hey folks welcome to the food shop today I'm going to show you all the tips tricks and instructions on how to make the absolute best lobster tails are you ready let's go first you want to make sure that your lobster tails are completely thawed and you can do this by placing the Frozen Tails into a bowl of cold water you have to use cold water you don't want to use warm water that'll shorten the time a little bit but the meat will fall apart and the meat will get tough so make sure you use cold water after about 30 minutes they'll be flexible like this and then the fins will be able to touch the head of the lobster and at that point you know you're completely thawed and ready to prepare for the oven now we want to try to remove as much water as possible now we want to prepare the tails for the oven with a sharp pair of cooking shears you want to place the shears on top of the meat and under the shell don't cut the meat and you want to cut down the back side of that shell all the way down to the fins or that flared out part at the end don't go all the way through because we're going to piggyback the meat on top of the shell we're going to use the shell for presentation I'll show you again put the shears in on top of the meat under the shell try to go straight back and there you go here's a good tip for you once you're done cutting the back of the shell flip the lobster tail over and press down on the inside of the membrane and crack it and then you can squeeze the lobster tail together this allows the meat to release from the shell a lot easier here I'll show you again flip it over press on the membrane you're cracking those little ribs and like I said this is going to allow that meat to remove from that shell a lot better we want to keep the meat intact as much as possible next you want to run your finger down on top of the meat on the inside of the shell to release all the meat from the shell be very careful not to damage the meat might take a second or two but you'll get the feel for it just run your fingers all along the meat releasing it from the shell nothing to it now once I have the meat released I'm going to place it back in the shelf for now and finish my second lock Lobster I'm just going to let this run and let you guys check it out next we want to coat the meat with some olive oil I use about a teaspoon lobster tail just pull the meat out and just rub that olive oil all over make sure you to coat the whole thing don't damage the meat just pull it out rub it all over if you need more olive oil go ahead and use it won't hurt anything now once I got it completely coated what I want to do is I want to piggyback the meat on top of the shell so again be careful here you don't want to detach the meat from the tail once you carefully remove the meat from the tail squeeze the shell together and then lay the meat across the back side of the shell this is how you're going to present the meal to your guests this is the point at which we add a little color and a little spice to our lobster tails I use a sweet paprika I don't use a smoked paprika just sprinkle a little bit across the top it adds a nice color in the end you want to place them on a baking sheet lined with parchment paper make sure they're spread out so they cook evenly you want to bake these at 375° for 1 and 1/2 minutes per ounce now I kind of broke it down for you here now after your time is up take them out of the oven and brush some clarified butter on them if you'd like to know how to make clarified butter I'll leave a link in the description of a video showing you just how to do that if you don't have clarified butter you can simply use just a pad of butter put one pad of butter on each one of the lobster tails but in my case I'm brushing some clarified butter on them and then we're going to broil them for 3 minutes and that'll finish them off once you're done broiling you take them out and there they are can't wait they look fantastic and there you have it folks simple easy and delicious lobster tails I hope you found some inspiration in today's video and if so please consider giving a like subscribe and don't forget to comment thanks for watching I truly appreciate it we will see you on the next one bye-bye
