foreign [Music] all start peeling the clothes because the spring and summer of 23 is definitely in the air in Jersey and that is a good thing and my name is Tommy and this is the gallery Backyard Barbecue and if this is your first time here you gotta hit that subscribe button and ring the bell you know the deal and on today's show we are going to smoke up a flank steak to Perfection so look what I want to do here is I want to turn the clocks back only about four and a half to five hours because we did have a little bit of marinating to do after that I'll bring you guys back and we will start the show guys remember all ingredients will be down in the description under show notes and it'll start out with some a couple cloves of garlic and then the rest of the goodies we will incorporate all that together and anytime I am marinating a piece of flank steak I like to get the meat in I like to make sure we got good contact with the marinade and then I will switch it over to the bag you know the deal seal it up get the juice in get the air out and in the fridge she will go in this case here four to six hours yeah alrighty guys and here we are right here I did pick out the garlic and put the garlic on top I like garlic so I am going to do that otherwise like you saw just put it in a colander let it drain and that'll be good enough here so look basically the schematics of this show is I'm going to run that pit anywhere between 200 and 2 and a quarter we want to try to get as much smoke on this puppy as we can we are going to run Cherry pellets and again I am using my Z grows 1100 2B and I will take this up perfectly to an internal temperature of 130 Fahrenheit so look at this time let me get on over to the Z and let's fire it up thank you always remember to open up your hood anytime you fire up the pellet grill you want all that bad smoke to escape so look once your pit hits that proper temperature of 200 or two and a quarter it's time to get that flank steak on and again we will monitor that temperature because we want to bring this up to the perfect internal temperature of about 130 Fahrenheit foreign [Music] plan here we are about 110 112 internal I'm going to take it off I'm going to rest it on the board I want to fire up this uh Z girls to 450 500 get it back on and see if I can get just a little bit more color on it let's go in let's check it out let's get it on the board and I'll bring you back at that next step keep in mind that we've already taken on about an hour and 10 hour and 15 minutes of smoke and I can tell you right now man that this uh this flank was definitely Smoky enough Smoky perfect so look we're about 425 on the controller we are going to get the flank on and again we're only going to want to go about maybe a two minutes per side just to get a little bit of color on on the pitch she goes and I can tell you one minute then we will open up the pit we will give it a quick quarter turn another minute and we will flip it at that point we will close the lid and leave it for one more minute and then we will get it off and that should hold my perfect internal temperature of a medium rare to rare yeah oh look at that color that's all you needed on the board quick rest about five ten minutes or so and we will start slicing this bad boy open now remember you want to slice Against the Grain and that'll give you a flank steak that is a beautifully tender as she sits and as she captures that air she will pick it up a little bit more oh yeah [Music] and I would say she is looking good on that medium rare to rare now I will get off a couple more slices I'll plate it up and we will go in live for that taste test and those closing thoughts yeah alrighty and that is that there and this is uh I could tell you right now man I took a couple pieces off camera as I was setting up the um the thumbs and this is through the roof man a juicy flavorful I mean this is everything you want in a flank steak is right here and look you can serve it out like this I got some baconed out tater tots I got some green urge in the house I'll bring that up and I'll put that on a dinner table and leave that off of this table here or you can kind of chop this up and put it in some tacos I mean you can do anything with this man this is uh this is top-notch stuff for sure let's go and let's get that on screen taste test you know what could one say man it has the uh it has the perfect amount of smoke on it that hour and 10 hour and 15 minutes of straight smoke from the uh from my Z grills 1100 to be it's perfect I wanted to get a little bit of color on it as you can see here we did just by firing up that pit and letting it get up to that 450 500 temp putting it on those grates for about you know two minutes per side whatever still held my temperature of a nice uh what would you say nice medium rare maybe a rare not as beautiful for me that keeps it nice and juicy this is one you got to make there is no
