what's going on yo it is Maxim my kind of beats now I'm not unless right now but have you let you know this video is over two days you'll see me I swap shirts in the video but I forgot to let you know it was another day and some things happen during the first day you know and it's kind of a long story so if you want to know more about it head over to the Facebook group come in there it's kind of where I share more personal things anyways I'll let you in on the secret no matter what though let's get this last day or I should say last two days from be Antion started or really got in and tried some true now Asian flavors spicy bitter funky I think y'all are gonna like this one let's head that way just off the main road here going for what I thought was gonna be a kouchi but looking at sign looks like it's going to resemble more of a bond me no matter what though I heard it's a highly rated sandwich so we're gonna get in here to try it out so get a couple plays you can get this you can get the eggs and skillet you can get some meat on the side but I'm just going with the Pierce sandwich form all right I think this is closer to a bond me sandwich in an actual cow G which word I was looking for but no matter what this sandwich looks phenomenal I don't think we're gonna be able to close that shoes added so much stuff in there and you really can't but look at this beautiful thing they're doing out here is throwing it over that open flame charcoal getting that bread nice and crunchy she later on that Pat tag a little mayo got the luncheon meats got a ton of pork floss and veg and look at this I mean there's just sauce flowing out of the sandwich that's how you wake up right there I sauce by that sandwich the bread nice and crunchy I love that open flame they're toasting it on and then the pate nice creamy flavorful if you get some fresh veg you get a lot of the luncheon meat the pork floss the saltiness that checks all the boxes you want nice crispy bread little dough Venus and all those luncheon meats nice creamy pate and I mean it is sauced up a sweet chili sauce got a great kick of heat as well except from sandwich I'll know whether you want to call it bought me psychology no matter what it is they're doing it really well got here a little early looks like they're doing the last two steps of their prep work so may have just wait just a little bit I don't know what they got cookin behind this wall but boy the amount of smoke sure does smell delicious [Music] there's a lot going on here you see the meat get the chilies you got the herbs you got some Bao and a lot more look at all the open flame cooking that going on there got a big pot of something going and then get the sticky rice cooking fresh certain rusts this is a massive restaurant like at the inside area and then they have both sides on the outside which you can sit out here as well [Music] Wow they do not waste any time at all she whipped that lob up I got the soup and sticky rice and all this veg I here real quick tradition for me got started - sticky rice and just a little dip in the sauce you know I love that last people some of them may not know much English but I tell you one more they always know as spicy Oh as long as they know that that's all that matters so I got a lot p.i here which looks like it's gonna be the ground meat in some opal as well and then just a abundance of herbs and chilies I mean this is just gonna be an explosion of flavors you got the bow you can actually got the uncooked rice grains as well they're probably been toasted and you got a bunch of chili seeds in here I see so many chili seeds pure veg wrap plus a dip in the sauce for that verse bye that's my first time trying POW it's so bitter so intense you have to be a very talented chef to be able to balance those flavors and she's done an exceptional job of it now that lettuce wrap let me get those true flavors but let me get what this really needs to go with some sticky rice I love that the Baja is so bitter so harsh that you're able to load in chilies you're able to load in the herbs you're able to load in the sourness because they're also strong flavors that they just all work together I'm starting to sweat like crazy lips are turning red then you get all the texture from the veg you could like that crisp coolness from the herbs what's going on I gotta get something soup break this off thank you so much soup that is the relief my mouth needed it's porky a little bit milky like you're cooking some bone sour subtly sweet oh wow you need this to relieve yourself from this log not to refresh and write it out back in to the main show now [Music] this is what I like to call a chili induced sweat it's not from the heat it is from the amount of chilies in this this is just love Asian cuisine to me taken what the land gave you with a ton of leafy greens using every part of that animal we can I mean come on we're using digestive float here combine some sticky rice and having just an intense burst of flavor [Music] my mouth is screaming for relief I'm like tearing up I'm sweaty so you know it's time to go back in for the soup I'm looking like I just watched the breakup scene in a romantic chick flick I mean I'm tearing up like crazy right now [Music] not for everybody but if you want a true taste of Laos that is it right there I mean you will feel you're welcome and you eat that okay so starting today off they're just kind of walking by this place and it looked like they were doing a lot pull them up a lot pounded stuff so I got a ton luck home which is like the Laos version of papaya salad and I kind of close my eyes and pointed at the next one because there are just so many options I was like ah let's just draw something random all right they're both here let's dive in now I don't know the name of this one yet so start with what I know that's not McCune which is actually the Lao Asian version of a papaya salad now I'm clearly wrong already because I thought the Lao Asian version did not come with peanuts but a clear that does but I do know to be allow Asian version it always always always always has to have the fermented fish sauce in here that's gonna give it a great funky flavor [Music] if i had to guess i have pure lao style that is spicy and that is funky there's a ton of fermented fish sauce in there oh wow they're just salty and funky refreshing from the staff the papaya [Music] then he's pounded down the papaya just enough to where someone's got like a cook down in veg pill but still got a snap to it touch I a sit at the end keep your mouth water and keep you refreshed [Music] all right before I forget he caught it tom hollie look we got some seafood in here all kinds of seafood and then he's clear noodles I don't know what these are Wow [Music] there's a great salad to follow up with because it's nice seafood sweetness a big kick of sour though so you get more of a sweet and sour that Spice Cubs don't get me wrong but I really need that relief I need that sour the cut through that heat I think getting these clear noodles oh and I have no clue what they are got try these out they're crunchy they have a little crunch to them I was expecting almost like a tapioca or something that's gonna be nice and chewy but now you can crunch them that is strange no flavor at all I think they just add a little bit of texture to this dish sometimes you gotta follow the instinct I passed by there a few times as a man I feel like I want to stop there and I'm glad it really did really nice people doing nice spicy funky pounded salads okay so this is a noodle with some type of coughs in I don't know which type it is I see chicken here so maybe like a yak die or something like that so I'll just walk in one day and I found this place I saw the sign it said since 1980s that original and then you see the pace packed out so I decide to come back today during a down period there's still quite a few people here so that is that beautiful broth and hinge chicken flavor coming from it nice and salty pika good garlic nice and refreshing from the amount of herbs are put in there it's gonna be a good base [Music] [Music] we're doctored and ready to dig in oh wow you get that Chile Oh in there and the whole broth just turns red look at those noodles though Wow those are really fun to eat as you sit there and you chew those noodles you get the flavor of the broth more and more and more the winner for me though is still this broth Wow no bungee cord noodles here I can't get over how chewy these noodles are man you chew and chew and chew I guess it's to the locals liking because they like a chewier noodle [Music] that chicken must have been in shape because I mean it was lean a lot of protein oh yeah and look how beautiful this is to look at you got the green because a deep dark red brought the big wide noodles awesome awesome awesome broth the only thing I couldn't really wanted where the Chinese no six person in front of me got the last order though that's unfortunate but hey I just hope they enjoyed them I bet they've been really good in that broth however I heard there is a less traditional market which you can go to I think it's open today and it's a home until about 4:30 though so I'm a chill cool off a little bit and then I'm gonna go out to that market and see what we can find nothing else maybe we can find some sweet treats alright that that long Museum because apparently around 4:30 they're supposed to be setting up some little food stalls I want to look for that's pretty neat I don't know if this is marques like boar but I see food so close enough [Music] this is where I would come and eat this is just pure local dishes ready to be eaten I did not expect this at all I'm telling you this is a flavor market look at all the grilled protein sources and the gels are the little allow Asian dipping sauces all right got my go-to here my nice little curb so I just got a few sausages a little sticky rushes to snack on because like I said it's really hard to take those curries and those broths anywhere I mean I don't know where I go [Music] because this is pretty typical loud sausage you'll always see I never can pronounce this I would really don't want to try don't embarrass myself but it's got ton of kaffir lime leaves in it and lemongrass is just always so flavor packed if you had to imagine curry in sausage form that's exactly what that would be get the knots fatty chunks ghostly pieces as well you get just enough pork meat you get the snap nice and mince the middle and then just a ton aromatic gradients like I said the kaffir lime leaves the lemongrass just that flavor exploding sausage and can anybody please answer me why I got 5,000 Kip worth of sticky rice that was that was dumb not to mention the sausage has a nice snap in just enough oils in it to make it a perfect companion with sticky rice that just hits the spot 60% of the time all of the time [Music] [Applause] so Lina just romantic deer jerky I used to grow up eating but they almost come the outside and a little bit of sugar I guess who the sesame seeds will stick as well by like the addition of the sesame seeds and then just a little bit of sugar you chew and chew and shoot and the flavor starts to just kind of slowly leak out of that beef jerky the reason I didn't need to buy this much stick your eyes I'm gonna sit here and eat all this oh so pretty much had sticky rice left I feel like an idiot for not grabbing dipping sauce the first time I went back so check it out I got the gel ba for God that dipping sauce threw me for a loop you can almost like a little bit roasted chili of a and they'll kind of feel as well but you got something kind of funky in there I don't know if there is like some fermented fish sauce or what but there's something throw me for a loop you got that flavor pack sausage and then the stick your eyes I like to call it a peacemaker because it just brings everybody together sorry I'm gonna hurt you up enjoy this and finish off I think I've startled enough people I don't think they expect a white boy sitting on the curb sitting here enjoy a sticky rice sausage and dipping sauce all right last night got a little coconut drink with ton of sugar in here just cool me up whoo just a perfect ending nice little sweet finish y'all that's gonna do it for this strange two-day video but we made it happen and you know what it was delicious no matter how many days it took to get done it's a maximum I kind of beets I just realized
