Did you know that it is biltong day coming up? Me neither, but it is and we must celebrate it because why? Biltong is the food of our nation, and our peoples. that is why today I'm going to show you how to make biltong, from scratch. you will need salt, black pepper, red wine vinegar, worcestershire sauce, spirit vinegar, corriandar seeds brown sugar, bicarbonate of soda, and finally your meat. A lovely silver side. I am cutting the silver side into 2.5cm slices. So this is great for all of you who live overseas and can't even have biltong. Shame pop your meat into a container and cover it with red wine vinegar and the worcestershire sauce set it aside for 30 minutes mix your coriander seeds and black pepper in a bowl, fragrant . And in another bowl mix your salt, sugar and bicarb. Take the meat out of it's juices, squeeze it, pop it into the spices and into the salt. Smoosh it in the salt. I've made it go to sleep inside the salt for 3 hours, shhhh, because this is part of the process, the journey of the biltong. Time to make our biltong box! You will need, a drill and drill bits. A fitting and a light bulb little fan, an aluminium tray, some netting. Here comes the bride.. I wish paper clips, dal sticks, and finally your box, mine's wooden. Drill holes in your box for breathability, pop in your sticks stick mesh over your holes so that the insects can't get in. Make your hole and pop in your light fixture This foil goodie will catch all the meat juices while the biltong is in the box. Back to the meat guys! I am taking my salty pieces and I am rinsing off the salt using vinegar. Roll it one more time in your spices. Pierce your meat with the paper clips and hang it in the box. pop on the light, and no peeking for 3 days. There's it, your biltong is ready! It is so easy, and so delicious.
