hi everyone this is Nami from just one cookbook.com growing up in Japan, yakisoba or Japanese stir fry noodles was our weekend lunch and it was my dad's favorite dish I look forward to eating it every weekend and I didn't get tired of it as my mom changed it up a few ingredients every time you can make yet soba with just vegetables or different kinds of meat my children loved when I add japanese sausages mr. joc like pork belly slices and I like mine minced pork and calamari version don't forget to try my homemade yakisoba sauce it's really delicious even if you can't find a yakisoba sauce where you are, you can make this sauce at home with easy to find ingredients now let's get started! homemade yakisoba sauce add 2 tsp sugar in a small bowl add 2 tsp soy sauce add 4 tsp oyster sauce add 4 tsp ketchup add 4 Tbsp worcestershire sauce mix well slice 1/2 onion cut one carrot into julienned strips slice 3 shiitake mushrooms chop 2 green onion into 2 inch pieces cut 4 cabbage leaves into small bite pieces cut 1/2~3/4 lb sliced pork belly into 1 inch pieces prepare 1 package yakisoba noodle transfer the yakisoba noodles to a sieve and quickly run hot water over yakisoba noodle separate the noodles with hands in a skillet or wok, heat 2 Tbsp oil on medium high heat cook the meat until no longer pink cook the hard vegetables first add the onion and carrot and cook for 1-2 minutes add the cabbage and cook until almost tender lastly add the green onion and shiitake mushrooms and cook for 1 minute season with freshly ground black pepper add the noodles to the skillet/wok, and lower the heat to medium stir fry well together add the yakisoba sauce depending on the amount of ingredients, adjust the amount of sauce to use mix all together using tongs transfer to plates garnish with dried green seaweed and pickled red ginger, serve immediately itadaki masu!
