[Music] I frequently hear from people that their mayonnaise is too thin or watery or that the oil separated so what I'm going to show you how to do today is actually how to save what we call a broken mayonnaise that just means that the Emulsion is broken so the oil has separated from the rest of the mayonnaise so here we have our broken mayonnaise basically the reason why this happens is most of the time it's because people add their oil a little bit too quickly and so things just start to separate and they don't come together as nicely as they should but it can actually be safe so I'm actually going to switch to using my immersion blender I actually have the Whisk attachment on here but an immersion blender would work well too you can also just use a whisk by hand if you'd like otherwise you can still use your blender but you need to clean everything out and start with a really clean Bowl so I've got a clean bowl and a fresh egg yolk as well as 1 and 1/2 teaspoons of really cold water going to start by blending that all up I'm trying not to make too big of a mess and then with the Whisk running I'm going to slowly add in my broken mayonnaise just as slowly as you should have with the oil when you were making your [Music] mayonnaise [Music] all right that is starting to look like exactly what we want almost done [Music] here last little bit of goodness out of there [Music] all right there we go the mayonnaise that we were hoping for before we got that oily thin mess spoon here and show you it's perfectly thick perfectly creamy and it's going to taste amazing in my tuna salad today
