hey everyone is chef keone and in this video we're going to make squid luau one of the classic Hawaiian luau dishes for starters we're going to get all of our taro leaves prepped and you know it's Terrell user also known as luau leaves in the produce department we sell fresh ones and you could get frozen in the in the in the grocery department if you want but the fresh ones here we're going to take all the tender leaf pieces and we're going to cut them up so that the air they break down easier when we cook them one of things about luau leaves fresh ones specifically you really have to cook them long enough because you want to break down what is known as calcium oxalate and calcium oxalate if you eat it raw you know it is very itchy and scratchy and it's a very uncomfortable experience for the person that eats so Lu Ali's Lau Lau rules do all of those items you really got to cook them long enough to break down the calcium oxalate now I'm picking the stems and I'm peeling them to get all a really heavy fibrous parts off and then I'm going to go ahead and cut them up small so that that can also go into rx pretty well [Music] I've got some water that's ready to blanch and first I'm putting in the sliced octopus that we're going to be using and then I'm adding the luau leaves now we're using sliced octopus that you can get in our seafood department in the poky Department where it's precooked and sliced you can use your own octopus but the reason why I'm adding it in with the Terrell use is because it's it's absolutely edible at this point but I want it to be very tender so the extra time that it's going to cook with the lollies will tenderize the octopus and again we call this squid luau but really what we're using is octopus now we've cooked the the octopus and the luau leaves until they've been tender now I put a pot with some butter we're going to add the cooked leaves and octopus into the pot and cook it with the butter next comes in coconut milk and we're going to get it all incorporated and combined and we're going to bring it to a simmer once we get it up to a nice simmer we're going to go ahead and cover the pot and we're just going to let it cook so that it King all the flavors can meld together and it can get even more tender this is what the lobster looks like after it's been cooking for a while it does change color the green sort of fades but now the coconut milk and the octopus flavor is all coming together I'm going to add a little bit of sugar now and that sugar really sort of accentuates the the coconut milk and it gives it a little bit of sweetness but it still has a very savory flavor so here we have our squid luau and remember while it's called squid luau it's really ought to put that you're putting in here now our recipe use the product that we get from the poky department of pre-sliced product that's cooked if you're going to use a fresh octopus you just want to make sure you tenderize it and cook it long enough so it's very very very easy to eat and as it pertains to the luau leaves well if you can't get new leaves you can use you know spinach although the result is not exactly the same remember when you're using the fresh blue values like we did here if you're using very tender ones like the ones I used you're going to cook at least 45 to 50 minutes because you don't want that calcium oxalate to remain in the product and then make your throat a cheat as you cook it long it dissolves into the cooking method and so it makes it edible if you have really thick heavy pieces mature pieces you're going to want to go at least an hour and a half or longer it's a wonderful dish it's a great accompaniment to the traditional luau it's nice and rich with the coconut milk it's a little bit sweet because of the sugar but really rounds out some of the rich fatty kalua pork and it's you know the lomi salmon and and this quite have some hottie pulque so i'm gonna go in for that taste and just don't forget for more recipes like this you can visit us at food and calm mmm [Music]
