haven't watched the video yet, but when I saw your Twitter poll, and when I saw "architecture" I more thought about exterior architekture. Like Houses, skyscrapers.

Do you build walls, and then put levels to create storeys, or do you create the overall shape, and then cave it out?

As many, probably, I've tried recreating my own house in blender and went with the "cave it out" approach. That way, it all kept being a single object. That was probably not the best idea. I had massive struggles with topology, and building rooms and doorways was quite the hassle.
