How to make Scottish Shortbread Cookies

hi everybody debbie reynolds here with rocky mountain lodge i'm glad you all can make it today we are continuing our tea party theme this month and today we are going to be making scottish shortbread cookies cookies are a must that you have to have at every tea party if i don't have these scottish shortbread cookies that i make fresh when i have tea parties when i have a little grandkids over i'll actually buy girl scout shortbread cookies and keep them on hand throughout the year and those are the ones that i'll have with tea parties impromptu tea parties with my little granddaughters but i really love these shortbread cookies they are my absolute favorite tea party cookie and they're really easy to make they only have four ingredients you can find this recipe in my cookbook rocky i'll show you about making these shortbread cookies just like i said it only takes four ingredients super easy we need two sticks of butter one cup of butter which i'm going to dump into my food processor or sorry my mixer a quarter cup plus two tablespoons of powdered sugar or otherwise known as confectioners sugar that will go in there and then one quarter cup of bread light brown sugar and i'm going to give you a little tip today on how to keep your brown sugar soft there's a number of different ways you can do this but what i like to do is i stick a piece of bread in my brown sugar to keep it soft this is actually just an old a leftover hot dog bun so you can use any type of bread hot dog buns hamburger buns anything that you might have so that one's gotten hard so what happens is the moisture from your bread will go into your brown sugar and your bread will get hard and your brown sugar will stay soft so you just take your piece of bread i'm going to get a quarter cup of brown sugar first packed brown sugar a quarter cup of light brown sugar i'm going to dump that in there and then just take a heel this is just a heel from a piece some a loaf of bread that i have i'll plop that in there and now my brown sugar will stay soft easy tip all right so okay so now we have um our brown sugar our butter and our powdered sugar in a mixing bowl and i am just going to mix those until they are light and fluffy and i have my oven preheated to 325 degrees so these take a little bit longer to cook but you'll see why because they're going to make big cookies they're not going to be just little bite size cookies although you could do those too if you wanted but this is what makes me turn out so cute i'm sure you saw the picture on my facebook page and on my website so i'm mixing up this butter and the two sugars so they are light and fluffy and my business phone is ringing sorry about that i forgot to silence it we'll just let that go to voicemail and i'll get that after this video is over so we just put this butter and sugars so they are light and fluffy and i'll show you what those look like [Music] okay so you can kind of see that what that looks like and we're just going to bring that all to the center and then i'm going to bring in two cups of sifted flour which i have ready and so i think i've mentioned to you before in some of my videos about the way you measure your flour you don't take your scoop and dip it in your flour you want to just get another another scoop or a spoon and you want to spoon that into your measuring cup and then level it off it keeps your flour more light and airy and then you won't have it all compact and more dense otherwise you end up with a little bit more flour and whatever you're using can become a little more dense and so now i am just going to slowly tap in my flour here if i don't slowly tap it in it's just going to make a big poof and a big mess and it'll go all over the place and even though i'm a messy cook i try not to be terribly messy some of it's unavoidable all right so i'm just gonna let that flower get incorporated two cups of flour so pretty easy two sticks of butter one cup of butter softened you want that at room temperature so i usually just take it out first thing in the morning or if i'm going to make them in the afternoon or i'll just take them out the night before and leave them on the counter and all right so uh these cookies are pretty well mixed up together so now i'm just going to scrape all of these off and i actually have some in the oven right now so i can show you what we do with them when we take them out of the oven because there's another step that we'll have to do after they come out of the oven and these cookies are just so buttery and tender this dough is really tender they're really good really easy to make and they make such a pretty design i'm going to show you how to make this really pretty design you'll be so impressed at how easy it is and you can make this and everybody will be so impressed with you all right so now our dough just looks like this like i said just four ingredients super easy and so i'm just going to bring this all into a ball and now there's a couple of ways you can do this you can either roll this out and or you can either make two balls of dough out of this and make two rounds or discs of cookies or you can make them just a little bit smaller and make three discs which is what i'm going to do today if you want them a little bit bigger just make two discs if you want them a little bit smaller make three discs when i've had to feed a lot of people like a couple hundred people i'll actually make four discs and i'll make them pretty small so that everybody can sample lots of different types of um food that we have at our tea party all right and so i'm just going to get some flour here on my island and i'm going to bring this into a ball and bring it out here onto my island so we're just going to it doesn't look like it's a very lot about a dough and it's not but it's going to make a lot of cookies you'll be surprised you're going to get all of that out of here because we don't want to waste any of that all right so now that i've got this into a ball just going to pat it down just a little bit and i'm going to divide this into three pieces and if you're going to make them a little bigger just cut it in half and make two but i'm just going to eyeball this and cut it into thirds so as about as best you can you don't have to be perfect there's really no need to be perfect and then each one of these balls i'm going to roll into another ball and then i'm going to roll these out put a little flour on my table here and i'm going to try to just kind of scrunch it up here to keep it into a circle sprinkle a little more flour on there and then we're going to roll this out to about 3 8 of an inch thick so we want these pretty thick just under a half inch thick and if they tend to lose their shape no big deal or if they get little cracks in the edges just kind of push them back together that's how i keep mine into a nice circle i just kind of keep going around and so let's see here so i have this one it looks like it's just about into let's put then just set them onto a cookie sheet all right that's lined with parchment paper let's see there we go there's one so i'm going to do that with my other two doughs here let's see i've got cookies in the oven trying to watch that be right back i'm going to go check those other cookies all right they are just about done so what i'm going to do instead is let's just pretend that i have rolled out all three of these cookies into round discs like this one okay so then what we're going to do is i am actually gonna make sure you guys can see okay i think you guys can see my cookie disc right here let me turn this around y'all can see that right there i'm gonna show you what i do here with these discs to make a really pretty fancy design and so we're just going to take a fork and we're just going to make little crisscrosses on here kind of like what you would do with a peanut butter cookie so we're just going to go all around the edges like this and make crisscrosses can y'all see that okay pretty easy people will never know that you guys have made these from scratch and they'll think you just went down to a local bakery and bought them because they'll be so pretty so there we have our little design there and then because we're gonna cut these into different pieces we're gonna make another pattern on here we're just gonna take our fork and we're just gonna dip it in here and just tap it all the way across so now we've got quarters and then we're going to go across again so now we have eights see how pretty those look aren't those cute super easy and now they're ready to go in the oven so once we get our other two done they are ready to go into the oven at 325 degrees for about 23 minutes until the edges are light brown and then there's another step that you have to do right after they come out of the oven so i'm going to go and grab my finished cookies and show you what we're going to do with those all right so you can see what these cookies look like that once they're all done and out of the oven you can see the crisscross patterns and the little dots we made with the forks and so what we're going to do now while they're hot you got to do this while they're warm or these cookies because they're so tender and so delicate they will break if you don't do this while they're warm you're just going to cut right in between the little fork marks that you've made okay so let me see if i can pick this up and show you so you can see these little fork lines we're just going to go right in between all of these lines and cut while they're nice and warm and tender and we're going to go all the way through all of them all right and now we end up with eight cookies per circle and you can see what they look like how nice and flaky let me see if i can get a i guess i'm yeah you can see how nice and flaky they are and they have those really pretty tine marks on them and those crisscrosses and that is how easy it is to make scottish shortbread cookies we've only been on here for 13 minutes and we have made 24 cookies in 13 minutes super fast super easy and just delicious they'll melt in your mouth and they go perfect with every tea party you can even put these in the freezer and they will keep for months in their freezer and which is what i'm going to do since i'm going to have 48 cookies right
