winston [Music] winston [Music] come back with that leg of lamb most people in the us celebrate saint patrick's day with corned beef mashed potatoes and cabbage but surprisingly corned beef is not the irish national dish the connection with saint patrick's day originates as part of irish-american culture and the closest thing to corned beef and cabbage is actually boiled bacon and cabbage in ireland corned beef became much more popular in the united states when irish immigrants in the northeast started using brisket instead of paul because it was much cheaper but for me saint patrick's day is an excuse for making my irish soda bread it's so easy to make and it tastes absolutely delicious slicing it and layering it with kerrygold irish butter and mustard and layers of corned beef saint patrick's day i love it there's just four ingredients in irish soda bread flour salt baking soda that's bicarb in the uk and buttermilk you just pop them all in together and work them in and it just makes the most gorgeous easy bread you can ever make those of you that are scared of making bread if you've never made it before this is the one to start with you know in ireland there's a saying that the best thing you can do for the kids is to get them in the kitchen cooking and teach them how to cook and this is one of the first dishes the young kids in ireland get to learn to cook you start off with the flour and you're actually using all-purpose flour that may seem strange to someone that does a lot of baking especially of breads you know why are we not using bread flour but in ireland the wheat that they grow is low gluten so it's perfect for making the soda bread and then into there we put a little salt that's obviously for the flavoring and some baking soda stir all those together be careful of your measurements though i've got four cups of flour one teaspoon of salt one teaspoon of baking soda and one and three quarter cups of buttermilk if you add too much baking soda in there it can actually turn the bread green yes green make a well in the center of the flour before you add the buttermilk because you just pour that straight in the middle and then just hold a little bit back because you may not need it all you can use a spatula to stir this together if you want to but again the traditional way is to make a claw with your hand and then just keep moving it around in the bowl like this buttermilk is the liquid remains once the butter has been churned and it's quite acidic if you don't have buttermilk you can use regular milk but work on adding a teaspoon of vinegar or lemon juice into regular milk and that will get the nice consistency you need an acid when you're making this bread don't need the bread there's no yeast in this we're not stretching gluten or anything in fact the less that you mess with it the lighter the bread is going to be it's already started working and rising and that's because we're adding the acid from the buttermilk to the alkaline which is the baking soda and together once they get working in some liquid they create carbon dioxide which is air bubbles and then they start rising that bread so just bring that dough together and we're not rolling it out we're not kneading it we're just shaping it into a nice round circle a little flour if it's too sticky once you've got the shape and it doesn't have to be all flat and perfect on top iris soda bread is a rustic bread and all these sort of crinkles just give it well just gives it character doesn't it it goes onto a baking sheet a little flour onto the baking sheet first then it needs scoring into four so just cut into there and then this side cutting into the bread helps open it up and then the heat gets inside and cooks the center at the same time but the irish tradition is that this is the blessing of the bread too the father the son the holy ghost amen now another thing in ireland they have fairies and a lot of people believe in the fairies and the fairies aren't always good so you have to prick the top all four corners to let the fairies out now i'm not sure that i believe in letting the fairies out but i'm just pricking each of these to let the winstons out in my kitchen it goes into the oven 425 degrees fahrenheit for about 25 to 30 minutes corned beef is brine brisket and you can burn it yourself or you can buy the ready bought ones at the store they're just as good they really are the flavors have been sort of marinading into the brisket and when you cook them they come out amazing corned beef is brined with salt sugar cinnamon sticks mustard seeds peppercorns cloves allspice juniper berries bay leaves ginger and then it gets cooked i cook my corned beef in the sous vide machine i cook it for 10 hours at 180 degrees and it comes out absolutely perfect gorgeous moist nice and tender if you don't have a sous vide machine yet i'll be doing a video on sous vide in in the next few months you can cook this in the pot of water so a nice big pot of water cover it with cold water and then you need to let it simmer on the stove normally for about an hour 60 minutes for each pound so a three pound piece like this three hours simmering on the stove until it's four tender it'll be gorgeous ten hours it's been sat in there and look at that it looks beautiful slit the bag and drain off those juices and lift that corned beef carefully out onto the plate it smells amazing i can't wait for the soda bread to cook and then don't waste the juices smell amazing and these i'm going to save to make leek and potato soup it'll be a really fun saint patrick's day my delicious irish soda bread look at that crunchy on the top lift it up tap the bottom it sounds hollow it's perfectly cooked it smells amazing i've got my soda bread now i've got my corned beef and all i need is some kerrygold irish butter it's the creamiest butter it's it's made in ireland look irish grass-fed cows oh but in ireland there's nothing goes to waste save the wrapper and just rub it around the top of the soda bread all that butter running into the soda bread mmm delicious and my little twist some english coleman's mustard i mean i'm english and it does really make the corned beef go amazing with the soda bread put a link to it in the description but you can use any mustard in there if you want to this smells so good slice some corned beef all that's left to do is to slice the bread and make my sandwich it's crunchy and crumbly on the outside but look inside absolutely gorgeous look at that texture crunchy on the outside amazing lots of butter into that warm bread so it just melts away the saltiness of that kerrygold butter and then some english mustard it's actually quite hot so don't put too much on there and then the corned beef doesn't that look amazing irish soda bread with a little kerrygold butter some mustard and delicious corned beef it doesn't get more saint patrick's day than that does it thanks for
