hi everybody i'm rachel from rachel cooks with love today i'm going to be making a delicious sopa de conchitas con carne molina that's a soup using shells and ground beef now this is an inexpensive dish easy to make and most children love it so let's get started so i've got my heat set on medium and i'm going to start out by browning my meat i've got one pound of ground beef and i'm just gonna brown it until it loses its pink color now as you can see all the pink is gone so i'm gonna move the meat over here to the side and i'm going to go ahead and remove all this grease i like to use the 80 20 because of the delicious taste but i don't like the grease so i have removed all of the grease as you can see and it's at this time that i'm going to drop in my onions like that and i'm also going to put in my carrots and my celery i'm going to bring all these in together like this so that they can release their delicious flavor so while i'm sauteing my onions my carrots and my celery i'm gonna grind my spices i've got two large garlic cloves half a teaspoon of peppercorn and half a teaspoon of cumin now you can use powdered garlic and you can use ground cumin and regular pepper if you don't want to go this route so i'm just going to go ahead and grind these up so so my onions and my celery and my carrots have released some of their good flavor now i'm gonna add my spices right here oh and it already smells wonderful in here look at that see now i've got 1 4 of green bell pepper also got a fourth of yellow so i'm going to go ahead and cut them in half just like this you can use red yellow or the green and i'm just going to go ahead and drop them in here like this so i'm going to let my peppers and the rest of the ingredients continue to release some of their flavor for about a minute before we go into the next ingredient just like that so now that they've done that i'm going to go ahead and add my tomatoes and i'm going to add my tomato paste i love to use tomato paste because it's got a sweet taste to it and it gives the dish a fantastic color so i like tomato paste and i'm gonna add my beef bouillon that's one tablespoon now all the ingredients that i'm using are going to be below in the description box so you'll know exactly what i'm using and how much so i'm just going to bring it in together like this and just let it continue sizzling down at the bottom a little bit so as you can see i brought the tomato paste together with everything and everything is releasing its flavor down at the bottom really good like that now i'm going to add my water and you want just enough water to cover everything just about an inch or so above like that see what a beautiful color it's got and that's from the tomato paste like that so i've got one potato right here that i had soaking in water and i'm just gonna add some pieces of potato like this now you can cut it into small cubes if you want my mom always just did it like this and this is the way i do it so i'm just gonna go ahead and cut up the whole potato like this and it's a medium sized potato i love the potato in there my mom always added some potatoes in there and i just think it's perfect in this dish but you can leave the potato out if you want i'm gonna taste it and i think it needs a little bit of salt with the beef bouillon so i'm going to add a little bit of salt you taste it and you add as much salt as you think that it needs for you just stir it around like this and i'm going to go ahead and replace the lid and i'm going to let it come up to a light boil and i'm going to let it cook until my potatoes are nice and tender and i'm going to get started on my shelves so i've got a medium skillet like this i'm going to go ahead and add a little bit of oil into my skillet just like that and i'm going to put in my shells and i'm going to continue to stir them around like this until they get real nice and toasty because you don't want them to burn and i do want them to get to a real nice golden brown [Music] now as you can see the shells are getting toasty see how they're starting to toast like this now the reason i like to toast them is because if you don't and you just put the shells directly into the soup it'll be very doughy but when you toast them like this the shells will stay firmer yet they'll have that delicious taste that we're looking for now as you can see my shelves are real nice golden brown you don't want to get them real dark there's no reason to get them super dark just like that is good so i'm going to go ahead and add them into my soup right here just like that see this would be a good time for you to taste it and adjust your salt and see if you think that he needs more so now that i just added the shells i'm going to put in a little bit of cilantro now this is optional if you don't want to add cilantro you don't have to but the cilantro just gives it that fantastic taste so i'll just give it a quick chop like this just like that and i add it in here now bring it in together like that just like that and i'm going to go ahead and replace the lid so our conchitas are ready i'm going to remove it off the heat bring it right here so now we'll serve oh my so i'm gonna add a little cilantro just like that all night oh my goodness this is delicious this conchitas or shells with ground beef is is delicious and this is good any time of
