sausage I got the barbecue shoes all welcome to barbecue pit boys calm today we're cooking up a nacho supreme on the grill and it's real easy to do all right the grill set up for indirect heating and here we've got about three pounds of ground chuck and a pound of sausage because we're making a homemade chili sauce for these nachos all right you're gonna need a few ingredients like you're gonna need some jalapenos you're gonna need a couple cloves of garlic and here we have got our habanero pepper we've got a medium-sized onion there you're gonna need a couple cans of tomato paste here we've got some Worcestershire we've got some chili powder you got some prepared mustard you're gonna need a little bit of celery seed here we've got some cumin you're gonna need some salt and pepper you need a little bit of your favorite bottle of hot sauce a little bit of water you're gonna need some beer a little bit of oil for cooking the onions and garlic all right let's put this meat chili sauce together here now we're going to chop up some onion let chop up the peppers chop up the garlic and through the miracle of time they've been chopped now and a good-sized pan here you're gonna want to throw in a little bit of your cooking oil cuz we're gonna saute the onions and garlic just briefly you just want to soften them up a bit now if you've never had these nachos supreme or this chili meat sauce we're gonna do here you're missing something out of your life you got to check this out this chili sauce goes real good on dogs and burgers too today it's for the nacho supreme all right just warm them up a bit now I'm gonna throw about three pounds of ground chuck into this pan we're gonna continue to heat it up now you want to use a good ground beef like a ground chuck cuz you get plenty of flavor and here I've got about one pound of sausages there are natural casing links you can use bulk sausage if you want a lot of times you'll find it's a lot cheaper just buy it already in case we're just gonna take the meat out of these natural casing here now this meat sauce is going to take you at least an hour to cook down so give yourself plenty of time now if you want to use your own favorite chili sauce out of a can and go right ahead but you got to check this out oh yeah simple enough now to the pan we're going to add two six ounce cans of tomato paste we're going to add two tablespoons of Worcestershire sauce and here we've got some chili powder and we're going to put in about two tablespoons and here we've got a couple tablespoons of prepared mustard and here I've got some celery seed and you're going to want to use about one teaspoon and here I've got some ground cumin and you want to use about two teaspoons and a couple teaspoons of salt a couple teaspoons of fresh ground black peppercorn now you can adjust these quantities if you want you just check this one out first now here I've got some hot sauce and we're going to put in about a couple tablespoons full we're going to cut it with about a half a cup of water keep it mixing now we're not making no bland mass-produced sauce here we want with a little bit of kick now I'm gonna throw a little bit of habanero in there and about one chili pepper I knows they're optional of course but ya gotta have a little heat and now we're gonna add about 1 12 ounce bottle of beer who's your favorite beer oh yeah baby no you got to remember we're not frying this meat we're gonna be doing a slow simmer now like I said it's going to take at least an hour to cook down now why we're waiting for this meat chili sauce to cook down I'm gonna show you what you're gonna need for your toppings now here I've got some shredded cheese this is jack cheese it's also a blend of cheddar and Asadero cheese and you're gonna need some black olives and for dipping you're going to need some guacamole here we've got some salsa you're also going to need some avocados here we've got some plum tomatoes we've got some scallion or green onions you're going to need some jalapenos here we've got some cilantro you're going to need some refried beans refried from a can will do and you're gonna need some sour cream all right nothing left to do here but continue to cook this meat chili sauce down we're gonna chop up them veggies all right veggies have been chopped and now we're going to tend to this meat chili sauce and what we want to do here is we're going to start draining off the fat you're gonna be draining at least a cup of fat off of this cuz we want to make this meat sauce fairly dry because we're going to be putting it on these tortilla chips it's gonna take a while you just keep on labeling it off just like that keep cooking it down is move as much moisture as you can now it gives you an idea but it's not quite ready hey it smells good you're alright not another 20 minutes to go all right this meat chili sauce is done cooked it down now it's probably about an hour maybe an hour and 15 minutes we've removed most of the fat in the moisture take a look at that just the way we want now it's time to make a nacho supreme barbecue pit boys style now here I've got some corn chips this is a white corn chip it's a good quality chip none of inprove plate here we're going to put down about one layer of these corn chips and then we're going to put a bunch of this meat sauce right on top I think you're getting the idea where we're going with this now we're going to throw in a few dollops of these refried beans now we're gonna throw on some shredded cheese because these are nacho supreme pit boys style we're going to put on another layer of chips you're gonna throw on some more meat chili sauce oh yeah this ain't one of those fast food nacho supreme never enough meat chili sauce on your nacho supreme now this is why I wanted you to cook down this meat chili sauce real good get a lot of the liquids out of there now a few more dollops refried you can put as much as you want on me course bunch more chief you okay lord have mercy now we're going to throw this plate on indirect ops the hot coals you don't want to put your plate over the hot coals be cooking this about 300 and Gries Fahrenheit and they're done with the cheese melts oh yeah take a look at it pull it off the grill now this floor those top matey's blackout green onions jalapenos chunks of avocado you throw on this plate whatever you want going out a little cilantro on there of course you want to put on some of your dipping sauce sour cream now that nacho supreme pack we're just going to have to eat a
