crispy chicken drumsticks smothered in a sticky honey sauce and friends you won't believe how crispy we can get that chicken in the oven these are my sticky chinese honey chicken drumsticks so i have a little trick for getting a really crispy chicken skin in the oven instead of deep frying and i know you guys love that kind of hack because you ask me for it all the time so this is a keeper recipe my friends let's get started on that chicken first of all so couple of things we need to do to get that crispy skin one is we want to get the chicken really dry so pop that out onto a tray lined with some paper towel and i've done this technique with chicken wings as well so if you're interested in wings you can also do this with wings head to my website for the recipe now some more paper towel on top and really pat those drumsticks dry and then these guys just go into a large bowl and then now we're going to get a little like food nerdy um now what we're going to do here is add some baking powder now baking powder is an alkaline ingredient so this is going to raise the ph level on the surface of the chicken skin and what that does is that makes the browning process happen easier and faster so i hope that makes sense not too food nerdy anyway it makes things browner faster that's all you need to know really sprinkle that over the top and i want some salt here as well salt helps to draw out moisture and drawing out the moisture will give us a crisper skin and you want to give this a really good massage make sure that baking powder is evenly distributed i don't want any kind of big lumps of it if you use too much of it you can get a weird kind of flavor so you only need a little bit so the next part of getting our chicken crispy is all about the oven cooking so a little bit more prep to do here i just want to brush this wire rack with some oil that's so the chicken pieces don't stick and then lay your chicken out on that rack and the whole point of the rack is that so we're getting lots of that hot air circulating all around the chicken pieces which is better than just having one side kind of getting that hot air all right so that's our chicken ready to get into the oven now the process for the oven i want you to set this at a low temperature all times and temps are on my website so check out the recipe there low temperature for 30 minutes and that's going to render out the fat from beneath the skin which is going to help with the crisping and then we'll come back and continue on with the cooking all right let's have a look and see how our chicken is going at the moment now we're not quite ready for the party just yet but you can see we've got a little bit of browning happening the chicken skin is looking really nice and dry that's going to be good for us to get that crispiness what i want to do now is turn the oven up super super hot really hot and i'm going to get this chicken back in for another 45 minutes and by then we should be golden and crispy and delicious so while the chicken's doing its thing we can get onto doing our honey sauce okay start off with a little bit of oil and some garlic just give that garlic like half a minute not even that and then i want to go in with some chicken stock set that bubble away a little bit and then add in some soy sauce some vinegar so i really love the vinegar in this it gives you that extra bit of tang and not so the sauce isn't so like kind of sickly sweet it's my little secret ingredient now some sugar and some honey [Music] and just give that a stir and then let that simmer and bubble away for about 10 minutes and when we come back we'll finish it off so at this point we have some really cool flavors going on in there the sugar will have dissolved and combined with that vinegar to get that kind of tangy that sweet and sour kind of flavor that we want now what i want to do is thicken things up a little i don't want it too gluggy but i do want a little bit more thickness so i'm going to add a little bit of corn flour that i've mixed with some water stir that through a little more kind of simmering here so this is the kind of situation that you're after not too thick as i said but just a nice kind of drizzling consistency so now you can turn the heat off and just leave that into your chicken is ready to go so this chicken is currently looking super crispy golden delicious and listen to the sound of this ah amazing that we can get that without having to deep fry the chicken that is a huge win now what we want to do now is get this chicken meeting that sauce this is gonna be a love story my friends okay so get that chicken out onto a tray and then drizzle all of that sauce lusciously all over that chicken lusciously is that even a word i don't even know if that makes sense whatever i like it drizzle the sauce on the chicken now give that a good mix [Music] okay so just a final little sprinkling of sesame seeds here and there you go friends a sticky crispy honey chicken without the deep frying without the batter my goodness yum i'm really excited about getting in here let's see how we've gone shall we this is going to be very joyous i'm not so
