everyone this is Kenji Lopez Alta I'm here my restaurant worst hall in San Mateo I'm working late again after hours I've posted videos of our Smashburger before and people always ask me exactly how we make it so today I'm just gonna walk you through it step by step and I'll tell you exactly how we do everything so that you know you can do it at home we do it on a flattop you can do it on a cast-iron skillet or even a stainless skillet here we go ready now the first thing we do is toast the bun because the burger cooks faster than the bun can toast normally we'd have a little butter roller over there during service so that we can toast get some clarified butter on there quickly but right now I'm just going straight butter so we got these two balls of beef they're two and a quarter ounces each season them very coarse grind briskets brisket and chuck plenty of fat just plain old salt and pepper there and I'm gonna flip these over like that so the bottom sides are facing up I'll show you why in a second then they go right on the hot side of a griddle that like that covering with I'm sorry this is why we season that second side with salt and pepper as well boom he's a parchment another piece of parchment now we take our spatula and this weight and we smash you really want to get especially get the edges down that parchment by the way helps ensure that the burger does not stick I say as it sticks it's okay American cheese fixes fixes all sins all right so we got our bun Pass Mayo basically egg yolks lemon juice garlic canola oil and olive oil salt I'd like to put my toppings on the bottom shredded iceberg slivered onions a whole bunch of pickles these are kosher dill pickles alright now here's the key step you can see they're almost done so they basically cook like 90% of the way through on that first side then you need a razor scraper I'm gonna get off all that crust [Music] that is done you can see up then it gets it gets holes in it that's fine what we're really looking for is these nice kind of lacy I don't I'm showing it to you kind of these kind of nice and lacy edges around there and you know the meat is a coarsely ground so really they're held together with nothing but kind of hope in American cheese top bun and that is the worst all smashed burger mm-hmm
