How to Make an Easy, Simple Dehydrated Meal: Curry Chicken

that's done [Applause] i've got a big canoe trip coming up we're gonna do about a four day trip 112 kilometers right across the province of nova scotia myself i'm responsible for two of the four suppers that we'll be having on this trip for myself and my paddling partner i've decided to make a curry chicken dish now we're doing all dehydrated meals for this trip and we want to be packed as light as possible i'll run you through the ingredients that i have a few basic steps and then we'll get started cooking two cans of mushroom pieces one can of lentils two cans of flaked chicken we're gonna use about two tablespoons of coconut oil we're gonna have a couple of teaspoons of garlic two cans of this vh red coconut curry sauce one sweet onion two red peppers about two cups of green beans these are just frozen green beans full cup of jasmine rice when it's served it's going to go with a slice of naan bread all of this together will give us about 750 calories per serving what i tried to achieve with this meal is to use as simple ingredients as i could i wanted to make one just super super simple plenty of calories and energy to get you through the day so let's get started knowing that this is a dehydrator recipe i'm going to try and cut these as small as i can because i don't want large pieces that i'm waiting for hours to dehydrate here's a great safety tip for when you're cutting yeah never never hold your food like this what you want to do is really curl your knuckles in so you're holding it like that and then your knife blade goes against those knuckles so you can't cut yourself like that see how i do that okay so there's my veggies the reason i'm using canned chicken instead of fresh is just that it dehydrates a little better it's got more preservatives in it which you know not something you want for every day but when you're talking about dehydrating backpacking meals or canoe trip meals that you're gonna be taking for long periods of time that need to last some extra salt and preservatives isn't really a bad thing first thing i'm gonna do is brown up the chicken i'd like to get it a little bit caramelized i'm hoping that'll help with the flavor so the nice thing about coconut oil is it's really really high in calories so it's a great alternative for cooking and if you want to like jam in some extra calories it's a really great product to use okay so as you can see the chicken's actually starting to get nice and crispy got a nice salty taste which is great for this kind of meal this is about ready and i'm going to set it aside and then i'm going to start sauteing up my vegetables so we've got red peppers in there and my sweet onion now oftentimes recipes call for you to saute your garlic and onions a common mistake people make with this is they put them both in the pan at the same time what ends up happening is that your garlic actually burns while you're cooking and it turns bitter what you're looking for is your onions to start turning translucent that's when you want to add in your garlic you only want to cook the garlic for a minute or two normally i always cook with nice fresh garlic but just for convenience sake this is what i'm using if you have a recipe that calls for a lot of garlic and you don't want to be there mashing up cloves the jarred garlic is pretty good alternative now work that garlic around so i'm just going to stir it back in now that i've got my garlic and onions and red peppers more or less sauteed and cooked up i'm just going to incorporate the rest of my vegetables so that would be my green beans my lentils and my mushrooms my next step i'm going to take my chicken which i've actually supplemented it with a couple extra cans of chicken i'm going to take this and work that in now that that's in i'm going to make a little hole in the middle start adding the rice i'm going to start mixing in my sauce next figured i would need two of these i may need to put a third we'll see how it goes put the second one in that's about the perfect level of sauce you don't want to make it too runny for something like this where you're putting it in a dehydrator i'm just going to put that down to a simmer throw a lid on it and let it simmer away for 10-15 minutes next step is dehydrating it all so that we can pack it on our backs without it going bad in our bags now i'm just gonna start laying out the food on the tray and you really don't want to crowd it otherwise it's going to take forever to dry okay so that's about all i'm going to fit take that off pop it in the dehydrator cover is on i've got my temperature set to 150 and i'm going to start with a 12 hour timer and before i go to bed i'd say 10 or 11 tonight i might you know crank it back up another couple of hours and there you have it that's completely dehydrated curry chicken that's done [Applause] got some stickier rigs [Applause] dehydrated food so get a little dollop scrape off a piece of nan bread that's your bite
