[Music] what's up guys welcome back to central city department i'm paying master james cruz and at 46 degrees this is the coldest video i've shot so far to date but it also happens to be the warmest day of this week so i know a lot of you guys out there are freezing and this is probably tropical weather for you guys but we're having to deal with it but look this week i'm actually doing something that my buddies everybody at kendrick bbq showed me and he posted on instagram a few weeks back i was like man i got to try this corn ribs it would be a great alternative to grilling and smoking meat because we're about to hit lit in fact lead starts today so i'm gonna show you guys how to do this i mean hopefully i can replicate what kendrick did i'm gonna do my best at it we're gonna have some fun doing it it's very delicious trust me it is like street corn on the stick let me glove up but before i do you guys hit that subscribe button down below this guy would appreciate it be right back first thing you want to do let's get these hormone cops cleaned up make sure you have a very sharp knife you do have to cut through the cob cylinder we're going to peel the husk off you want to get all of that silk off there as well unless you plan on flossing with it after but look let's get it all clean let's kind of rub it around here get all cleaned up i'm gonna get these cleaned up [Music] okay so now that we've got the husk in the silver loop put a square at the end just so you have a flat surface when you go to cut through the top of it square this up as well slide it over let's do this one next thing you want to do is this is where the sharp knife comes in you actually want to cut right through the top of it just trying to cut it like this it's really dangerous you can slip cut your fingers you're going to smash the other side of your corn you don't do that start here with a flat surface start there and just work your way through just like this okay plus it's important out there next we're gonna cut through the top like this let's get that out of the way let's get this one everywhere okay all right let's cut these there we go let's clean the board up now we'll show you how i'm going to season these guys up okay so now that we have them all cut up into ribs obviously see the shape of them like the round shape looks like a rib well we want to season them now look at these guys over here and pan up so you want to lay these off straight down in the pan lay it flat just like this okay one thing i'm gonna season these guys with i'm gonna season them with enchilada from twang in fact we've got some great twang products here if you look at it we got the michelada we've got the hatch chili we've got the chili lime so i'm going to put a base let's call it a slatter just like i do mustang ribs a little michelada with top let me get him in close right here you could use your favorite bloody mary mix i'm going michelada because this stuff tastes awesome so let's get these rubbed up all over there roll them around through it i want you guys to see that right there get them completely coated every side of a coating so we have all sides coated now back sides front top so like i'm giving instructions on how to dance next i'm going to go with the chili lime right here uh twain not going the hashtag right now i'm gonna show you what i'm doing with that later on made a chili lime creme so we're going to the chili lime and now this is our rub we're gonna light seasoning over the top flipping let's say flip on my shield i'm talking about going from that side to this it's only season that i want to season the back half of that side as well again light coating all the way down [Music] that's it i mean think about what you just we just did cut the corn pour some enchilada all over it dust it with some chili lime i've got the gateway back there fired up ready to go let's get these guys on the grill see there in a second all we're gonna do is just simply put them right here on the grill nothing crazy switch hands there we go get a little sizzle going so what i have here is some b and b oak lump i didn't put any wood chunks in here because corn is very very moist and all that's going to do it might over smoke it a little bit get a little dark i'm getting plenty grill and smoke flavor from that uh b and b oklahoma let's let these guys go i'm gonna come back and check in about 10 minutes all right guys i let them go about 15 minutes and they're almost done about maybe five minutes away from being done if you notice they're starting to take the cut the shape of a rib look at these things let's flip them over this way let them go five minutes we'll pull them off all right guys things are done the kernels are soft still juice let's take them off they go to the board we're going to dress them up real quick guys that's pretty easy wasn't it 20 minutes on the gateway at 300 open some b and b heathrow love i'll show you how we're going to dress them up so first thing you want to do is let's line them all up i want to put them in an even line just so i get even coverage all the way around i've got some cotija right here so that cream i was telling you guys about it's super easy it was one cup of heavy cream two tablespoons of buttermilk then you let it sit on the counter overnight for 24 hours room temperature covered the next day it's gonna firm up a little bit i added the juice in one uh fresh lime and then i added one tablespoon of this hash chili seasoning mix it all together now let me tell you so that is the perfect like top of the top it's a great uh hatch chili lime creme so the first thing i'm going to do i'm going to go over the top of these just like this a nice little cover then we'll go back over with a little bit more of that chili lime remember good light on whip this guy back up just a little bit over top add a nice little color to it that's great after that some cotija sprinkle all the way over the top and lastly some freshly chopped cilantro just a little bit over the top can't beat this this is so good if you guys were making these things look fast you just stack these guys up like they're set the ribs guys check that out right there things look great don't they kind of make me wish you a secret to my already i'm gonna try one up look at the big bad boy right here over there for your competition guys look at that bite through man this is a great addition to your next taco tuesday that thing tasted awesome it was like eating street corn on a stick i mean you had your you had a good juicy corn right there nice mild smoke flavor from the gateway those twang products they really actually pack a punch i gave you the recipe for that uh crema that's easy to do that actually balances everything out you got the tanginess from that chili lime you can't beat this first of all who doesn't like corn and on top of that you dressed it up you made it look like a rib come on people i'm
