hey everyone I hope you're having an amazing day it's mark Wiens I'm in Bangkok Thailand and today is a very special meal I'm hanging out with the entire group from the best Bangkok food tour with David the hungry tourists and he has arranged for dead net who is better known as the election diva she is an absolute legend she is known throughout the world for her Elektron Filipino style roast pig and not only is she gonna roast some pigs but she's gonna put on an entire bullfight which is a Filipino feast it's gonna be an amazing meal and I'm gonna share all the food with you in this video so I got here in time to see them as they assemble the table and they're still doing the cooking waiting to get into the kitchen to see the pigs being roasted but at the moment they are just preparing the rice on the banana leaf tables covered in banana leaves I mean and that means that's let's eat yeah Tagalog in Tagalog it's not cutting it all right thank you everyone over to your house for the a long time ago many years ago the Buddha is really a Filipino things it started in the 60s or 70s the soldiers called it a Buddha fight the food will be there and they'll all share it using their hands but I reinvented it now and I call it a Buddhist because with the legend Deva it's never a fighter or wizards [Music] we're all in the kitchen now looking at smelling the food but not only is it gonna be suckling pigs I think there's like four of them but also they're making crab curry they're making oxtail they're making a bunch of different dishes all of which are gonna be be ready very soon that's now you can smell how many pigs are there for pigs and 26 kilos of rice be plenty for everyone they have the pigs going in a variety of different ovens but the one down below the crab curry that one is well on its way and just see that skin just starting to pull Lester and turn golden brown I haven't even tasted it yet but you can already just imagine the ridiculous crunchiness that that skins gonna be [Music] so this is my superzoom and it was included in the best desserts of the Philippines last 2013 awesome it's actually I was inspired to make this because of the mango sticky rice backup it's really philippine sticky rice but i topped with top it with every filipinos favorite sweet mango jackfruit but still yes here my chocolate ceci pig face which is like chopped up and mix the chilies oh you can just see it glistening and juicy with the pork fat the entire group has just arrived ah but we got the chance to see them as they put out all the rice the crab curry the oxtail cutted Akane and then I'm just back in the kitchen for one last view of the pigs as they're just prepping them they're about to bring them out into the main dining room for the entire boodle feast [Music] [Applause] it is times they're about to bring out the pig [Music] [Music] on the side of the truffle you can hear how crispy the skin is I'm just gonna show you a house crispy the skins are here with a crackling soon as you crack open that skin and the rice is revealed okay okay mom can you hear Oh it's amazing so it's not only the suckling pig but it's also stuffed with rice with truffle and so as soon as he pops it open you can just smell the people puff of steam with truffle I don't like it I love it [Music] hear that crunch we're all digging in but we've had to split up because there's so much food and so many people that there's a table downstairs here but then upstairs is another massive table with another Pig there's four pigs okay into the pig now electron and for the sound of that skin it's just it literally it is separate already from the meat because it just like crispy flies on its own and you see the juicy meat I think you you don't even need a knife for this you can just fork it or even like it just flakes out the meat thus again you just flow out of it okay registers oh yeah so good it's so like paper-thin unbelievably country it's a masterpiece of election and then you also have to eat it with the rice as soon as you open the pig you can smell that eruption of truffle that comes out of it it's so fragrant get some other rice and also scoop out some of the the butt section back here you know you don't even need a fork or knife you can spoon it off the pig grab some of that rice especially this time you can see how the rice is sticky because of all the pork fat that's leaked into the rice is just soaked it up saturated in pork juices [Music] the trouble the trouble comes in that like the mushroom Enosh but not like overpowering but just like perfectly harmonious and then you taste the pork like literally it's sticky from the pork juices what is it called in the booyah sauce okay try to model a booyah sauce which is or should I dip maybe I'll dip the the meat into it the booyah sauce is awesome really garlicky or really garlicky you feel the garlic kind of going up your nose a little bit it's a little bit sweet a little bit sour this is some of the CC which is pig face chopped up and they dried their chilies in it just see like the lowly juices flowing out on my fingers as I picked it up but the best thing about Susak are the different textures gummy chewy and gelatinous like your even the chicken is good really smoky I actually saw them as they were cooking it it was just going up in a flame you could smelling aroma and then the crab think it's so rich oh man yes my olive Rowan there's a new one that is just stuffed full of row so yolk you in there then that sauce is like rich you can taste the kernel coconut milk in there like a mild curry sauce but really Pleasant really nice the juices are just dripping everywhere and I love how there's an entire pile of chilies it's beautiful [Music] I'm pretty sure that's been cooking since last night that's insane tenderness reading though that traditionally when you eat a brutal fight you would put your left hand behind your back and then just reach in with your right hand it's always eaten standing up there's at least five different dishes the pig is the highlight but then everything is amazing [Music] just like rip off pieces of pork by the handful the best bite is just ripping up a piece of skin and using that to pick up and you just put your hand into the carcass of the pig dig out that truffle rice and just eat it all together that's a chunk right off the butt [Music] all the weakness of that but hey that just brought out another dish it's a liver sauce liquid whoever what you can dip wonderful and then it has looks like sour taste to it here's that pepper in it that's another dimension and I think there's still a couple of pigs that are still coming out but this one is like it's getting down the rice is almost gone we've gotta just like pick out out but what I'm gonna try I think you still pull those skins it's oh it just peels should I keep that in one bite four ribs are amazing that just look at how clean that bone is and I just took one bite just look the bone claim really many teeth for this banana pepper mm-hmm almost all of us are getting stuffed but there's still more pigs in the oven the next figures ready Pig delivery time [Music] put some rock music yeah I been training my whole life to this moment yeah look at the veins popping you can do it mom I believe it [Music] and now done yeah down on this side oh oh it's so soft and tender but at the same time you just feel that crunchiness just okay you can see the steam coming out of it and now open the door to open the door of delight light anything that John Mac don't burger is really good when it's when it's really hot and fresh it's so hard buddy so good you have to work harder yeah any longer hands you have to block your hand you don't have to pee pop just made me a bite it's just irresistible you cannot stop eat like a man to drumstick there's just like an out-of-control park party I don't think any of us are even thinking
