How to Stack a Cake | 3 Tiers!

hello and welcome back i'm amy from neurotic mom bakes today's tutorial i'm going to be showing you how to make a three-tiered cake hopefully you've already watched my cake decorating 101 so you know the basics of stacking crumb coating and outer coating a cake for today's cake i'm going to be doing an eight inch a six inch and a four inch cake um what you'll need is either some wooden dowels or i have these milkshake straws the wooden dowels are much difficult more difficult to to cut unless you have special tools and i find that these support this size of cakes just fine if you're going to go bigger or more tears then you would start to get into the wooden dowels and the tall rod but for what we're doing today the straws will work just fine so i've already got these ready to go and i'm going to pop them back in my freezer because they need to be completely frozen all right now we're going to work on the top tier of our three tiered cake i have two four inch rounds here and i'm just gonna use this board to decorate the cake on but then i'm going to lift it off after to put it on the top of the cake and i just want to make sure it stays in place so i'm going to just tape it down get a little dab of buttercream and just cement it there put some buttercream in the center and don't forget to turn your top layer over and just get eye level make sure it's vertical and level horizontally and then we're gonna do our crumb coat all right here's a little hack for if these cake layers are sliding around on you i find that the four layers do slide a little bit i don't know why the smaller cakes are more difficult i'll just get like a kebab skewer and i'll just stick it make sure it's lined up and i'll stick it down the middle and then kind of push it into the cardboard and it just will hold it in place while i'm doing my crumb coat we're just gonna scrape all that off look for any major gaps i have a few on the bottom kind of twist and get that out and then just get your offset spatula and level off the top of it and then just pop it in the freezer for about 10 minutes before you do the outer coat okay now we're going to put the outer coat on our top tier don't forget to give your buttercream a good stir before the crumb coat just to get as many air bubbles out as possible okay around we go okay we'll just pull in our tops with our offset scraper make sure you have a clean rag and just pull it in scrape wipe it off pull it in scrape wipe it off [Music] i go through this cake decorating process more in detail and more in depth on my cake decorating 101 video about how to get the smooth coat and get the crumb coat stuff like that this next step is extremely important make sure your second and third tiers are completely frozen i would freeze them for a good hour because when you're going to lift them on you're going to need to handle them just slightly and if they're frozen you won't get those fingerprints in there now i will show you how to prep the bottom tier and then you will you would do the same thing for the middle tier okay i've got my cake already stacked and crumb coated and i'm going to do my outer coat with some chocolate buttercream so i'm going to get that all ready to go and then i'll show you how i level off the top of my cake make sure it's level [Music] okay before i level off the top i'm going to put my straw supports in and because i'm doing two more tiers you can just do one more tier you could just do a six inch and a four inch but since it's fairly large i'm going to go ahead and put five straws down the middle of this just to make sure it has the extra support so what i'm going to do is i'm just going to put one right in the center and i'm going to push it all the way down until it hits the bottom i find these straws i've seen them at my grocery store they're called milkshake straws but i buy them in bulk from amazon and i will link them here in the description box below the video so they're all the way down now i'm just going to pull them up about a quarter of an inch 3 8 of an inch you can also do this after the crumb coat stage too it's not a problem then i'm just going to cut them off and then i'm going to push them down so you don't see them and then i'm going to smooth my top okay so now i'm ready to smooth my top and i'm just going to get my offset spatula and pull this in now it's absolutely critical that you get this level so i'm going to show you how i do that not totally level so i'm going to go ahead and get my scraper and just kind of go [Music] [Music] around if you really wanted to get technical i have seen bakers use levels actual levels on the cake i have used my phone you have an app there's an app for that you can get the leveler app on your phone and just put a piece of cardboard on make sure it's frozen and then put your phone on top to see if it's it's level but today i'm just gonna eyeball it because i'm feeling pretty and then confident go around the sides again pull it in scrape and wipe pull it in scrape it off and go all the way around okay we're going to let this chill a few minutes before we start our stacking okay we are ready to stack our cakes i've got my eight inch out i'm going to pull my six inch out of the freezer all right this is completely frozen so you have about a 60-second window where you can handle it and it won't leave fingerprints i'm just going to run a flat spatula underneath [Applause] there we go and i'm just going to put a little bit of buttercream just to kind of adhere it so this tier is on a cake board so you're going to be able to kind of hold it by the bottom just make sure you pull that tape off and you're just going to lift and try to center it and like i said you have a few seconds to kind of that looks really good okay now to just kind of seal and clean up the edges i have some chocolate buttercream in a piping bag with a really small hole and i'm just going to pipe [Music] right around the bottom and then i'm just going to get my pinky and just kind of run it along and it just kind of smooths it out this is going to be eventually you're going to decorate it with some flowers or some candy or some swirls right here so don't worry about these being super super clean there we go okay let's do our next one again don't pull it out until right when you're ready to use it in fact let's go ahead and put a little bit of buttercream and i'm just gonna get my spatula this one does not have a board underneath but it's a lot lighter so you don't need that support and we're just gonna place that on make sure it's centered move it if you need to press it down i'm just going to clean off a spatula there's just a couple edges i just want to scrape off right here there we go okay and then we're just going to get our buttercream and run it right along the bottom and get your finger and just kind of smooth it out and that will just seal it down okay let's just add a couple ruffles and we'll we'll call it a day okay let's just kind of clean up dress it up just a little bit on the bottom here i'm just gonna do just like a little bit of a swirl detail just think of all the different color combinations flavor combinations you could do you could do like an ombre effect with dark medium light pink or blue or green do all white if you're brave you can do a wedding cake but i'm not that brave you can add flowers sprinkles candy there's so many so many possibilities then i'm just going to do the same thing on the top [Music] ah there we go look how pretty that is
