[Music] so the first thing you do uh W your chopping balls because uh any dust goes into the dry boat and uh it's really hard to uh clean uh the blood afterwards so always W The Chopping bow first then put fish uh on the board head on the left side and the back towards you the first thing you do are taking head off I found it easier to take the head off so grab the fins and P up and put the cut to the bones and take these fins and give it PK turn over this is just cut the spines and then put the pin again C in the angle again and twist the head so it comes off if uh the head has a guts inside you can just pull this way and cut the tail so the guts all comes out in one in one movement and then turn the fish to this side and start from here just cut the skin and then goes to [Music] spine and then lift up lift up the meat and walk near walk near the meat on the spine and over do the same thing just the skins and then two the spine then lift up meat again then go through the spine just the TA side and turn over and cut through cut through the belly FL tail so no meat on the bones it goes to the other [Music] side put the hands here and just cut the skin on on the bottom side just the here and then go to the spine in one go then lift up the bones just go around the bones the spines and turn [Music] runs again uh put the hands lift up a little bit and cut the skin then to the spine then work around the bone and cut the spines off from my bell and just to walk around the bones to the tail and that's it no bones so that's uh fish is fed now um taking off uh the B flat so cut using a knife the tip cut uh into here on this angle and smoothing the knife in this way take off the bones as much as you can and cut the skin off a bit and then cut this uh little bones here so just cut straight through along the bones and cut through and the other side too the other side is [Music] same [Music] for skinning I use a Japanese uh shift knife it's very easy to use you can also use a Sashimi knife too and put the tail side on the left and cut a tiny bit to the skin using the tip of the knife and just uh move a little bit then grab a tail hold it tight and put put the tail on uh towards this way while you move the knife on this side at the same time make sure the fish doesn't have a scales so from tail c a little bit and poop and make sure there's no scales or bones it's a little bit tricky move until you get hung of it it's always putting a tail and uh moving moving nice at the same time [Music] la la la la la la
