Not a Joe, but still an offset. I like this video a lot because of the explanations that he gives. It's definitely a more in depth view of what's happening and why... Seems to me like a lot of smoking is a combination of feel and science- some side more on the feel side, and some more on the science side.
This video helped me understand the why's behind keeping a good fire while cooking.
