foreign [Music] [Music] well hello friends welcome back I am excited to do another massive food preservation day or days because finally we have been talking about this since this fall we are going to process the 380 pounds of tomatoes that I have stored in various places in my freezers before we get started I'm going to show you all my little hiding places I'm going to jump into this massive project I have never canned anything with tomatoes I am an official YouTube video watching expert I've read The Ball canning book stuff and also the national Center for food preservation all the resources that are out there I've taken in the information and so many of you in my recent pork sausage and meat cuts canning video gave me all kinds of great ideas on how you process your tomatoes and how you streamline that process but we are doing it we are jumping in will this be a one day project will this be a four day project project what Adventures will we have between here and there who could know what's even going on around here who could know it right but we're doing it let's go okay so in this freezer here by my freeze dryer I have a few little random things in here but we've got these boxes of tomatoes and then we have all of these a lot of these Tomatoes were like marked down like a 25 pound box for ten dollars and they had to be Frozen that day and so I have a drawer there some random Tomatoes there I have different freeze drying trays in here pre-freezing at different times but there's these tomatoes and then over here okay where I've had a bunch of the the pork that we're working through from the whole hog that we bought the whole bottom is full of tomatoes I I'll do a video coming up of you know all my freezers and where everything is and why it is where it is but anyway these tomatoes are here and then in this freezer this was my new refrigerator that we bought three years ago when we moved into this house and I had two different sets of friends I tried to give this to and both of them had a situation where this would not fit in their space I also had several YouTube viewers who were local to me and reached out to me about they would gladly take my refrigerator did I call this a freezer this refrigerator who knows already anyway that was right in harvest season preserving season when I was getting so many good deals on bulk food items that I was working through it turned out this fall that I actually still needed this refrigerator space with all the different food projects I was spinning so here we go so this whole freezer is just jam packed and now some of these are tomatoes I grew yay we grew them together in the garden these mixed bags that we're going to see we have some roma tomatoes and cherry tomatoes those are from the garden and then a lot of these are the big bulk tomato deals I got at the John Henry General store and they work local produce auctions and then in the top of this little freezer these are our homegrown tomatoes and then back here in this little freezer holds various odds and ends I've got some more homegrown tomatoes and so step one we're just gonna work on getting all these Tomatoes upstairs and then also for extra fun if you can hear me over all the Peeping we got about 30 little hens down here we have just hauled me and a teen helper have just hauled all the tomatoes up here and as you saw we got the thumbnail all ready for this video and some little stuff you got to kind of plan ahead for and I'll try to get better at plating ahead with but now we have all of our Frozen tomatoes and now we have to do a bunch of stuff with them so I don't know let's get going right let's do the stuff so you can see like in here these are a lot of my homegrown tomatoes because we have all the different sizes and then we have all kinds of varieties that I got marked down at John Henry and then we have like the big slicing tomatoes also which per the YouTube video footage I should be able to use all kinds of tomatoes in doing my tomato canning so also knowing that we were doing this tomato undertaking and of course we only do Mega and lots you know that I'm always juggling my two big roaster ovens now one of those roaster ovens I don't think I had it at my farmhouse so I got it at my Forest house that would have been six or seven years ago is that right three years four years yeah could have been could have been up to seven years ago that I got that and I shared that on Instagram I don't know 2015 or whatever that was and then in the past year I've added my second roaster well because I knew that we had this big deep and wide tomato project that we would be undertaking and you know with all of the big batch cooking that I do I went ahead and made the purchase and I got myself two more 22 quart roaster oven that way we can do it won't be all these Tomatoes but it's going to help us get going with a bunch of and I figure with my long time big batch life having two more Roasters and with all this food preserving and such that I am growing in my skills and it's not gonna hurt me have two more roasters so we did just for the picture and to get them out of the freezers we've piled them here in the roasters I'm going to get this organized now and we're gonna actually jump into getting this going so my goal today is to do a very basic tomato sauce and so we're going to start with that if that is all that happens I'm happy if other Adventures happen I'm happy now also for this undertaking I brought up a fresh bottle of vinegar and it's going to make it into the canner with us and then we have this lovely ball Harvest Pro sauce maker it says up to 15 quarts of fresh tomato puree in 20 minutes and it does all kinds of things so we're gonna open this up and it says it includes tips for tomatoes and Salsas and fruits and applesauce and all kinds of great things so we're going to get that going here's what it looks like like I also have the hand crake one but I'm glad that I picked this up for big projects and then this is a giant water bath canner now one of my YouTube viewers let me know that Layman's had this Amish water bath canner that did up to 15 quarts at a time and since I always process big batch stuff she thought it would be perfect for me so I went on to Layman's read about it I actually found it on Amazon because anything that lets me just click the button you know Amazon has us all that is who I ordered it through so it'll be linked down below if you're interested in it we're going to get this out of the box as well and also I can pressure canner for my tomato sauce as well how is this going to unfold but if we can get the new water bath canner with 15 quarts of tomato sauce I mean we got nothing but Frozen Tomatoes here but we'll get there and then I can also get my All-American canner and pressure can I'm like where did my canner go do you know where my camera went okay got taken downstairs okay all of a sudden I'm like my camera's not there I know what happened last weekend I did a whole bunch of super mega freezer cooking and we cleaned out like I put my canning stuff away in the cabinets here and I had my biggest canner taken downstairs thank you for reminding me I'm like it's not here because for weeks before that so this weekend is Cannon all the tomatoes weekend so we're gonna use this new water bath canner and give that a go doing 15 quarts at a time and we will get the All-American pressure canner going hopes and dreams I think it'll work out and do up to 19 quarts at a time in that and so here we go here's an overview look at all the tomatoes that we hauled out of the various freezer storage places I shared a picture of this on Instagram and Facebook and so many people thought I had peaches and they do they look like peaches don't they but it was so many varieties of tomatoes and I went with these varieties because these are the deals I found or they were the hodgepodge amounts of what I had left from my garden last summer and I'm excited to get going on this project I know we talked about it this fall and we planned for it all this winter and I could not believe it today today is the day I could not believe we finally are doing doing this and you will like this I'm being very sensible I'm filling my pots full of tomatoes as well instead of hauling all the big bowls around and I decide to also go ahead and get some stock pots going because if I had four loaded roaster ovens I still had all that room on my stove as well and so I thought if I could carry my stock pots around and then I would get those stock pots going on my stove and we would just see how many tomatoes we can get cooking down at one time and so here I'm getting my different multi plugs going out on my Island to get my roaster ovens going all around the world and get those cooking down the tomatoes so I have all four roaster ovens going are going to start cooking these tomatoes and I plan to add other tomatoes to these Roasters as we're able and also I know folks who leave their tomatoes out while they're defrosting leave them out overnight my plan my plan again we're we're living this plan we're working it out as we go my plan is we will add more tomatoes to these Roasters as things cook down and of course if we don't get to all of these today this is also what we're doing tomorrow so we will continue to work through all these tomatoes and these two other Roasters I got it's interesting something different they have little windows on the top I've never seen that before this was just the brand and The Roaster that I found available on Amazon my other ones I've got like a Hamilton Beach brand over there and kind of a you know off season to be buying a big roaster most people buy them for turkeys for Thanksgiving and such but I also got out some more stock pots to move my tomatoes around in see that's my 30 quart which it looks small sitting here with all this doesn't it but I have my 60 quart Beast also that I was thinking about bringing up here but I I think we made it because this like 22 quart that I pulled out isn't quite full there so anyway we're working through it I don't add any water to my tomatoes I just I know I know I hear I hear tell that as these Tomatoes cook down they're going to produce a lot of their own liquid and so I also watched I don't know 15 times if I watched it once I watched it 15 times over on Living Traditions Homestead she did a video I've watched many YouTuber videos on doing the tomatoes in various ways all of our favorites all of your favorites all of my favorites but this particular video on Living Traditions Homestead she also shares about how all the liquid that the tomatoes produce she goes ahead and cans that as tomato juice so let's see what happens so I've been drinking through my herbal teas reading my canon books watching tomato canning videos and it is it is time now to go around and give all of these a little stir here see and check in and see how everything is going I did not add any water to my Roasters I know some people do some people don't I just knew that these Tomatoes were going to release a lot of water and all of that was going to start very quickly and so this is the the what we're gonna separately can as tomato juice oh yes we are that juice the water that it's releasing is already coming out there's some skins already coming out we go get on their skins we'll deal with you shortly and you to add tomatoes on here and so as I already mentioned these Tomatoes there's so many different varieties don't know all of my tomato names and tomato identification but I just know we have a wide variety of tomatoes in here and we're just using all of them I have heard that using a variety of tomatoes gives all kinds of great flavor so we're about to find that out for ourselves come on over here these guys are doing smelling nice and tomatoey in here already I just wanted to make sure nothing was scorching on the bottom but I don't think that's even going to be an issue with how these are cooking up here probably get the rest of these on here foreign here I hear my chimes outside [Music] I did have my one adult son is home today so I had him bring up my big All-American canner here and so this is what the setup looks like we'll see how it all works out this is the big 15 well cans 15 quarts water bath canner I had my 12 year old who helped me unbox this just leave the paperwork in there I'm going to go through that here shortly but got that setting up got this canner this is Old Faithful now right we know each other really well but I am scared for a minute I'm like oh wait a minute when we took this downstairs over a week ago a little envelope with my weight should be there it's not we'll go through my canning cabinets in the island I just wanna see it it's like if there's gonna be a problem let's let's just go now okay okay yeah yeah yes this is the kind of stuff I try to do in life it is in here we are good good good good good good good okay and now coming over here see how all these are doing everything's behaving nicely so just gonna a bunch of these in here and so we actually I'm going to be talking about this a whole lot coming up but for my big first official Mega Mama kitchen undertaking we actually process these Tomatoes three different ways we get the tomato sauce we can tomato juice and we save the Peels and cores and seeds and everything else that we can't can we save those we run them through the freeze dryer and grind them later into tomato powder I know it's exciting I am proud of us and now that it's going my spoon and I were we're making friends I I can see how this is the processes will go I'm thinking okay here's the three different products I want to get from this super mega tomato candy marathon of course we're doing a basic tomato sauce also I want to get tomato juice because we're already getting all of this liquid that's going to come off of these tomatoes and then third I want to take all of the seeds and the peels that we get and we're going to put those through the freeze dryer and we will grind them into a tomato powder I've heard three different YouTube and Friends mentioned that and several of my Instagram and Facebook viewers have mentioned that to me today and I watched Jill over on the Prairie homes and I know Jill from way back in my early vlogging days and then over on Living Traditions Homestead I've watched several of her tomato videos and she mentioned how several folks she knows also take the skins and the seeds and grind them into powder and she doesn't do that because it personally it affects her digestive system and then of course our friend Becky over on Edgar Homestead and some other YouTube tomato videos out there that I have have seen all say that they either dehydrate the seeds and the skins and grind into into tomato powder or use the Harvest Right freeze dryer which is what I'm going to do to get a tomato powder out of this so that's pretty exciting three different Big Tomato things to get done from this big canning session now I also want to do ketchup and barbecue sauce and so many other tomato products but for now with this big batch of tomatoes I'm focusing on sauce the sauce is the boss right tomato juice because there's lots of things you can do with tomato juice I just kind of am thinking of it as like a broth right and you can of course literally drink it and it's delicious and then the powder that we can use for added flavor added nutrients and added thickening okay big exhale we're doing it it's happening and also what I'm going to do is I think I'm going to go ahead and get a couple of stock pots going to because I have the space on my stove I have these Tomatoes sitting here I have four stock pots in front of me that could be cooking down these Tomatoes also so let's just get this all going and so I'm going to continue to just take my pots over to the stove and then we load them up and get them going it's going to move that big piece of a canner off so I have room for some of my other stock pots that's 30 quart back there this is a 16 quart and I have a 22 quart that we'll bring on over it also and I'm also I've got dinner of course dinner from the freezer all ready to go I have some the base pretty much for Italian wedding soup in the slow cooker that we did on that recent big freezer cooking weekend fun uh I've got that defrosted I actually set that out yesterday in anticipation for today and I have two different 9x13 pans that we're going to pop in the oven also defrosted yesterday in anticipation of today's fun so I wouldn't have to worry about cooking dinner this evening either so I'm going to get in the oven going to heat those up and what I read I forget how many quarts this set it was but you can also in that see here water bath canner I believe this is the 24 quart you're gonna have to get out of my way though [Applause] so I'm again going to get both of these stock pots loaded I'm not adding water and I'll get them cooking from there and so many of these are from my garden got it I didn't buy a bunch of little cherry tomatoes my goal for 2022 was to get raised beds in and I was I had the goal that we would have to raise beds in by fall 2022. so that we can have a go at it 2023 so not only do we get our raised beds in we had a dough at a garden and it was better than my 2020 Garden so hey it can only get better from here still quite shocking because when I had my big Gardens over in The Farmhouse for a decade again I was just covered in babies and and homeschooling and all of that and I mean I just got stuff in the ground but it was the old fertile farmland and the house was built in 1915 and it used to be the only thing around you know and then of course nowadays it's all divided up and we had two acres but it was the big farm back in the day so anyway but that two acres I mean even the people we bought it from they had a cow in the back and the cow used the drink from the pond that my kids played in and stuff later years later so anyway that land was just primed and ready and I could go to our little we have a Mennonite Greenhouse here locally and they just have wonderful homes of produce and that's where I would buy my plants already started and even some of my early YouTube videos the kids and I were just you know we'd have someone come bring a tractor get the garden till we just got the plants in and we had lots of stuff that we home grown at our forest house oh there's a cold hold on let me get this heat on and make me feel warmer okay at our forest house we never got around to doing a garden we were only there four years and it was about 13 acres of land but it had joined the National Forest and I mean it was just a deep forest we had a little Garden area cleared that was already there we moved there and uh anyway I had my chickens um I had a flock that came there and then coyotes got them like they actually went into my closed up Hen House and Drug my hens out and murdered them so okay that's what oh that's what it's like with coyotes who knew so I lost my first flock not long just a couple weeks after moving in then I had another flock going in about I'm trying to think six to nine months before we moved here and so those birds we brought with us here so now I'm talking about chickens when I was just talking about gardening but I love it all it all goes together and then many of you know we had a good a good crack at getting a 20 20 Garden going and I wasn't thinking that this property is you know the woods the deep dark woods as I call it because our last house that we were at for four years we call it the forest house I mean it really was in a forest so this property is heavily treed though and so 2020 this ground didn't know what I was doing that's okay didn't go well 2021 I had a baby I had a kidney surgery I I grew a human I grew E coli and my kidney you know I had enough going on 2022 okay after living here for a few years I knew the one part of our property that got a decent I mean the most Sunshine for here is where excuse me when I scratch scratched my head with my tomato hands is where we put our raised beds and so we had pumpkin patch we had our raised beds we did Tomatoes you know we we had some wins we had some losses like my zucchini I thought we were ramping up and things were going well and I think somehow everything got diseased and died I don't know um once I harvested the first couple zucchini and squashes yeah things as far as my zucchini and squash didn't go well but within all that so then this fall we had 19 dead trees taken off the property many of them were around where my sunniest spot at the time raised by Garden is so I'm hopeful that 2023 is going to be a little kinder to us right every year the garden could be a little more Kinder and we appreciate that so more trees are out around the raised beds right now I currently because we we had a 75 degree day yesterday what was this Sunday Monday we had ice storms it was 28 degrees yesterday was 75 Okay so yesterday had the rabbits out and the rabbit tractor moving them around we're gonna move them around a little bit every day that's warming up and get their rabbit tractor moving around on our pumpkin patch area we're gonna have a go at those raised beds I know I need to do things with the soil and such to get those ready I have put rabbit droppings I have dry manure we have a farm so we do get free fertilizer so that'll hopefully work to our advantage I have an area where we had some trees out that now looks like the sunniest spot that I want to do a big Potato Patch and then we have an area that is right by our raised bed garden area where the trees came out and I want to do another Garden side there so just saying yeah I'm going at it again right I feel like it's going to keep getting better I want to move my pig so I've had a lot of animals in my 2020 Garden area before I've had ducks in there I've had chickens rotate through there I've had goats in there and so now since may have had pigs in there I would love to do that whole thing in tomatoes I mean obviously I found some great deals on tomatoes and tomato varieties a bunch of this let's see 380 pounds I want to say about 200 pounds of these Tomatoes I got 25 pound boxes for ten dollars each these were tomatoes that were available locally that went for ten dollars and you could smell them they were right when I walked in I was like oh I smell those Tomatoes they weren't rotten but they needed to be processed that day or Frozen and so I froze them and then I got some other boxes of tomatoes as they were available and they were like twenty dollars for a 25 pound box for 2015 sometimes but I filled in with just some decent tomato prices but those 10.25 pound boxes that was phenomenal and so for those prices obviously it's just like well if I can't grow my own I can just buy them for a deal who knows though will that deal always be available I mean it was just kind of a couple day thing here and there I saw this fall and finally they had again I was like okay I gotta go get that and that was at my local John Henry General Store that I just love so much so Annie who finally get into those Tomatoes but again I have mentioned too we have a huge local Produce Auction and I know that probably even the John Henry General Store for instance you know they work local produce auctions and so I want to see if I can get myself into some of them and so that's exciting but in the meantime I'm still trying right my land like my 2020 Garden area now there is a tree there that I would like to get out and my tree folks still haven't come this winter to do the trees out that we were planning on so maybe they'll show up it'll work out great but even if they don't still want to try I still want to try and like the Potato Patch area I want to try and the raised beds and the pumpkin patch and all of that we're doing it it's gonna be fun and in the meantime we're growing in these skills right okay so let's see can I haul this yeah if I can haul this over I don't really know it has to all work out some projects it's like I'd love to see the end from the beginning and I could you know maybe there's different ways I can go about this this is just an authentic look at me um mega mirror on canning these tomatoes out I'm not gonna stay up until seven in the morning okay we're gonna we're gonna behave oh yes don't tell me that leave them talk a TV screen right okay I don't know how this is gonna go I do feel like though if I can get these cooked down uh I can always you know put them in the refrigerator uh until morning and then we have to work on putting them through the mill and continuing the process from there they might cook down you know pretty decently I don't think it's 6 22. okay so I do not expect to have 380 pounds of canned tomato sauce by the end of today I'm just interested to see you know how the sauce is going to go I know some folks keep their canners going overnight and so I might give it an eyeball and do that I do want to start pulling the water off of these different uh big roaster ovens to start collecting my tomato juice that we're going to also can and work with foreign get the two freezer meal bakes out of there and tent they're at the very bottom tent the foil for me and also those two bags that have these holes in it yeah that's fine you set those down and here in about 10 minutes you 'll start your time okay um yeah 10th like get those ready tip the foil and if you all need to eat something else before you start like if you want to come make a sandwich you know now's a good time to do that so we're going to cook them down and then we're going to run them through that Mill and then the the Saucy part we're gonna can like um the sauce once we run it through our electric Mill here and all of that it's going to be canned us tomato sauce without a lot of spices or seasonings in it whenever I cook it like if we're making chili if we're making spaghetti sauce if we're making a soup I'll season it based on what we're doing at least this this is my first go-round eventually I'll get into like purposely canning spaghetti sauce and purposely canning in a sloppy joe base and those kind of things for right now I'm just doing basic tomato sauce and we're going to go from there um then sweetie all the the water that comes off of them is going to make a tomato juice which can be used kind of like a broth like if we're making rice it's actually really good to drink also people use it in soups and such so it's two different tomato products and then he helped me set up this milk so with this meal all the skins and seeds that come out we're gonna put those on the freeze dryer trays and then those will go through the freeze dryer and then we'll put them through the Vitamix and it's gonna make a powder and that powder will add more more nutrients to the food we can use it as a thickener we can use it to make homemade tomato paste all kinds of things so mama has a plan I think [Music] foreign [Music] I got one more stockpot available it's my favorite Ikea 16 quart stock pot I'm gonna go ahead and get this going also and that way we will just we will be processing cooking down as many as we can at one time between our four roaster ovens and four stock pots full [Music] thank you [Music] okay so here here's a little fun here's a little fun jamerrill learning things Tomatoes mess okay yeah that's our tomato juice they're coming wee okay so this is like get the tomato juice off now jamerrill this is it this is what you wanted to do we're doing it okay so in anticipation I'm gonna go ahead yep I have kiddo going down to get me a bunch of our half gallon jars right now [Music] [Music] [Music] so I have this Italian wedding soup also that I'm going to get going in the slow cooker now we're gonna add our um noodles and spinach and stuff towards the end and since it's going on the weekend here I'm doing this whole slow cooker through some folks will have this for dinner tonight some will prefer the 9 by 13 bakes it'll be lunch options for tomorrow I'm in here doing all of this so it just gives us options which is a good thing I am going to use some of my other broth that I've had boxed that needs used up also I know we canned broth but I'm also mixing that in with using up my purchased broth [Music] I'm honestly breaking out my second slow cooker I did dump both of those bags of the Italian wedding soup in one slow cooker my mind was thinking more like when I dump two bag meals in there and this is my 10 quart slow cooker I just wasn't fully seeing that wait a minute to soup jamerale so I'm going to just divide it between these two slow cookers it's a seven quart and a 10 quart and that will be just fine someone told me that I use this one so much I should order a second one and I really should they said what if something goes wrong you know you break it that would be sad because I use it so much cooling slow cookers the rest of my Roasters are not like this the other two over there are fine I just obviously must not have added as many tomatoes in there so just making problems for myself but that's okay it's okay we're doing it though so yes The Roaster ovens overflowing with the liquid that's that's dot well how I planned it was gonna go but still that's what started to happen and what I could tell was going to happen and now we begin the task of going around yeah stretching my neck too and visiting each roaster and pulling the tomato juice off of each roaster of course there is excessive juice because these Tomatoes were frozen but that is okay we are we're Mega processing and so this is not a 30 quart bowl that I'm loading the juice into at this time this is I believe it's about a 20 quart Bowl my 30 quart bowls are there beside it and the empty one is in the back and so we're just going to load it up foreign [Music] [Music] for pulling off the tomato juice and also dealing with we began to get a lot of tomato skins and also tomato seeds that we're coming through as I pulled the juice off but we end up developing a system here with the strainers coming up where I am going to pour the juice that we pull off the roasters through a strainer and then that juice will end up in an empty 30 quart bowl and that is the juice that at the end of this store here at the end of it all we will end up doing canning of tomato juice all right so the evening continues I just got off of a little bit over an hour long live call with my membership friends and we pulled off look at this we got all of this liquid that we have been pulling off the uh the Living Traditions Homestead method of pulling tomato juice off and then continuing to cook down our sauces I also well I think last time you saw this was full of tomatoes so as I pulled liquid off I added more tomatoes and now I have more that I can looks like I can check back in I've just been pouring as I gather it I pour the juice through my little strainer here and so everything in this bowl and it'll I'm sure it'll grow to a bigger bowl the seeds and the Skins this is what we will put through the freeze dryer to eventually by the end of this make our tomato powder as well you pull the liquid off of those stock pots also right now my rough evening plan is that I'm thinking as I continue to pull this tomato juice off and I have one more 30 quart bowl over here as I get these last of the tomatoes added in the roasters and then at some point I should be able to I'm thinking possibly is this a thing fit the tomatoes from those stock pots and the roasters as things continue to cook down if that's possible then I'll just leave these Roasters I'll get these moved to the middle in the middle of the island tonight we're not stopping yet though but at this point I am thinking okay what is my end goal as we continue on through this evening I'm also thinking I can get my canner my new canner going uh water bathing some of this tomato juice it'll be 15 quart and these are 30 quart bowls that are filling up one of my large family table community members said obviously you know if I don't like the taste of this if it's too watery I can pull more water off of this which is true we'll get there so what I started doing is I continued to develop my tomato juice system is I'm using a strainer there I strain this actually several times so this won't be the first time it goes through the strainer but as I'm pulling the juice off The Roaster with the tomatoes cooking down it's also pulling little seed bits and also Little Skin bits and so I'm just doing a little first level strain there and I'm also using that tool since it has a like a little reaching arm there on it to scoop new tomatoes in since we are cooking things down and also to hold back whole tomatoes from ending up in my measuring cup you'll see we have that upcoming adventure with just different Roasters as well but things are continuing to cook down and we are continuing to work through this process and so here we go now you'll see I use the strainer here to hold back some of the tomatoes from going in and if they do go in my big tomato juice Bowl then I can just use that strainer to pull them back out and so now here's my process when we get the one smaller bowl full of the Tomato liquid off the roasters I then take that and put it through my strainer to go into a larger 30 quart bowl of the tomato juice now I do have to wash my strainer off often and that's okay if I pour more liquid through it that'll kind of force force more through and then I'm just going back here I I have several strainers so hey let's just get them all out they definitely got a good workout with all this Marathon tomato canning and I am tasting some of the tomato juice and it is it's absolutely delicious and I know that I can use it for many upcoming big batch cooking projects and so now I'm using my same little tools again and getting that smaller but yet still big mixing bowl with the tomato juice liquid going through it and then again whenever my little strainer catches a whole tomato I just pop that back in and I continue to pull off all the liquid let's just push this 30 quart Bowl as much as we can I'm continuing to strain the juice through and fill up the bowl as much as possible scrape out what I can with my spoon I'm still Gathering up all the little pieces that we're going to put through the freeze dryer as well and here I am just continuing to rinse those different strainers get multiple ones of them out letting them all take a turn everything is fine this is all fine we are fine here [Music] and so now I am pulling the tomatoes off the different stock pots on the stove and I'm actually going to combine those over with the different tomatoes in the roasters that are on the island I'm also going to process down that tomato juice and so I'm just going to continue again that strainer certainly got to work out it was very helpful on that night for me to scoop things out and this is one of my smaller bowls so I think I can get it over there we go we do it yay and now I'm going to put these tomatoes into the roaster oven with everything else that's cooking down we're just making room here and as I'm going I'm trying to get off what liquid I can and now into the next roaster I am putting more tomatoes that are cooking down I like all the different colors and varieties that we got and then Here I Go Again pouring the liquid that's coming off the tomatoes while they're cooking through a strainer also and this alone this gets all the skin and all the seeds from the tomato juice so that was good even though it was a little system I had to do while other things were cooking I had time to do it although I did have one whole tomato escapee there now we got it there we go and now I'm just pouring all the little pieces through it through the sieve again and now we're going to keep on going we did a lot of tomato juice you'll you'll see the number here coming up on how many quarts we actually can and lots of friends have been saying over on Instagram that they like my hair up like this in the clip so I just want to say thank you this is how I wore my hair from I don't know age 15 into my late 20s so 10 15 years there I wore my hair up in these big hair clips just so so so very much so often I guess in my 30s I was trying to do something different and now in my 40s I'm like Mama's Hot let's get this hair up so it's nice to have some different hair options and we you know we like to have a little sub storyline where we chat about hair over here so hey while we're canning tomatoes on this long evening let me just say thank you for liking my hair clips Mama appreciates the encouragement lots of hair updos to come because as I joke Mama's getting heated up in this kitchen and speaking of getting heated up in this kitchen you know the my dream Mega Mama kitchen was complete late August 2022 and I got really warmed up cooking this fall this winter I have been cooking us out of the place and if you followed my kitchen building videos that I did for much of 2022 you know we were debating what we need to do what our options were as far as the heating and air conditioning go in the kitchen so the heating has been no problem and the air conditioner seemed to go fine this fall this winter well I guess we haven't had the air on we've had the heat on so we keep the house at a nice cool temperature anyway not too cool but you know we don't bake it up to 78 or anything anywho this winter we got the screen inserts we have the big screens for these windows but we also have like a half window screen insert that we just put in the top and so when I get going on my big canning days we put about four of those in and it just gives a nice breeze and fresh air because it's not too hot outside yet either so we will see our options with our HVAC company were that of course we had just a new whole house HVAC unit for heating and cold air and they said most likely that that new system could also do the added over 600 square feet for the new kitchen that option for us to try that was only about eight hundred dollars or we could do the whole mini split thing and that was going to be I believe about three to four thousand so I said you know what let's just go ahead and try the cheaper chicken first and see if this works out so I know in the winter I'm getting heated up now maybe in the spring and summer when I'm canning especially the summer once we get the air conditioner really cranking in this house because we we leave it on all summer maybe the kitchen will be just fine maybe it's going to really heat it up in here and I'm going to be like okay we're gonna have to go ahead and do this mini split thing and give that a try as well but I know one of the questions whenever we built this kitchen was just how were we going to heat and cool it and the answer is there's duct work through the ceiling and the heating and cooling comes in off of our new HVAC unit that does our whole house the whole upstairs living space that we have now is just about 2700 square feet that of course includes the kitchen so that means 11 people live in 2 700 square feet so we can do it we do of course definitely want to finish out parts of the basement and maybe build on eventually I'm already dreaming about oh maybe we'll do a little Butler's Pantry out the back I don't know thinking thoughts right I might actually eventually maybe I would build on to bring my freeze dryer and my freezers and again bunch of Butler Pantry area right outside what is currently the back door there by my refrigerator this is me dreaming with you though there are no plans for this right now right now we are about three quarters of the way done with the renovating of our second bathroom we were on a waiting list since late last fall to have both of our 1963 original bathrooms renovated the main bath is just has a few things Travis has to button up there and then the second bath the contractor is working through now and then after that we have other projects and other Adventures awaiting and of course we save up in advance before we do any big projects so everything takes us longer if we would go and get construction loans and do all that added debt I guess things could be done more quickly but we try to operate without any added debt and so that's why it's just little by little bit by bit that's why it took a while we lived here almost two years before we started the new big kitchen and we had our renovation budget we thought we were going to do our basement first but then again with all the mega mama cooking and the big batch meal plans I develop and so much of feeding my family and my business that I have developed over all these years online it just became apparent that Mama needed to have her kitchen first and now we're going to work through all the other areas in the house but I'm just telling you in five years if you see a Butler's Pantry going up out the back remember that we started talking about it in 2023 right we'll get there outside on the property I was hopeful to have several stumps ground up and to have two New Garden places added in I just don't know now now we're in March I mean I've I filmed you know my videos are always several weeks in advance so I filmed this massive tomato Extravaganza early on in Feb February and now it is March when I'm recording this voiceover so I was very hopeful a few weeks ago I would have said oh we're going to get these new Garden spaces in I don't know now that is how I felt about my raised beds though this time last year I was like okay my goal is to have the raised beds in by fall but we ended up getting them in so maybe it'll work out but I do have two more perfect garden expansion areas I'm excited about and I'm also excited to get out working in my raised beds here soon we have our garlic beds and our onion beds that were done this fall by my teen boys so now mama wants to get back out there I was just looking at my State Extension Office garden plans on things in Virginia in my zone I'm in zone 6B in things that could actually start to go direct so in the ground and then also seedlings that we can get started so we will just see how this progresses so here I am now it is the next morning and I am getting jars going for this day I'm going to get them going through the dishwasher and hey now the lights are on so these are various jars that were just stacked jars that had been washed jars that were Dusty so we're gonna just get them all going fresh didn't even put a head wrap on that morning but that's okay and look now now I am eating a snack my hair is at least brushed we're doing things and I am working on heating up our tomato juice that we pulled off of all those Roasters I have several stock pots going and we are going to actually work on getting the tomato juice going in the water bath canner it's going to be my first time using that Amish canner we also had some excitement going on outside with a little critter that the cat had caught outside the kitchen window so I'm talking to my people through the window about that but Travis goes to handle it and now I am unloading my hot jars and I am putting in my lemon juice into each jar we are going to start loading in the tomato juice and get our first batch going in this big Amish canner again I will have all my canning supplies linked down in the description below I buy most of my things through Amazon because they got me with the one button click it's just easy for me some of the things like my electric food mill that you will see coming up here I did buy that in store a little bit ago but I will also link that for you going this is an extra piece that you can buy if you were going to do pint jars and I'm sorry we've we've had some Farm life going on outside these windows and I already have these windows open up with the screens in today so if you hear a Ruckus that's what's happening the cats caught something as interesting but Mr traps is handling it okay so I don't need this for the 15 quart jars they're just going to line the bottom but if I was doing pint jars I believe the information said it holds 32 to 36 pint jars and this would need to be a rack that goes in the middle it also comes with a rack that sits on the bottom so I've got this going yay I'm trying to have my assembly line as set up as much as possible we'll see though I have my two tablespoons of lemon juice in each of my jars and I do not have vinegar in my canner yet so let me add that in yay okay now I feel like oh maybe I need another bigger Splash okay we got that going and this is just the tomato juice which I did have a cup of last night and it was delicious let's see I might need one more towel so I have over here several viewers told me that what they do is they put a bowl I'm just using a smaller measuring cup of vinegar and then when they're done they dump that in their canner so surprise surprise I never got to add my spinach or my noodles to my Italian wedding soup last night so I just got my slow cookers going again this morning with that I will add that in today for a bulk weekend lunch let's see here now I've got one of my larger wide enough jars this first one going in and I thought I've got four or five jar lifters so I got one that hasn't fallen apart yay okay in we go now I am not going to add the salt to these only because it's one more step it's not required as far as food safety goes so I'm just gonna do that later again as I think of my workflows and such so now I'm going to do this so it's just the two tablespoons of lemon juice that I'm doing at this time and so I am just filling up my jars adding in the last little bit of tomato juice there and wipe in my rims get my lids and rings on and adding them to my big new canner foreign [Music] [Music] canner that we're trying out I wasn't sure if the quartz of it yesterday and I think I said 27 I was like that can't be right I'll look it up so it ends up it was like 50 52 or 54. so we'll just say 50 couples and so now I'm just doing a little canning assembly line there got my lemon juice in those remaining jars I'm just quickly going through and getting the tomato juice in each jar wiping down the rim there we go I feel like we got into a pretty good canning workflow here I know we're continuing to work through and develop that and so many of you are giving me so many great ideas so I got the lid on there we're gonna take it for its first run this is another water bath canner that I have it's by ball it's called Fresh Tech and you can use it for water bath canning it also has a Direction book and a recipe book that you can use it as a multi-cooker and uh use it for hot beverages and all kinds of options but we are going to use this it'll do seven more quarts now I can also pressure can the tomato juice and the tomato sauce and we we're getting there but right now I'm getting these water bath canners going pressure canning has a different length of time that they have to go for it's actually not quite as long as well it said with this that this steamer part needs to go on top of the off of the jars it helps it distribute the temperature even today I'm going to put this over here because with my lid it won't fit under my cabinets anyway okay so Travis just came in and helped me as we rearrange the pots a little bit I got a small stock pot over there cleaned it up but I'll be using that that pot's lid okay and then I'm going to get my pressure canner going to solved all the Mysteries with this Tanner and its lid you know each other now I put my weight in my windowsill for the moment so now we are loading the ball electric water bath canner I have watched some of my friends use these for different jams and jellies and I load in the seven quarts I'm gonna take my lid back off there and get that other court in now it has yep there you go gonna be too hot to pick up it has this little rack that goes on the top that's required that is in the ball directions for using this canner whenever you use it that this is required I wanted my water to heat up though and so now I'm putting the last jar in it's all going to work out and then we will put that rack back on the top and put the lid on and following the directions we will bring it to a boil again and we will be water bath Cannon those tomato juices so this is the exact fresh Tech Electric water bath canner plus multi-cooker by ball I actually picked this up in 2020 and it's been in my basement so I'm glad to get it out and go in for this project [Music] [Music] thank you okay so this fresh Tech is boiling and I set the timer for 45 minutes and then I'm working through getting this pressure canner full okay so here's the soup also from the slow cooker I had put those noodles in about 30 minutes ago or so this is for a kiddo who wants to try it now this is actually Italian wedding soup and so I'm not adding the spinach in right now but lots of folks at my house will eat this as AKA meatball soup [Music] thank you foreign so it looks like all of our jars made it through this first load and this Mega Mama water bath canner first layer in my big All-American 941 model canner here I'm going to do the next level and this thing is just having a good old time with its full boil I turned this lid so the steam's coming out towards my window there and not in this direction here's another bowl of our meatball soup going out for lunch [Music] okay so I do have 19 quarts in this canner I have nine on the bottom and 10 on the top and kids blowing loudly on meatball soup in the background okay so with the jars that are done in the water bath canner I'm gonna unload those onto my table good thing we have a 16 foot long table because that's where I think all these jars are gonna go because the island is all full of the roasters and bowls and all of those good things [Music] thank you [Music] [Music] so I'm going to put my weighted gauge on my All-American canner now it needs for my elevation uh 15 pounds of pressure for 15 minutes to process this just finished its 10 minutes of the steam coming to the vent pipe there [Music] and now I'm gonna go through and we're going to get another round of hot jars out and I am going through and putting my lemon juice in my jars I'm only doing a couple jars at a time right now because I got all the jars right there hot and ready and we will load the next canner from here and the nice water bath canner is ready to go for us yet again I can load 15 quarts in there it was kind to us it has been doing its job so I'm glad I'm so thankful that one of you suggested it to me and now you can see what it's like in action if it's something you would be interested in I'll definitely be using this as it's called Amish water bath canner in all my upcoming water bath Cannon projects I don't see how I cannot use it it's just simple to use it's just a big metal box and I put the jars in there make sure they're covered with the appropriate amount of water and have them boil for the appropriate amount of time and so here I'm doing several jars at one time I like to test out one at a time or six at a time or at a time and so here I was just taking out a little bit of water from the top of the Amish canner if it gets a little too full there I can just pull it out with my measuring cup and here we go we have another view of pouring in all the tomato juice in the past couple weeks I can report back to you since my time filming and my time recording my little voice over notes for you there's several weeks in between I have used several quarts of this tomato juice with different soups that I have made for my family over the last several weeks so it's been very nice to have on hand and again I love getting even more from one product [Music] foreign [Music] so here's the contents of two of the roasters with all the liquid for it for the juice that we could possibly pull off they are now together and we're going to start running things through the food mill I also combined already the contents of the other two roasters so now we just have two Roasters loaded and we're going to run it through the electric food mill which is definitely an invention that is so very important and I love it and I think it needs a poem Oh look jamerrill has a friend isn't it amazing so my friend came this afternoon to help me so thankful and so she has been going through this is the other roaster with the the goodies from both Roasters combined in and she has been running everything through the top and look at this we have all of our seeds and our cores and our skins coming out the front and then our sauce coming out the sides and then she's been putting the sauce that she's been running through here in this roast stir and this is also turned on so look at that oh gee that was easy [Music] I have this big Mega Mama water bath canner going it has 20 minutes left on the timer and then this one is on my phone timer one of my viewers gave me a great idea and she told me because she this one has 38 minutes left she has so many canning projects and multiple ones at one time that she just has let's say like six of those digital timers and she writes a little sticky note for each one is and then she just has one Central spot obviously me doing this here by my stove won't work but I could do it over there a six pack of timers from Amazon is calling my name that's for sure so this is where we did our 19 quarts of the the juice trying to get all we can out of this project see how we fared okay the top looks like it lived alrighty so I'm just going to let these sit here for another few minutes and then I will start putting them out on the table usually you know I like to line the jars up well you know I line them up everywhere right well I'll line them up in the back there I'll let them on that counter and then eventually I'll line them on the island but this time so much is going down the island I'm just working on my table for now we'll see it's not that important I'm just telling you what I'm doing I do have a bunch of jars still hot in the dishwasher Travis just took all the kids out hey jamerrill where are all your kids when you do these big cooking days they're with my baby daddy haha so they are out doing things before I left I have one of the older kids bring me up several more cases of jars so I don't have to run down the basement to get any more we're just going to keep those going through the dishwasher that's our little uh system that's working well today and me working on doing the canning over there and getting into these canners has been working well too you know this kitchen is like we've been in here forever but we're still finding systems and we're doing things and I'm also super happy that my friend can come and help me this afternoon that helps make it all possible foreign [Music] [Music] [Music] roaster of sauce and it looks like sauce that's amazing I have been over getting more jars going I'm going to load the All-American again I do have this on and I'm going to just cook this some more although it does look nice and thick already which is amazing and my friend can be here for about 10 more minutes or so so she's still working on the wonderful best invention ever electric food meal and I love it and I'm so thankful I was telling her I knew I had ordered one but it wasn't showing up on Amazon that's how I keep track of everything I obviously picked it up out shopping somewhere because it wasn't on my Amazon order but it was in my basement waiting for me it's been able [Music] to foreign [Music] I have more Wide Mouth Jars in this bottom layer that I have regular mouth but it's still nine jars in there so that's good did I say there's still nine jars in there I don't know it's all running together now but it's not jars so hopefully we can get 10 more at the top [Music] thank you [Music] [Music] all right so while we're in limbo for a few minutes here I'm gonna go ahead and pull my jars out of these canners okay so we are getting gonna finish getting this canner going and then I'm bringing both of these water bath canners back up again and we will have another round with that I've got one 20 22 quart roaster with the sauce done we got more sauce that needs made and a second roaster going now we'll get to that I just really try to keep this loaded up [Music] [Music] okay I do have a few jars left in here but not enough to run a canner full so I'm gonna go ahead because we haven't even we still have more juice to can haven't even started canning sauce so I'm gonna get this loaded and get this going I went ahead and just turned the heat off on those two water bath ones I'm getting ready because we you know cart before the horse here so let's get this going again see kind of skills I have this is like don't try this at home I'm getting there [Music] it's kind of sad I feel like we're we're coming to the end this is the last of the tomato juice that we have poured off I will have to bowls for my bowls right yeah three quarters of my 30 quart pot with the tomato juice this is the last bit that I need to heat up again and then I have those other two canners ready and I have my jars hot again and then I need to get back to processing the rest of that sauce my friend came and she helped me for about three hours or so I'm very very thankful for that that's very nice of her that's not even half of that 22 quart stock pot but it is definitely using every part of the plant that we possibly can also I don't know if I mentioned this I didn't core any of these tomatoes because I knew that I would be running them through my electric food mill that is all of my hopes and dreams so it has been I'll show you up close all the little taking out all the little pieces there [Applause] but now before anything else happens I want to get these other two water bath canners going again I mean they're still hot but you know with ours oh I just heard a snap that's a sad sound I must have had a jar break we've gotten through so many jars processed already and we have not had a jar break that's sad but it happened okay I just did my count on how much we have canned so far today we have 64 quarts of Our tomato juice product and again this tomato juice is a lot thinner than the tomato juice if you really cook down your tomatoes in order to make the tomato juice but still I was really inspired by Living Traditions Homestead many of her tomato videos and she shared about how much they love to drink the juice and how they pull it off of their tomatoes so that they get another product from her canning time and I was like oh yes I want to get all the products that I possibly can from each canning session let's do this and so of course here we are on day two my my hair is going to start it's going to start curling it's getting hot in here day two of doing it we are I'm proud of us and the island is a hot mess us from different Roasters that are done but that's okay and that's our one thing of sauce that I do have turned on that's cooking and that's our little paused food meal project over there and then this is the other roaster that we're going to fill with the rest of the sauce you can see it turned out it's nice and thick like we've pulled all of that off of it and we have some more water coming up there but anyway I'm excited oh [Music] and so Canon the juice big batch can and the juice continues but we will be getting very very soon here we'll get begin into actually get some cans of sauce going in the canners as well that can her actually because I had it eaten up for so long reduced down a lot I need to get some more water going so I will get these jars in here [Music] something that I've noticed with this Amish canner and I did read some reviews about this the lid will not go on perfectly flat every time so don't do what I do but this is what I have been doing it seems like just for a few minutes I need to just this probably isn't the best thing for me to show you that I'm putting on it I just need to eat apply some pressure and push it down and then in a few minutes it'll stay flat I hear it flexing a lot I feel like the sides of it like I hear a popping sound that's not the jars it sounds like the metal is flexing it is stainless steel Travis could tell us more about it but what I've been doing is when I see the lid won't fit perfectly I just put a few things on top of it for a few minutes and then it'll stay down flat that's what I'm doing so far I was just trying to see because this is a long slow process in some ways I mean better than the hand crank I'm sure but just wanted to see if I could have this looking through while I'm filling my other jars [Music] scratch I've just laid on the floor for about an hour it's been good I meant to do 15 minutes but of course it's been an hour so that's if my adult son got home from work and so right on cue my camera battery died but anyway what what I was saying was my adult son got home and I just finished up about an hour live call with my large family table committee members and I had the the sauce is over there I'll show you but I had one canner that I was still waiting on over here and so just let myself stretch out on that stained red rub right we're gonna work with that stain here soon in some spring cleaning see if we can salvage that so it's really the the biggest break I took all day I started about 11 A.M this morning so been going almost 12 hours gone working through I am heating myself [Applause] yes I do have that meatball soup I could use but I'm also using up stuff from Costco so I have one bowl of this that has been my friend the last couple canning weekends it's just nice to have it and spicy late at night makes it feel like a mama treat I got a box of these a while ago again only my grocery hauls would tell us but I think it's been a year ago but it's been a bit the box of 12 and I had three left Stir It Up with my finger get it in the microwave so reporting back what I have accomplished well this thing is beautiful I mean it's not beautiful now it needs to be washed but it ran wonderfully we processed down all of the tomatoes that were in here so we now have this Roaster full and about a quarter of this roaster then as far as what we're going to freeze dry and then make into a tomato powder we've got these two bowls of skins and seeds and then this is a lot of seeds that we had used the sieve and that we had strained out of the tomato juice and then this canner let's see it's still probably hot I need to take the weight off oh no still not quite okay I'm gonna let that sit on there a little bit longer these jars need to come out this finished process and when I was talking to one of my sons he turned this um stove off for me I've been letting this sit I don't know if we have any crack jars in there we'll see but I'm pretty sure because I did I heard that snap you know and if you know you know so um I think we have one in there but this fared well and so I was working on the count of these so we have 64 here now and then with our 15 in the Amish canner and our 19 ish I mean we don't know a broken jar in our All-American and then the seven in the ball electric water bath canner I believe that brings us close to 90. that we are coming to the end of our tomato juice excitement we're gonna actually get to Canvas sauce and I've just been letting this continue to cook with the lid off um it's been about two hours now as I had my live call and then I had my stretch break but that is a gift to my body and my back and my neck and I'm not having a lot of pain or anything I know y'all worry about me but it just felt like it was time it was time to stretch I'm going to turn that off now I'm gonna do a basic plain tomato sauce we are going to can that up and then we will doctor it up when I go to use sauce just as I am expert ninja mom expert level on opening cans of Great Value tomato sauce now we will just open up cans of our whole canned tomato sauce of course I do still have some great value left continuing to work through and then of course dishes and bowls to wash up things to clean and Tackle I was hoping to do quite a bit of that while the sauce goes through the canners I could at this point pack up pretty much and do the sauce tomorrow but I also you know everything's out the mess is here so that's where I want to on the other hand just push through and again I feel good I feel good I just like to tell you all about how I'm getting through things and getting things done I'm going to get my evening herbal teas going also [Applause] and so if only I really could run this fast that's always my joke but we are running back from the electric water bath canner there and getting those jars out on the table to cool see we got our stacks of boxes we have the occasional kitchen Kitty running on the floor and so I have several canners to unload that kind of all got done and then cooled down a bit around the same time we are definitely making good work filling up this 16 foot table if you hadn't seen how we made our table or if you don't know the story I know I have several new viewers also whenever we moved into this house in 2020 we ordered a nine foot quote farmhouse table on Amazon it was about six hundred dollars then I had seen another mom post about it in a homeschool mom Facebook group and she was just saying it was really her family's answer to have a table big enough for all of them and so I ordered that for us and it was great I mean again we got three good years out of it no issues whatsoever and so whenever we did this dream Mega Mama kitchen I ordered another one I had figured and I had talked to Travis about it beforehand that he would be able to somehow connect the tables and work it out and he was able to do that he did have to saw a little bit off the one side of each table to connect them that's why it's a 16 foot table and not an 18 feet we just didn't have the room we had so many feet we wanted all the way around the table to you know we live and function in this kitchen and homeschool in this kitchen and do so much of our life in this kitchen the Wingnuts and I are real good friends oh that's right you know I almost forgot this is the one I think I heard the crack I mean that's how it's looking what do you see in there huh oh I'm hearing little pops already that's nice this kitchen is so cruddy after all these Adventures we've been a heaven okay I still don't see which jar is cracked maybe it's not I mean we obviously have some fun stuff going on top of those Lids but see what we can figure out here [Music] three jars left I think we're gonna make it last one no broken jars wow I heard that it's just that sharp glass cracking sound obviously it was something else because no liquid is leaking from any of these jars I'm happy and so now we're here we're doing it we're getting the assembly line going to finally get canning this home processed tomato sauce and again some of these are my homegrown tomatoes so I am proud of us and the learning and the progression that we are making here and so this is a very thick sauce I have already used some in some soup also that I had made in the last few weeks I want to do spaghetti and I want to do other things like that with it oh I think I must have done chili in the last few weeks didn't I do chili don't remember now it's all a big batch cooking Vortex but um I would like to do spaghetti with this as well just with our home canned sauce but we will get there that's how our jars look like and now they are going to go in the canner and so I'm putting this first load here in the Amish water bath canner you again you can both water bath and pressure can these tomato sauce products there's different times and directions with each also some of this will depend on your elevation when it comes to the pressure canner so I will link down below the directions that I followed from this National Center of food preservation again I'll also link you my various YouTube Friends videos on processing tomatoes and Frozen tomatoes and all these good tips and tricks that we have gathered together so you should have a good bit of tomato information down in the description now I'm getting another load of jars from the dishwasher we're going to take those over and load them with sauce as well I am doing more of an assembly line here since I have my Roasters over on the island and this is very late at night but we are pushing through I am watching my friends YouTube videos as well I say on my big batch cooking days it also gives me some time to watch and listen to some YouTube so that's nice I also usually have a podcast or two I'm listening through or I'm listening to an audiobook [Music] so now I am just pulling out the last of this sauce from The Roaster here and I'm going to move on to the next roaster it was not too full Roasters full it was about one and a half or maybe one and a quarter one and a third of tomato sauce I know it takes a ton of tomatoes to get a sizable amount of tomato products I plan to yet again this year get going a ton of tomatoes I mean last year I did I think I did six raised beds full which was not a ton so I only did about 30 tomato plants last year and I know I have smaller family friends that'll do you know 5200 plants so with all my mega Mama tomato sauce hopes and dreams I think I need a lot of tomato plants I've never grown them before to on purpose can them or try to grow enough on my own toucan them I think you know real realistically I will be supplementing with the produce auction and my local locally farmed tomato deals but I'm gonna try right as as my as my shirt says as my coffee cup says I'm gonna so I'm going to try and so this year I would like to try to grow at least 100 plants now as I said I did have six raised beds with tomatoes three of those did not do so well the other three did okay they did but three again not so super I also had my zucchini that started and then it died kind of same thing with my squash both started off well but they did not fare well all season we did have some wins we did pick an okay amount of green beans an okay amount of pumpkins an okay amount of potatoes but it can only get better here as I learn to navigate these Woods that I'm actually gardening in so it took me a while took me three years to realize wait a minute I'm trying to Garden in the woods and I've come to terms with the fact this is the woods again we had 19 more trees out this fall that were dead actually those were out right before my friend Becky from acre Homestead and her mama came to visit me and they got to see the property with those 19 trees out and so Becky was hopeful for me also that now with those trees out where I did my raised beds was my most Sunshine area that I had figured out after living here about two years but we were both hopeful with the dead trees that were also around the raised bed area there was about six or seven there with those out I'm Hope just hoping to bring even more sunshine to the property alrighty now this big Amish canner reached its time and I've been letting it sit with the heat off I know the water's not pretty but I don't think we lost any jars in there either siding and it's [Music] we're probably gonna come in close to a hundred quarts of Our tomato juice and then oh I'm also canning I believe it was 10 to 12 quarts of water and do I have anything else going to the canners well the other seven of the tomato sauce is in the water bed can on the counter but it's less than five minutes now and then of course it has to cool and then I have I believe three more quarts of sauce in my big canner and then I have the three big bowls of the scraps the skins and the seeds and we'll work with getting those in the freeze dryer tomorrow not tonight I'm gonna go around now and try to at least get dirty things in the sink and try to get Roasters and other things it'll be soaking I can't stay up and clean nothing or do nothing now but I know after I sleep and get up and have my mama coffee tomorrow's a brand new day and I will put the L book and I'll have to put the elbow grease in tomorrow so here's our tomato sauce out of the canner we work so hard for this it is so beautiful and I will say even though I was saying that I would not do any major cleaning until tomorrow I still had another canner load to run so at this point many times I mean I'm up late I'm cooking by myself I don't have any extra hands helping me there are definitely times and you've seen this in my other canning Marathon videos where I just laid down on the floor and stretch my back and rest until the canner is done but I decide on this night I was going to push through and at least get as much cleaned up as I could there's definitely no way with this big project that I could also clean up as I go I know that's always great in theory but when I'm in the middle of these big projects it doesn't work out for me that way so I mean sometimes it will depends on what we're doing but many times it doesn't so a series on the lemon juice we went through this whole big bottle of lemon juice and then three quarters of another one this is 48 ounces so we're serious but if I do have some family members who are able to help me some or if I have a friend who's able to come and help me for a few hours they might do things like get the dishwasher running again for me or sweep or wipe down the counters just any you know if I could clone myself then those are the tasks that they do but on this evening besides the one cat that is in the kitchen with me enjoying sitting in my mama chair I am going to just do what I can it'll be better than nothing to start from in the morning and I'm just wiping down these big overwhelming messes or like where do you start well I can start by getting everything that will fit into some hot soapy water in the sink and I can start with a fresh washcloth with hot soapy water and I can start wiping down big things and just pouring the hot soap and water over things and getting other stock pots full of the hot soapy water and then I take that hot soapy water and I pour that in to my various roaster oven pans they're quite a bit to get cleaned out but that's okay and so hot hot soapy water does a lot and I continue to wipe down my Island from there and make some progress which again just a little little push I will thank myself in the morning for doing this push sometimes I'm just not physically able and that's okay too but on this night I thought I I can do this while this last cantal load runs and so I tried to keep going here I don't think I kept moving the whole time the canner was running but I did a good push here to get everything as wiped up as possible and to get all the bowls and Roasters at least with hot soapy water and I also hand wash all the items I had soak into the sink put my lemon juice up and move my jars out of the way stretch my neck a little bit wipe down the countertop make some good progress on things and so since I was able to find it within myself to get going on cleaning up it wasn't too bad once I got into it and got moving but again I'm not hard and rigid with myself that this is the way it always happens or this is the way it's always done I mean there are definitely times where the mess just has to wait and that's okay again this is why in this Mega Mama dream kitchen of mine I wanted to have two sinks one mainly for family life and then a big wonderful prep sink for these big projects hand washing dishes extra pots and such from my projects there we go we got everything soaking and now I can start pulling some cantal loads out I took the lid off of the ball electric water bath canner just to let that start to cool and then tea in hand I like it every lap we take another sip of herbal tea I continue to unload the canner onto the table now how this works out is these jars actually stay on the table for about two or three days it just took that long for me to Circle back and get back to cleaning them and labeling them but it was such a fun project to get done I'm so glad that you did this Big Tomato canning project with me we saved up all these Tomatoes this fall and we finally did it in February even though I know this video will come out in March in February we cooked and processed and canned all these tomatoes and it was good it was good for us it helps me know what to expect with tomato canning also is a good way to learn how to do three different food preservation tasks with the load of tomatoes that I had and now these dishes here that I'm rinsing off those will just wait until morning but they're clean and the next day I can have another family member put those away for us some of those Roasters and bowls I do let Set until the next day and that's okay I at least got something started with them and I do take the time to take that whole food mill apart and we take all the pieces and thoroughly wash that and get that going that was something I thought okay I just have to push through and do that so I'm glad that we did and so here we are here is the final look at the canned tomato sauce not final look final look for this evening more is coming in this video but the tomato sauce and the tomato juice and then also the jars of water now I wanted to can the water because I've heard that you shouldn't have your canner run empty if you have the space you should still run something and running water is just like if you buy bottled water from the store in The Jug or in the water bottles good to have for emergency water storage on your shelves I only did enough water for a quart for each person an emergency preparedness says you should have a gallon of water per person per day so we won't even talk about my 33 gallons of water right now so I felt just fine canning up these 11 quarts of water on this evening okay happy new day so our final counts are we have 25 quarts of tomato sauce plus that little what was it three quarters of a quart that's in my refrigerator and I'm going to do some homemade beef stew in my what is it 15 16 quart that beautiful red dutch oven I miss it it's not over there I wonder where we even put it where is that thing do you all know where my big red dutch oven is the big the red pot that usually sits on the stove where have I put this is it in there it's right here oh okay go ahead and pull it out I don't think it should be in that cabinet anyway it's so heavy but and again we just finished all this big man canning yes yeah that it was in my lazy Susan that only has the plastic shelves not a good idea so anyway thank you it can just sit there for right now so pull in life together after this Big Tomato Extravaganza but I'm going to do beef stew in that Dutch oven using mainly the home can ingredients and I will go ahead and put that little three quarters of a can of the tomato sauce in there too because why not it'll it'll blend just fine but I'm going to label these jars now and work on getting these put away because we have a brand new week and then I have eight quarts of water here uh yeah then nine ten eleven you can see these cans I still need to wipe off the tops of and so here I have a bowl of hot soapy water I have several jar lids I needed to clean off and then I am going through taking the time to label and date all of the jars even the water I write water on there and I write the month we can it so that we will have that information all right so everything is labeled now and in the boxes we just if only I could snap my fingers and do a transition but that's okay we can't do all the things anyway so we have our water here and we have nine boxes of the tomato juice again thank you to Living Traditions Homestead and her video she showed how she did her sauces and pulled the juice off of the tomatoes and processed those at the tomato juice times I will link that video down in the description below anywho nine boxes of the tomato juice and tonight as an example we are gonna do a big batch beef stew on the stove top and I'm going to use many of the items that we home canned I don't know if I'm going to use all of this stay tuned for another video and you'll see but along with the beef broth I was also going to put in some of our home canned tomato juice I also have our let's see beef broth these are the black beans that we canned I have the beef stew meat we have the potatoes that we canned in our big 100 pounds of potatoes and 100 pounds of meat can Adventure we have the corn that we did this fall and also carrots that we did this fall now I see I should have cut the carrots in the circles these are the carrot sticks I'm still just gonna chop them with a butter knife real quick and throw them in there but this tomato juice is gonna have a new life tonight so total that is 108 jar bars that we got of the tomato juice the tomato sauce so little sauce for so many tomatoes of course I didn't have like 380 pounds of Aroma Tomatoes or a could be potentially better sauce put tomato I don't know if I said potato I could say it sorry we're doing lunch here lots of other stuff going on anyway it was 380 pounds mostly of a variety of tomatoes that I got marked down for ten dollars for a 25 pound box that's where at least 200 pounds of these Tomatoes came from and I have watched lots of videos and read lots of articles I have so many Canon ladies where they will use a variety of tomatoes also and use what they have and use with their Garden is producing or use what they found on sale to do their sauces so it's definitely a mammoth undertaking but I'm so glad we did it I learned a lot through it I'm happy with the sauce that we got plus I love these long canning projects so anyway we have two cases we have 24 jars here of actual sauce that's going on the canyon shelves again I have that halfway or three quarters of the way jar that I didn't have enough to can then I will also throw in our beef stew tonight but then so sad look look [Music] so sad so one way that I test to also make sure all of my jar sealed is I need to be able to pick up the jar just by the lid and it hold and then of course you know that nothing is is moving there's no movement in the jar it's not springing back up or anything all of these jars past my test except for this one I want to pick it up it just came right off so that's sad I think I've had that happen one other time uh so we can you know compost this or feed it to one of the animals or what have you but anyway this is the results of the canning part of our big undertaking and now I have my freeze dryer on defrost but I have four Harvest Right trays full of the skins and the seeds or what I had in my Harvest Right was uh some winter squash so I got three large jars of that I'll throw some freeze-dried things in our beef stew everything vegetable stew is what it's becoming tonight but I got four Harvest Right trays full of the tomato skins and the tomato seeds once my freeze dryer is done with its defrost cycle I will get those four into run and then in another upcoming video we will grind down those tomato skins and seeds that we are freeze drying now in my Vitamix and we will make a tomato powder so all of the other fellow youtubing Friend videos that I have mentioned throughout this video with all the extra extensive tomato canning knowledge I will link a whole bunch of those videos for you down below so you can watch their tomato canning Adventures that's toast popping up because we're doing toasted tuna salad and strawberries for lunch real quick as an extra bonus let me show you this strawberry deal that Travis picked up at John Henry yesterday so yeah it's a lot of strawberries when we did the math on it it ended up being a dollar a pound so in these trays it's eight packs of strawberries and a tray we got two trays for sixteen dollars he got five trays total it ended up being forty dollars by the time it was all said and done so there's 40 packs so it was a dollar a pack and they're all ripe and ready and ready to go so throughout this week we will be having fresh strawberries with every meal they also the other day they had bushels of cucumbers for five dollars by the time Travis got there to get that I'm just gonna have him get you know two bushels 10 whole bucks to turn cucumbers into bacon I was going to feed them to the pigs but when Travis and the kids went in that even they were already sold out so they don't always have these deals but when they have them we try to run and snag fresh fruits and vegetables and goodies for ourselves so again thank you so much for hanging out with me these several days while we can and we processed we got three different products out of our 380 pounds of tomatoes that we
