you how to make sweet potato casserole better than ruth chris right at home but before we do that please take a quick second to subscribe to the channel make sure you hit that bell to enable notifications as well alright guys meet me in the kitchen let's make it happen this recipe is common around the holidays like thanksgiving and christmas maybe even easter which is coming up soon but it's also served at a lot of steak houses like ruth chris where it's super popular and soon it'll be a staple in your weekly rotation first things first we'll go ahead and clean up these sweet potatoes as you know when you get potatoes from the store they tend to be pretty dirty so we want to rinse them nicely once they're rinsed off and all the dirt is removed you want to take some paper towels and really scrub them to make sure you get all of that stuff off of there we're going to pop these in the oven and bake them today because roasted sweet potatoes retain a lot of the natural sugar that you lose when you boil potatoes so that's what we're gonna do today we're gonna preheat the oven to 400 degrees poke some holes into the sweet potatoes and then place them on an aluminum foil lined baking sheet and pop them in the oven for about an hour to an hour and 15 minutes really until their fork tender is what you're looking for we're gonna puncture them with a knife like you see right here that's gonna allow some steam to escape from the potatoes that way we don't have any accidents or explosions in your oven or microwave this can be done in the microwave a little bit quicker but i like the slower process in the oven because you get a little bit more caramelization and flavor build up in my opinion so once we have our sweet potatoes punctured and on the baking sheet we're gonna pop them in the oven for about an hour to an hour and 15 until they're nice and tender like you see right here as you can see the knife is sliding in and out with very little resistance these are perfectly tender and ready to make some sweet potato casserole so first things first we gotta let these bad boys cool off so that they're safe to handle i'm gonna slice them down the middle like so pop them open and let some steam escape so that they can begin the cooling process that way they're safe to handle trust me guys take it from somebody that's burned their hands one too many times you definitely want to let them cool off a bit before you start working on them quick reminder guys that all the specific measurements and ingredients can be found in the description box below so don't forget to check that out after your potatoes are done with time out and they've cooled off it usually takes about five to ten minutes we're gonna go ahead and get started on our casserole for that you're gonna need white sugar brown sugar some flour vanilla extract melted butter and a couple eggs you're also gonna need a pinch of salt and we're gonna add a lemon to the party we're gonna use a little bit of lemon zest to really brighten things up a bit trust me on that one next we're gonna break out a mixing bowl and start to dump our sweet potatoes into the mixing bowl that way we can mash it up and start to make our casserole i like to start with a spoon or a rubber spatula to begin the process of mashing the sweet potatoes and then eventually we'll switch to the hand blender next we're going to add in that melted butter followed by one cup of white sugar and one cup of brown sugar as always guys you can taste as you go and adjust the flavor to your preference if that's too sweet you can scale back on the sugar or if it's not sweet enough and you're a savage you can add a little bit more we're gonna go ahead and fold all of that into the sweet potatoes and then begin seasoning to taste here in just a moment next we're going in with that grated lemon zest that's really going to cut through some of the sweetness and kind of tie everything together i really enjoy adding that also adding a pinch of salt to wake everything up followed by some ground cinnamon we're also going to use a pinch of nutmeg guys remember that a little bit goes a long way with the nutmeg though so don't get too crazy or heavy-handed on that one just a pinch is all that it needs once we've got those ingredients added i'm going in with a quarter teaspoon of butter extract and then we're going to add in our vanilla extract right after that the butter extract just adds a little bit of richness to the party that i enjoy i kind of learned that when i was making my sweet potato pie recipe and move that over to the casserole as well because why the hell not there's that vanilla extract we're gonna use our rubber spatula to scrape everything off the bottom and the sides make sure we fold all those ingredients together and then break out the hand mixer to blend everything until it's nice and smooth this recipe is fantastic guys i can't wait for you to try it it's one of my favorite side dishes at ruth chris and i always make it for thanksgiving as well let me know in the comments what you guys think also share with me what you're planning to make for easter this year throw that in the comments as well i'm looking for some more inspiration it's important to taste as you go and adjust the flavor to your preference and anything that has raw eggs in it you want to make sure that you taste it prior to adding the eggs so i'm going to get in there with a tasting spoon and see how we're doing make any adjustments as needed then we're going to go ahead and add in the all-purpose flour that's going to thicken things up a little bit and give it that casserole consistency that we're looking for make sure you use that rubber spatula occasionally to scrape the sides in the bottom of your mixing bowl that way you ensure all the ingredients are evenly distributed and well combined speaking of all the ingredients we got one last thing that we need to add we're going to go ahead and add in those two beaten eggs that's gonna thicken things up even more give us a nice casserole consistency mix that in thoroughly and then we're gonna throw that into our baking dish preheat the oven to 400 degrees and then we're gonna load up our favorite casserole dish with all that deliciousness from the mixing bowl and the last step my friends is to go ahead and make this pecan topping make sure you scrape out all that goodness out of the mixing bowl no flavor left behind smooth it out and make room for the topping that we're gonna make here in just a second also guys if you have a nut allergy or you don't like pecans then you can just skip that step and use marshmallows or just don't top it with anything it'll still be delicious for the rest of us though we're gonna break out a mixing bowl with some crushed pecans add the melted butter brown sugar all purpose flour we're basically making like a pecan crumble that's gonna make a fantastic topping for this sweet potato casserole it's gonna add some texture and a little bit more sweetness as if we didn't have enough of that i didn't use the right size mixing bowl it's gonna add it to a larger mixing bowl don't be a fool like me make sure you got some room to mix in there i'm gonna scrape all the goodness out of that smaller one into the larger one and then mix everything together there we go you can do this with your hands as well or a rubber spatula works great once you have everything evenly distributed we're gonna go ahead and top our casserole with that this is about what you're looking for a nice coarse consistency like so stuff is delicious too guys if you want to give it a taste i wouldn't judge you next we're going to line a baking sheet with aluminum foil set our casserole dish on that baking sheet that way if there's anything that spills over we catch it it doesn't end up burning up at the bottom of our oven go ahead and top the entire casserole dish with that pecan topping pop that in a 400 degree oven for about 20 to 25 minutes or until the top is set and nice and brown this is gonna be so good guys i can't wait for you guys to try it
