hi I'm Rachel from Rachel's guest:you trip pretty cakes and in this super quick tutorial I'm going to show you how to make royal icing with an egg okay so I've got one egg here this egg is unpasteurized okay to pasteurize an egg it is subjected to some load ten per atures which would kill any bacteria like Salmonella which is generally carried on the outside shell of the egg okay this is an unpasteurized egg if you sauce your eggs from a good organic or free-range source they're very highly unlikely to contain any Salmonella okay so your egg white is then going to be safe so if you do want to be super super safe give your egg a nice wash under a warm tap and that's going to clean off the shell which is the area that carries the majority of the bacteria I'm going to crack this egg on the bowl and we're going to pop out the egg white here so be really really careful hmm she says boo boo boo boo boo boo boo there we go there's our egg white so one egg white we're going to need for this and two one egg white we're going to use about 500 grams of plain icing sugar okay so I'm just going to pop that in the bin okay back to our nice clean bowl we've got our whiskers so I'm going to pop the egg in the bowl now this is a medium sized egg white okay you might find that your icing becomes quite stiff if you use the 500 grams of icing sugar if it does you can just add either some lemon juice or a little drop of water we're going to try and achieve a nice regular consistency okay so I have my icing sugar here so some people like to beat the egg white first before they add the icing sugar I don't really bother that's the truth so I'm going to pop some icing sugar into the bowl here not all of it but most of it I'm then going to in this cloud of icing sugar II dust take my mixes and just start to bring this together this is the lowest setting of my mixes still a bit of cloud of icing sugar so I'm just going to slowly slowly beat until I've incorporated it I also didn't bother to sift my icing sugar maybe that's me being lazy but to be honest the beating it does tend to get rid of any lumps so just bringing all of that together you can hear now where you can see in the bowl it's just coming together I'm going to turn up the beaters want to make sure I get rid of any lumps and stop okay I'm just going to grab my spatula and scrape around the edge just to make sure that I've taken all that icing off the bottom of the bowl I'm going to give it another little mix make sure all the lumps are gone is giving it a really nice beating okay now actually I didn't need to add that last little bit of icing sugar you can see here that is a really nice consistency of royal icing there if you wanted to use it for flooding cookies for example you would then add just some little drops of water into your icing sugar or if you needed to use it for some piping you would need it to be a little stiffer okay so that's how to make royal icing using an egg white if you didn't want to use an actual egg you can buy egg whites already from actually pasteurized eggs in little cartons at the supermarket already cracked for you so that's how to make royal icing with an egg you
