good morning everybody welcome back to another video so as promised today my mother is going to be making something for us she is going to be making something called it is a type of pickles it's going to be her version of inspired by our good friend Aina Nissan's recipe so here we go Lotus root so it's a it's a it's like a fist-sized Lotus fruit that we got Okay so we've peeled the Lotus fruit I'm just gonna rinse it very quickly just to make sure it's clean okay there we go I'm gonna cut the Lotus fruit in half oh if you drop the Lotus root just wash it [Music] is also we've cut the Lotus through into like four pieces I know um okay so my mom's just chopping up the Lotus fruit into like maybe yeah like one to two centimeter thickness a quarter of an inch hi and just put it into a bowl like this so we got the recipe from Aina once again this is uh a tweaked version uh my mother decided to not use certain ingredients because she doesn't particularly care for certain ingredients but I'm pretty sure it's still going to turn out delicious okay now we're putting one tablespoon of vinegar into the water so we're gonna keep this set it to the side cutie Christian ity foreign one third of a big Daikon radish okay so just peel that icon radish you want to peel the outer layer like this is okay so you cut the daikon in half and then you cut the diet coke into quarters like this foreign [Music] [Music] we're gonna be using uh maybe like a little over half of the carrot my mom doesn't want too much carrot so I'm gonna peel this right now for her the peeling part is kind of um cumbersome so I'm gonna do this part [Music] just remember the Lotus fruit is really it was really hard tough so just be careful don't cut your fingers if you want more carrots in your Zuki you can so it's up to you we're going to be using one eggplant so this one we're just gonna rinse custom just to make sure it's uh clean okay yeah once again just use as much as you want it Nikki um [Music] [Music] [Music] foreign [Music] good stuff is [Music] okay so we got all the ingredients we got the eggplant cucumber carrots Ginger and daikon here oh and of course the Lotus fruit is here [Music] so maybe that's about maybe a tablespoon of salt more monkeys they massage it just for a little bit this is to get the excess water out of the vegetables um oh yeah okay okay we got a different plate also young so we have the five ingredients here in this pan and we're gonna bring this to a boil and simmer until the sugar is completely dissolved all right so I'm gonna squeeze out the excess water out of the vegetables so first let's do this okay so these are the vegetables you can see there's a lot of excess water so we're gonna dump this into here into a colander have a bowl over under the colander this this okay and then I'm gonna squeeze this squeeze the veggies squeeze the excess water of all the vegetables and then dump the vegetables into the sauce and just continue doing this with all the vegetables yeah look at that look at all the water coming up look at that so much water oh okay so those are all the vegetables in here and then we're gonna drain the lotus of excess water this one we don't squeeze we want to keep the texture so just make sure just kind of Shake It get rid of all the excess water okay and then dump it in with this recipe [Music] they're gonna bring this to a boil once again right milk [Music] hi okay so we're gonna set this to the side okay so we're bringing the sauce to a boil boil for about five to ten minutes okay and now we're putting some white sesame seeds um as much as you want I guess okay I'm going to turn it off foreign so now we're just letting the sauce and the ingredients cool down once they have cooled down put the ingredients the cooked vegetables into a Topper or a container and then pour the sauce over it and leave it in a refrigerator for one to two days and then Liz ready to be enjoyed no matter [Music] [Music] um okay okay so it's been two days guys let's see what it looks like this is the questions you get after today [Music] foreign oh yeah you can taste so many flavors in here you can taste the ginger the the vegetables are crispy one more time [Music] all right guys with that said thanks for watching hope you enjoyed my mother's recipe give it a try and let me know how it turns out bye [Music] [Music] thank you
