it's the first weekend after the pandemic was declared and we all needed comfort food so today I'm making jerk chicken rice and beans fried plantain and our bonus recipe today is a salad using whatever we had on hand this is by no means authentic Jamaican or even Chinese food these are my recipes I have created in the kitchen I soaked a pound of beans overnight and they have now doubled in size I will rinse them until the water runs clear then I'll fill a pot with water and boil them for about an hour until they are tender and if you're wondering about this these are the roots of the scallions I made green seasoning two weeks ago and have kept the roots to be planted later [Music] I built a pot with about 12 cups of water and place it over medium heat next I'll bring it to a boil cover and allow it to cook while the beans are boiling I'll grind my spices peppercorns and allspice if you have these free ground black pepper and ground allspice feel free to use that nothing beats the aroma of freshly ground spices I'm cooking a whole four pound chicken today so I'll used 1 tablespoon of peppercorn and 2 tablespoons of Earth spice I'll also break up one cinnamon stick and place it all in the spice grinder and pulse until it's a powder [Music] I'll set this aside and then I'll start the chicken this can be done later on but I just wanted to get it out of the way I had no intention or desire to film this meal prep today but my husband insisted so if you enjoyed this video do thank him in the comment section below first I'll remove any evident feathers and then I will cut it into six pieces and I'm only cutting it into six pieces today because you risk drawing out the chicken on the grill over an extended period of time [Music] because I'm already late preparing lunch I'm gonna cut this quickly in the sink this way I don't have to pull out all wash my large cutting board I know many people are intimidated by cutting up a whole chicken in this case you can only cut it in two straight down the middle or you can buy chicken legs or chicken thighs or chicken wings any of those will work in this recipe I like separating the breasts from the leg and thigh because I can place it in an area of the grill that is not as hot so that it's not overcooked as you can see you don't need any special equipment to cut a chicken you don't need a cut lash or a chopper all you need is a very sharp knife and know where the joints are [Music] and don't you dare throw away the back of the chicken that's the most delicious part and now I'll clean and wash my chicken the Caribbean way for those of you who follow the rules to not wash your chicken look very closely their feathers extra skin excess fat and slime eNOS and if this makes you happy then so be it [Music] you really don't have to remove all the fat because it helps to base the meat while it's cooking [Music] [Music] next we'll wash or rinse the chicken remove any slime enos and soak it in lime and/or vinegar [Music] [Music] [Music] [Music] just a reminder it's very important to disinfect your work surface with slime and vinegar and other cleaning agents after you're done cutting up and washing the chicken next we'll cut some slits into the chicken to get the seasoning all the way down the insides while the chickens draining we will check on the babies it's a little more cooked than I would like but you'll have to make a drink next I'll move on to make the homemade jerk seasoning today I used apple cider vinegar scallions onion garlic hot pepper thyme the juice for lime and de spices brown sugar and salt and some soy sauce when buying soy sauce choose a brand with no chemicals or preservatives next I'll start the prep work but herself cut off the bottom of this onion to be planted later as you saw earlier I already saved the roots of the scallions to be planted later in the garden next I'll roughly chop the hot peppers and if you don't like it spicy feel free to reduce the number or eliminate the hot peppers or remove the seeds as for the garlic I'm using a whole lot maybe a little more than ahead that's major protection from the virus now that all the prep work has been completed I will put three scallions onion pepper and garlic into the food processor and pulse it until it becomes a paste then I'll add the spices the soy sauce the brown sugar the salt some olive oil and the lemon juice [Music] remove the cover scrape down the sides and pulse again I also forgot to mention that I added the thigh Mindy as well in goes the spices black pepper allspice and cinnamon next the soy sauce brown sugar and salt about two tablespoons brown sugar and 1 tablespoon salt three tablespoons of vinegar the juice of one lime and I'll also add about three tablespoons of extra-virgin olive oil you may use a regular cooking oil I'll pulse it a couple of times to give it a good mix and then we'll season the chicken [Applause] it looks tastes and smells amazing right now if you don't contaminate it you can use it as hot sauce on the chicken after it's done I use the generous amount on the chicken so that'll be full of food [Music] Julia Child's one set but your hands are the best tools in the kitchen so I'm really going to get in there and massage the seasoning all over the needs [Music] have no fear all this hard work will be rewarded very soon your reward will be the most delicious homemade jerk chicken while the chicken is marinating and my husband is getting the smoker ready I will start on the rice because the kids are really hungry right now [Music] [Music] [Music] [Music] like all my recipes I'm making this up as I go along using the ingredients I have on hand [Music] now that the smoker is ready let's put the chicken on the grill if you don't have a grill and if you don't want to venture outdoors because it's too cold you can place this sit and often 350 degrees and cook it for a little over an hour about an hour 10 to 15 minutes 10 an attack we [Music] [Applause] now we're back to the kitchen to finish up the rice in the medium heavy bottom pot over medium heat I'll add some olive oil about a quarter cup next I'll add the onions and the green onions also called scallions and the hot pepper and cook it for about a minute or two [Music] [Music] I've also just made the executive decision to add a diced red bell pepper to the mix this is a normal cost even sub we make it up as you go along type of cooking [Music] [Music] [Music] hooking in our household was always a family affair [Music] now I'm adding about two to three tablespoons of browned garlic I'll cook it for a minute and then I'll add the grated carrot and the diced pepper as I said before this is no typical Jamaican rice and peas or rice and beans I love adding veggies for added color for flavor and for the nutrients next we'll separated things from the liquid and you'll see why makes them gonna season it with salt to bring out those flavors [Music] I'm adding a tablespoon of bull spice berries to pick up the flavor [Music] I'll add the beans and Sarah gently because remember it was already cooked very sad next I'll add the rice today I'm using jasmine rice and don't forget the time [Music] [Music] we decided to add an extra cup of beans [Music] [Music] once it begins to stick allowed to reserve the liquid from the beans at this point you can add coconut milk as well or you could have added it earlier while the beans were cooking from one pound of cooked beans we have about 1 cup cooked beans left and my daughter wants us to reserve it for our tacos for her to snack on later we lab just enough liquid to cover and give it a good stir I'm adding an extra cup of water because we don't like our rice to grainy another dash of salt and then we're going to bring it to a boil cover and I'm also gonna seal it with some foil cover and reduce the heat to medium-low and cook it for about 20 minutes and here's another last-minute idea ahead I added a couple of tablespoons of the jerk seasoning to the rice to make it a jerk rice and beans time to check on the chicken and it's time to cook [Music] forget to move the chicken breasts away from the hottest part of the grill [Music] now it's time to head back to the kitchen to make the salad and finish up the rice today we're using mango red onion scallion cilantro bell pepper and cucumber [Music] with no jerk chicken and rice and beans without some fried plantains so whip this up quickly and then the leaves I promise [Music] [Applause] [Music] at this point it still looks very wet but I assure you it will dry as it cools so do leave a little bit of moisture in there at this point [Music] [Applause] [Music] and that's it my friends another Saturday's lunch with my family
