of everything that he does including a wonderful Ponda Cherry Dosa that really just took me back with how beautiful and gorgeous the flavors were but the two things that I need to say that you have to have number one the py so this is his grandmother's recipe as he was telling me and the PTY is so fresh if you don't know py is kind of an accompaniment that typically goes on DOA it is absolutely to die for it was one of the best podis if not the best I've ever had in my life the second was his green Chutney I thought the green Chutney was not only vibrant but added so much flavor this man is really a master of what he's doing and I think the important thing coming on here is to tell a little bit about this but I want you to hear everything in his words because he really is the master so take it away you come and Sh perfect please he's doing a YouTube channel you want to say something oh what's your YouTube uh I'll show it to you after uh I study food from the Indian subcontinent so 22 years huh yeah what uh what kind of gave you the inspiration to start I want to do something different like nobody's doing it that's why I start the special vegetarian vegan like idean people yeah and this is the first in the world oh vegetarian you see it somewhere in India everything pop up UT UT's beautiful they coming so they want to try everything got to try radosa is my favorite I love radosa my grandmother re one only place you can have it oh wow special ja lunch that's like a five different go together mix so if you had to give everyone some Dosa tips if they want to cook Dosa what are some of the tips that you would have Dosa tips for to cook Dosa That season that have to have a good season gr and then themel have to make the door yeah it's way according to the weather you know absolutely different different countries are different you know here it's cold weather so I do everything naturally ferment I don't put East or anything all natural fermentation so a cold weather I make the B like the thicker uhhuh thinner and then in the cold weather I make thinner and then summer hot weather I make the door thicker so by the time is when I make the do will be perfect you that's amazing yeah like I make like a healthy V so 65% like L 35 person only R in water wow and do you traditionally use Like sonamasuri Son you can use yeah Gluten Free indan Rice have yeah beautiful yeah red rice I use for the ra I use red rice m give it a nice flavor carala rice you car rice only in car and Sri Lanka special rice very good you got beat yeah was it hard to find these things like when you first started this R you don't get it very hard to get only grow in K Sri Lanka I'm the first person to do like a vegan fond the Cherry is my own inven really yeah for that's why very famous now even in India they make it too that's amazing what a legacy yeah that one is created for like bring the the main reason I open the card outside to bring the Indian food for international not only Indian to have everyone to have the good do are to enjoy the you know South Indian traditional food and you did that's why become famous ah and I'm so glad by so glad see this is like special py so lunch love py yeah py oh this one like you have to eat with the py okay one of them with the Samosa and one of them with the drum one big Samosa bigan drumsticks you like all kind of sauce any drink or no drink water soda ginger bear I put it in the cup thank yeah water you better get it here because other place is more money yeah you only1 and you like some extra hot sauce on the side yeah yes hand or you use the spoon or hand hand hand extra I can't eat without yes is it like not be served like this because they come from Africa that's why special DP thank so a little bit of everything beautiful look that how much any no two BT of [Music] water a real big pondy cherry and a s he a regular here oh wow be and he like Indian spicy yeah I love the spicy too [Music] yeah all that's coconut chy right there the Samosa he lik the Green chne in there oh look at that color and he likes with the mix there nice those samosas are big you know very big they students so they eat you know yeah they believe on me and then they eat one time here and they good for the whole day so they can go study I always say the mark of a good Samosa is this this word is kasta the layers is that like so beautiful yeah this is very deep W all the veggies go there and then some extra Pine there too so after 22 years what do you think your biggest lessons are for this cuz everyone's H make everyone's happy you know meet every day different people you know I actually I think I complete my mission you know bring vegan foodball International a lot of freshmen come to college here by NYU so they become vegan too wow so everyone have a experience how the vegan Indian food you know souan the those as are good for them you know and you've inspired so many people so many yeah after I start like you say a lot of people even here in my area now if you go after me you can see at least more than 20 food truns wow they started after me here bring the people together you know exactly so everyone like from like Korean food Chinese food you can buy everything Italian food wow all kind of food you can buy now on those days when I started that day no only dogs and other stuff in the beginning lot of people told me Indian vegetarian not going to work out but I keep up my dream you know I trust myself and do the hard work yep so I picked up by like a lot of people like you small small story people and the big major newspapers one by one picked up and then I participate in lot of competitions yep I won also yeah wow that's amazing more silverware or no silverware or not silare yeah later you're picking up food now or later on an average day how many doses you think you make 22 years never count until R now 22 years and you never count by this point so many people were forming a line and I wanted to really get a couple more minutes of his time but not take too much of it one of the questions I asked was retirement said are you ever going to retire and he looked at me and responded the people need me there's people losing their job and he sells a product that is inexpensive and really nutritious for people it's one thing to make food it's another to bring your heart or your Atma as the word is in Hindi into it and I think this was the purest reflection of somebody who not only makes great food but really cares deeply about his community it was shown in every single thing that he did so how long have you been coming here so I'm an NYU L student so I've been coming for the past 3 years amazing yeah it's one of the best places to grab food Kamar makes the best food and also just has the best personality and I'm actually a vegan now I'm trying it out so having this option here has been really really great what would you say to people who've never had Dosa before might be a little shy to try it oh gosh you got to try it it's perfectly crunchy and salty you feel healthy after eating it so it's a really great uh really great snack you should definitely check it out
