hello friends both new and old my name is laura welcome back to my kitchen i have this bag of elderberries here that we'll be using to make some delicious elderberry jelly my name is laura at oshawa's family farm and this is where we balance back to basics living with the modern world now if this is something you're interested in i ask you to please subscribe to this channel as well as ring that bell so you are the first to know when i upload a new video the first step in this process is just to make the elderberry juice and to do that i'm going to pour these elderberries here they're currently frozen into our saucepan and i am this on medium heat i'm going to get out this masher here and just as they start to unthaw start to mash these and that will create the juice and then i'll just continue to let these simmer for about 15 minutes all right i hope you can see this here we are starting to get some good juice out of our elderberries i'm going to continue to let this simmer for about 15 minutes while i continue to lightly mash the berries now ready to be strained through this old fashioned cone strainer and i have this sleeve just to make sure we collect all of the seeds and pieces of the elderberries to make sure we get pure elderberry juice down below in the bowl okay we are going to scoop these berries and put it in our cone strainer and this canvas sleeve and make sure we get all the juice out and then um i have this puzzle this wooden pestle which i already have in here and it's covered with juice but i just go ahead and continue to press down with this to make sure i get as much juice out of the berries as possible here is a close-up view of the mush of elderberries as you can see it's quite messy with the dark purple color and below is the lovely elderberry juice okay i just poured three cups of the pure elderberry into my large saucepan here i'm going to add in one package of pectin and then i'm going to measure out a quarter cup of the lemon juice now i was able to get just about three cups of that elderberry juice but i do just want to mention that for your elderberry jelly if for some reason you are unable to um not unable to get enough of the juice out of your elderberries and you're a little bit short you can go ahead and add in just a little bit of water but you want to make sure if you're making jams or jellies that you're putting in the full amount of the liquids that it's asking for so um if your recipe is calling for three cups of elderberry juice and you got two cups and three quarters just add in a quarter cup of water and your jelly will still turn out fine okay our mixture is now at a full rolling boil it is now time for us to add this sugar and we this is the time we have to we have to work quickly to make sure that nothing sticks to the bottom of the pot so here we go i have it pre-measured we'll just go ahead and pour that in okay we're going to stir in all of that sugar and bring it back to a full rolling boil and once that occurs i'm going to go ahead and hit the timer for one minute continue to stir at that full rolling boil and then we'll remove from heat and our elderberry jelly will be ready okay friends this is do or die time we are now at a full rolling boil i'm going to go ahead and set our timer for one minute and we are going to continue to stir this without splashing it outside of the pot for the full minute and then we're gonna go ahead and remove it from the heat okay i just removed our elderberry jelly from the heat look how beautiful that is i absolutely love the color and i cannot wait to enjoy this on my morning toast and the final step of making our elderberry jelly is filling our mason jars and preparing these for storage and i just can't wait to share these with my friends and family all right we're all done making our elderberry jelly i'm so excited to share this with my family and friends i hope you learned a little something about the elderberry jelly making process and if you have recipes you'd like to share with me and how you use your elderberries i would love to hear them in the comments below until next time
