In this video, I'm taking these three buttercream cakes and stacking them to create this three-tiered buttercream cake. Now let's get started... I'm going to be using a 10 inch round cake base that's almost one inch thick. I'll also need cake boards which are the same diameter as each of my cake tiers. I'll need several bubble tea straws which have a larger openings than your typical drinking straw, a wooden dowel with a pointed end and a pair of scissors. A tape measurer or ruler and clean gardening shears are optional. I start with three cake tiers one that's four inches round one that's six inches round and one that's eight inches round. I used this decorating comb to create the ridges on the side of the largest tier and the colored stripes on what will be my middle tier. Each cake tier has been assembled on a cake board that's the same diameter as the cake tier and refrigerated. This will make the tiers easier to handle later. Notice the circle in the center of the cake board? Make sure to remove the circle before assembling and icing the individual cake tiers. If you're not stacking cake tiers you may leave the cardboard circles intact. The two smaller tiers contain two cake layers and the largest tier contains three cake layers. Each cake has been chilled in the refrigerator for about an hour. I start by piping a little bit of buttercream directly onto my cake base. [Music] Then I place my bottom tier onto the cake base. Again when stacking a buttercream cake, make sure all tiers have been chilled and the icing is set. This is very, very important. Working with a chilled cake allows you to gently touch and shift the cake tiers as necessary. Next I insert four bubble tea straws directly into the bottom cake tier. [Music] I'm working through these steps in real time so that you get a sense of how long the process of stacking the cake actually takes. I positioned the straws equidistant from each other so that they would create a square if they were connected. To cut the straws flush with the height of the cake tier, I gently lift the straw continuing to hold it then cut the straw straight across where I start to see icing on the straw. I do this process with all four straws. Next I place my second tier directly on top of the bottom tier making sure it's centered. You may find it helpful to be standing directly over the top of your cake to ensure that it's completely centered as you stack the cake tiers. Remember there's a cake board directly under this tier and this helps to maintain the structure of the stacked cake. Next I'll position three bubble tea straws into my second cake tier [Music] These form a triangle shape around the center of the tier. To cut the straws flush with the height of the cake tier I gently lift the straw continuing to hold it then cut the straw straight across. [Music] [Music] foreign [Music] The top tier I'm going to insert the pointed end of the wooden dowel right down through the center of the entire cake. The holes in the bottom of the cake boards allow the dowel to go through the entire cake with ease. You'll want to push the dowel all the way through the thickness of the cake base like this to lock it in place. Before placing the top tier, I use a measuring tape to make sure the height of the cake tier will completely conceal the wooden dowel. I need to cut about two inches from the top of the dowel, so I do this with clean gardening shears. Once the dowel is cut, I gently lower the top tier onto the cake making sure that it's centered. When the cake is completely assembled, I clean up the edges and pipe borders around the bottom edge of each tier to dress it up a bit. The stacked cake can be placed in a refrigerator to set completely. This will also make it easier to transport. With practice you'll be able to stack a buttercream cake with ease.
