hello this is Keith cooks I'm Keef and today I'm going to show you how to make another picnic staple sausage rolls ingredients puff pastry which you can buy or you can make your own and the recipe the link to the recipe should be on the screen there and sausage meat that's all except I'm going to make my own sausage meat you can get your favorite sausages and split them open and get the meat out or you can actually buy frozen sausage meat in some supermarkets but I prefer to know exactly what's in mine don't bit weird like that so I've got some minced pork shoulder and I've got some bread crumbs that's 20% bread crumbs basically and a teaspoon of my sausage spice mix which is equal parts salt equal parts ground black pepper equal parts celery salt and two parts time so to make my sausage meat first of all I'm just going to mix all mix these things together so there's some bread crumbs some seasoning and just squeeze it and get all nicely incorporated and it doesn't matter about the losing the granular texture of the meat if if we end up with a something that's more like a paste that's that's a good thing now split my sausage meat into three three parts rolling it out into sausages kinda so I want each one to be about thirty centimeters long that's powerful I'm doing mini sausage rolls which will be about five centimeters long that's a couple of inches so we'll get some on - we'll get six out of each sausage so I've got the the long rolls of sausage meat on a baking sheet with a bit of greaseproof paper and I put these in the fridge till I need them cuz now I need to roll out the pastry so plenty of flour on the worktop and we'll just roll this we're going to measure it because it needs to be thirty centimetres wide foot which is and we don't need to go wider than that because that'll just be a waste but we do need to make it longer lovely big sheet of pastry and just measure it again okay I'll just straighten up the edges the old ruler so now we we just place one of our long sausages on the pastry and roll it and when when this edge reaches the rest of the sheet of pastry we'll just moisten that in some cold water and cut it off with the ruler I'm just roll it to finish press it down to make his dick and then I'm just going to measure we'll need to cut the individual sausage rolls and there we are our three very long sausage rolls now need to do is cut them into bits no usually easier to do this with a ruler round and a knife what will happen is the ends get squashed so I like to just um squash them so we get nice round sausage rolls now I've got the oven preheating to 210 degrees Celsius and I've got my sausage rolls with the seam side on the bottom and all we need to do now is brush them with beaten egg and also I like to do a couple of slashes on the surface it just makes it look prettier because when the puff pastry puffs up and kind of splits open and it's just a thing so they'll go in the oven for 15 to 20 minutes and I love it some of our sausage rolls are actually made eighteen they look and smell fantastic and now I'm gonna just do a little bit of quality assurance go little sausage roll mmm oh that pastry with melty crispy buttery delicious
