- Chicken cacciatore
is all the comfort. Now, there are so many versions of this beautiful
hunter-style, Italian dish, and mine is easy and
absolutely delicious. Braised chicken with
mushrooms and peppers in an herby tomato and wine
broth, a family favorite. I'm Suzy with
themediterraneandish.com. Let's get this party started. (upbeat music) So, you guys, when
I season my chicken, I just love to make sure that every bit of it
is well-seasoned, and so I like to
lift up the skin and make sure we get underneath
with some of the seasoning. We're gonna go ahead
and season the chicken with some kosher salt
and black pepper. So, we're gonna just
head over to the stove and cook this party
in one big pan. The first thing we're gonna do is grab a nice big
braiser or pan like this. You need a lid later on, so just make sure you
have one of those. We're gonna turn the heat
to like medium-high-ish, and we're gonna
heat up a little bit of good extra virgin olive oil. We're gonna warm up the
olive oil until shimmering, but not smoking. I'm gonna start with the
skin side down first. (oil sizzling) Sizzle! Yes. Just looking for some
golden-brown skins here. We have brought everything
to the party, you guys. We're gonna hit up the
pan with our onions, bell peppers, two colors. We've got some
celery, mushrooms, and then we've got some garlic. Kosher salt, black pepper,
and a little bit of oregano, about a teaspoon
more if you like it. Some fresh thyme, three
sprigs or so, fresh parsley, and a pinch of
red pepper flakes. Oh yeah. A little bit of heat
don't kill anybody. Toss 'em up. A good cup of red wine
going right in here, and we're gonna let it
simmer for a few minutes for the wine to reduce
by about a half or so. An amazing base with
tons of flavor going on right here for the sauce, and I'm hitting it up with
some crushed tomatoes, from a can, obviously, and
we're gonna let this simmer for a good five to
seven minutes or so. Now, we add our chicken back. So we simply nestle
them right in here. All right, we're gonna turn
this baby to medium-low. We're gonna cover our pan
and let our chicken simmer for, oh, 25 to 30 minutes,
or until it's perfectly done. Oh, so good. Oh my gosh. Dinner is ready, you guys. This looks amazing. Just a couple of final
touches before we serve it. One hearty, satisfying chicken
dish right here, you guys. I'm going to finish it up
with a little bit of parsley and some more heat. And if you're still
