[Music] hi I'm Daniel grid sir from Serious Eats and I want to talk to you today about the best way to make perfect polenta the real secret is to first get your ratio of water to pull in TOR right and most recipes don't I prefer to use about 5 times as much water to cornmeal sometimes even a little bit more if I find that it still hasn't fully cooked through the other thing everyone says is you sprinkle the polenta in and it's boiling but you don't have to you can just add it cold water like I just did you have the forethought you can soak it overnight in the water that you're going to cook it in and it's going to take much less time when it's finally in the pot most people say that the key to making perfect polenta is to stand and stir with a wooden spoon endlessly for an hour it's just not true as it thickens especially it's gonna stick and burn to the bottom so you do have to stir it and you really when you stir it want to scrape all around the pot so as the pointa cooks it's gonna start thickening up pretty quickly and you'll know it is in the right place when it almost starts to pull from the sides of the pan and when you scrape with your with your spatula you see it takes a while to flow back and close that gap if at any point you feel like you have some lumps in there all you need to do is take a whisk and just beat the hell out of it if your plant is basically done but if I taste it and I find that the corn grits there's still a little bit too firm like they they're not hydrated enough I can add more water it's it's gonna create some lumps for me but I can work those lumps out and I'm gonna use a whisk because I really need to incorporate it well so this is gonna end up being a 6 to 1 water to polenta ratio finish it with some olive oil fat adds a richness it makes it kind of shinier polenta's done [Music]
