Hey guys! I'm Vanjo Merano from PanlasangPinoy.com Today is a good day. I've decided to have a walk and buy this Liempo because there's a nearby store selling Liempo today we'll be cooking Adobong Baboy sa Gata I've prepared here the ingredients that we need for this recipe We'll need Liempo. This is the Pork Liempo or Pork Belly I bought earlier cut into cubes. The size of the cube depends on you. You can make it big or small. It may also depend on how many people will eat coconut cream or "kakang gata". You can also use coconut milk white vinegar "paminta" or whole peppercorn "toyo" or soysauce dried bay leaves or "pinatuyong dahon ng laurel" garlic, we'll crush this later aside from these, we'll use cooking oil, water and salt Let's start guys Before we cook, let's marinate the Liempo let's add soysauce and vinegar. Here goes the soysauce here goes the vinegar and this is the crushed garlic then mix well it's that simple The main idea here is we need to marinate the liempo until the liempo absorbed the flavor of the seasonings we'll cook this in a short while usually I marinate this for at least 3 hours but if you're in a hurry, 30 minutes to 1 hour will do I'll just cover this and refrigerate. Then we'll cook it After 3 hours of marinating the liempo, it's now ready it was marinated with soysauce, vinegar and crushed garlic we'll preheat a pan then put in here the pork right away notice that there's no liquid here. I drained it out leaving the pork and garlic we'll add in the liquid later cook the pork until it turns light brown to medium brown make sure to mix while cooking so all the sides will be evenly cooked continue cooking until it totally turns brown then we'll add the other ingredients guys, make sure to mix this while cooking so all the sides will be evenly cooked continue to cook the pork then we'll add the marinade later I'll add a bit of cooking oil cooking oil is an optional ingredient you can also extract the pork oil from the meat by cooking it a bit longer cook it for about 1 minute I want to cook the garlic even more there you go, this how I want the garlic to be I added cooking oil so it can help fry the garlic even more that's how I wanted it add the liquid marinade these are the soysauce and vinegar add water to tenderize the pork now, it's simmering now let's add the "buong paminta" or whole peppercorn add the "pinatuyong dahon ng laurel" or "dried bay leaves" then cover the pan continue cooking until the pork is totally tenderized at this point, our pork adobo is ready We made an adobo liempo but were not yet done because our recipe is Adobong Baboy sa Gata so we'll need to add coconut cream here goes the coconut cream or "kakang gata" you can also use a regular coconut milk you can use a canned coconut milk/cream but it's best if you use the fresh ones mix then cover let it simmer we have simmered it for 10 minutes. remove the cover and continue mixing continue cooking until the coconut cream is reduced once it's reduced to half, you'll notice that it starts to thicken we can now add salt taste first before adding salt. So you'll know whether we need to add salt or not because we already have soysauce earlier according to my taste, I'll need to add salt then mix If you prefer Adobong Baboy sa Gata with more sauce, you can now transfer this to a serving plate and serve but if you prefer an oily version, cook it for a longer period of time until the sauce really thickens then let's serve this. Then taste it! at this point, we achieved the consistency I wanted this what I mean of the oily version of Adobong Baboy sa Gata I'll transfer this to a serving bowl let's turn off the heat here's the bowl I'll directly transfer it here there you go what happened here is the residue of the coconut cream or "kakang gata" is cooked very well also so this will surely be very flavorful alright! let's decorate this guys, here's our Adobong Baboy sa Gata come let's taste this it's still hot.
