Today on The Stay At Home Chef I'm showing you how to make Deliciously Creamy Carrot Soup This carrot soup is one of my favorite soups of all time. It is so flavorful, so delicious, and who'd have ever thought you'd get all of that from a carrot soup? You are going to love this recipe! To start you'll want to roughly chop up 2 shallots Dice 1 white onion and then roughly chop about 8 carrots and I like to peel mine first Once you have all of your ingredients ready to go we're ready to head on over to the stove and make some soup Melt 1/4 cup of salted butter in a pan over medium high heat Once that's all melted we're going to add in our shallots and white onion and let those saute for about 5 minutes You want the onions to be soft and start turning translucent before you proceed with this recipe Season the onions with 1/2 teaspoon of salt and add in 8 cloves of minced garlic so that we can get some bold garlic flavor and then the most important ingredient 2 teaspoons of Thai red curry paste And we're going to let this cook until fragrant, about 1 minute That Thai red curry paste is really what makes this dish You can find it in pretty much any grocery store Look for it in a little tiny jar near the Asian ingredients Then we're going to add in all of our carrots And then I'll pour in 6 cups of vegetable broth and then bring this to a boil Now you can also use chicken stock but I really hesitate to add any meaty elements to this carrot soup dish I want to keep it all vegetable based so I highly recommend using a vegetable broth Once it comes to a boil you want to reduce the heat to medium low and let it simmer for about 20 minutes until the carrots are tender Now once the carrots are tender we want to puree our soup You can transfer this all to a blender and puree it or, much more convenient, just use an immersion blender You just get the immersion blender in there and puree until smooth Once that is all pureed, pour in 1 cup of heavy cream because I promised a creamy soup and we'll stir this in Now when you make a broth based soup, the amount of salt that you add will depend on how much sodium was already in your broth So now it's time to give it a taste Take a clean spoon and dip it in Then of course cool it off a bit......blow Then we'll give it a taste Just a little more salt I'm just going to add in about another 1/2 teaspoon of salt And stir this in and then we are ready to eat. I'm just going to ladle up some of my soup into bowls You want to serve this up hot If you want to add a little bit of color, you can garnish it with a little bit of parsley or dill or you can add in a little lump of sour cream too That's really pretty!
