today we're gonna make the only brine you'll ever need hi my name is ash fall cash F with Hill Country barbecue market brine is all about moisture cuz when you cook meat you lose about 20% of the moisture in me so Bryan is a way to sort of add back in that percentage of moisture one thing that's great about this brine is it's really versatile you can use turkey you can do it with pork a new chicken you can really Brian just about anything you want in it so here's what you'll need to get started 1 cup apple cider vinegar 1 teaspoon allspice 1 teaspoon coriander 1 or 2 cloves 2 tablespoons black peppercorn 2 tablespoons granulated garlic 2 tablespoons granulated onion 2 tablespoons celery salt 1/2 a cup kosher salt 3/4 cup honey 1/2 a cup molasses 3/4 cup dark brown sugar 3 quarts water and 1 to 2 guajillo peppers one reason I love this brine is there's a lot of great flavors from Central Texas we got this coriander we use that celery salt flavor a little bit that granulated onion and of course guajillo chilies which are absolutely in my opinion one of the greatest chili I put them in everything right now I really love the apple cider vinegar in this recipe because it sort of brings out sweetness but it also helps get that acidity which is really what makes meat flavors pop you're making the brine the first thing you want to start with is your salt you want to add about 1/2 cup of salt right about there but we like brown sugar here about the same amount of brown sugar just a little bit of honey to it it's all about these beautiful layers that you keep adding as you're brining a little bit of molasses and we've got a couple tablespoons of granulated onion it's sort of like taking the classic barbecue rub flavors and putting them all on the brine well granulated garlic some black pepper now because we're poaching this you can use whole peppercorns the black pepper is super important coriander because again it sort of helps add that next layer of deep richness to the brine so one or two cloves and allspice I add a little cider vinegar to this and of course a couple of guajillo peppers you really like a little heat and you like a little love you can throw a little edge the last thing and probably the most important ingredient is of course the water and you're just gonna whisk it slowly as you add in the water it'll help dissolve some of the salt and sugars then we're gonna take this over the stove we're gonna bring it to a boil just to get all of the guajillo chilies out all that flavor out of the coriander all those oils from the spices are gonna come up bring it to a boil then we're gonna start marinating our meat now bringing it to a boil is very important because that's what marries all the ingredients together turn it off and let it cool all the way once your brine is cool that's when you're gonna add your meat to the brine you can use chicken in this case we've got a beautiful turkey breast right here that we're gonna put right in this brine you want to make sure it's completely submerged you have a pan large enough for it but this turkey breast is rather large so we're gonna go to about 4 to 5 hours in this brine if we've got a small single pork chop you want to do one to two hours so if you put something in a brine for two to three hours and it's too salty for you pull back your brine it's really important just to keep track and find out what you like this baby's ready to smoke at home you're gonna cook in an oven here at Hill Country we're very lucky because we have big giant smokers and we're actually gonna smoke this turkey for about three to four hours and she's gonna come out all nice and juicy let's go see what the finished product looks like we have a nice moist turkey that's been smoked oh yeah that turkey is juicy it's really amazing no one flavor comes through just that earthiness it really does taste like I'm sitting under a Texas Post Oak Tree that's how you make super juicy moist turkey yep that's the only brine you'll ever need
