welcome back everybody today we are going to make some delicious cornmeal pancakes cornmeal pancakes are amazing I didn't realize this until I was in a restaurant on like a vacation out in the Smoky Mountains with my family and we stopped in a little restaurant and they had them and it sounded interesting and oh my goodness they're fantastic so we are going to make some fast and cheap you can look for pancake recipes all day long but if you want to make them in a hurry thing that you would do is turn to a baking mix since these are cornmeal pancakes going back to the jiffy muffin mix stuff is very versatile and fantastic so we're gonna add that to our Bowl and let me show you what else we got now if you make this stuff according to the package directions there actually is a recipe for pancakes or waffles on the box here and it says to add an egg 2 tablespoons of shortening which has been melted and a half a cup of milk this is very close to the recipe they use for the cornmeal muffins which calls for an egg and 1/3 cup of milk and this is just ridiculous what well for starters there's not a whole lot of extra liquid in there and part of the reason that that significant is if you make this up according to its box directions for muffins you're gonna have a very thick mix and that's gonna be fine when you put it into a muffin pan and it's gonna bake up all puffy pink cakes we're actually going to make a wetter mixture than what they're making here part of that is because we want it to spread out and kind of get all crisp and golden brown and make some thinner pancakes and that's some thicker heavier ones if you're making them for waffles you know what I've never made corn or waffles before so I don't know you might actually be better off with something thicker here the shortening we're also going to nix because shortening has like no flavor at all and besides that shorting is terrible for you we are going to use butter I have half a stick of it there I know I know but it's not that much better you say but you know what butter is delicious and at least it's not full of trans fats and it's probably not going to kill you quite as fast as large amounts of shortening even though we do have quite a bit more butter here than they were calling for shortening but that is going to be fantastic when it's in there and be 1/2 a cup of milk that calls for this is 1/2 a cup of milk and that is nowhere near you know to make this as thick or that's thing rather as we want it to be so we're going to add more but let's go ahead in there now we're pretty close but butter needs this down and as you can see butter is now fully melted so we're just going to pour that straight into the batter that is also going to help thin it out a little bit and then we are just going to mix that you still got kind of a thick edge better let that be just a little bit sooner now this is where it becomes more of an heart unless it's like a terrible food by tablespoon and measure this out and figure out what the exact right amount is but that is absolutely no fun so we're just going to pour some milk straight splash the time you can always add more actually pretty close to what we want to go I'm gonna be there under a cup I'd say probably somewhere in the vicinity of 340 don't care later all right and I've got my griddle already pre-greased and heat it up so we're gonna go ahead and just dot this straight on now with normal pancakes you can kind of tell when they're done depending on the consistency of your batter by waiting for the center's to bubble up but the nice thing about using a griddle or if you've got a bigger skillet that will actually let you lift up the pancake and look under it you just put a spatula under there and take a quick peek at it and see how it's looking on the other side once it starts to get nice and toasty you're gonna do it see right there it's still not nearly done enough you actually start to see it get done around the edges if you look at it and say would be rich okay it's getting solid there and that probably means you can shimmy this under and get a good peak up underneath and see if it's getting toasty we're gonna go for a nice golden brown on one side flip them over and show you that one's done alright so right here you can tell this was the first one that I put on there see where it's starting to get a little brown and crusty here on the edge that's a good sign that underneath it's starting to look pretty nice it's where he's gonna go ahead with that and there you go fantastic that is a nice aesthetic or metal pancakes if you don't want to miss done just check them a little bit more frequently you can make a more pale if you want to you want to make sure that you get them nice and done in the center and adjust your heat accordingly if they're getting too done on one side but don't seem to be cooking all the way through for the second part since they're already halfway done anyway you're pretty much gonna just look at them after they've been on there a while take a peek underneath and so I've actually still got probably a couple more pancakes of this size left in my batter so if you want to make more than that I mean that's roughly eight about you know hand size pancakes or so palm size so if you want to make more just add more boxes it makes pretty easy to deal with and there's the last two on the griddle getting ready plate a six of them here looking fine if by chance you've never had cornmeal pancakes you should definitely check them out they are fantastic you can definitely taste the cornmeal in them so it's a little bit of a different flavor than a normal pancake but she'd eat them the same way butter them up put some maple syrup on it absolutely delicious
