hi today I am going to show you how to cook Cod fill it with the skin off now last year I did a video it was called how to cook cards pan-fried cod filleth and I cooked it with the skin on and you know it's very popular on youtubes about 25,000 views but the most questions I get asked is can you pan-fried cod with the skin off you know when I don't speak your back you can do it if you follow one simple trick and today I'm going to show you that special trick so first of all as you can see a beautiful beautiful piece of card fresh flowers look at the color white perfectly White's beautiful coloration on the skin so first thing we're going to do I am going to take the skin off now to skin a piece of fish you need a decent size knife you just Nick in the corner there get your knife in I can show you all of that up and you keep it exactly flat you don't even have to move the knife just wiggle the skin underneath and there you have skin off in one piece turn it over perfect now what I'm going to do I'm just going to trim that up so we've got nice decent piece now that is what you call annoying a card so next I'm going to show you this trick now and it's a crazy thing but trust me it works so I shall move that out the way that are white now for this plate so flower I don't know what two tablespoons crack some pepper in some salt just gently give that a mix up I mean the thing is if you were to try and throw this piece of fish without doing this it just wouldn't work right so once you've got that mix put in your card a piece of cod loin flour all over there and what you do is get it all on and once you've got it all on I can show you you just tuck the excess off you've got a lovely just did fill it of cod now the next bit these are crazy bit people are going to say what the hell are you doing one egg break in there what we do give that a mix up and what we're basically going to do is we're going to dip that just infinite into the egg and then we're going to pan fry it so first of all I'm going at the heat under the pan and then we'll do this in real time so the trick to cooking fish in the pan is you've got to get that pan really really hot so I'm just going to drop in some olive oil in there and just gently start eating that through until it shimmers writes my oil it is simmering nicely now is the magic trick you've got your dusted piece of card you place it in the egg now do not be frightened about this it does not taste of egg it won't be eggy at all you know you won't ruin your piece of fish all we're doing is creating a barrier so you get your Cod in and the excess air you take off trust me with this it works and just gently drop it into your pan now that's just to come overnight to be there what we're going to do we're going to put this in real time so I'm going to start the stopwatch put that over there and we've got to do put that little bit heat and what you doing obviously that egg when it's it that oil it's going to seal all that fish in so you won't get no breakage it won't fall apart and it's absolutely genius and it works it really really works and you know one of the comments you know I told the guy it took some explaining but he tried it you come back and he said you know that's brilliance that is brilliance but don't be put off by the egg you will not taste the thing so you're on 40 seconds your pot back in a minute so as you walk out to sea on the clock they're 2 minutes 15 seconds I'm just going to turn it in a minute but I just want to show you as you can see on the camera now how it starts cooking from the bottom up so we will flip it like that you have a look at that fantastic back on then put the minutes that side but what we're going to do now is going to add another butter then what we'll do is just gently gently face up save that lovely card in that fantastic butter put the start amount just get based in over that fish absolutely gorgeous see on the clock there three minutes 30 seconds but not a couple of minutes and this will be done just look at that lovely color on that you wouldn't even tell that was out and you definitely definitely won't taste it just all hold it together and it's a fantastic trip time tungsten steel the cop there just want look at the five minute mark so I'm just going to add a splash of lemon juice and just continue basing it on up you that looks fun separate college this zooms out gets to six minutes I'm going to turn it off lovely smells amazing but it's just sticking over here there's no heavy heat no Hardy just let it tick sit nice and gentle right tonight off well I shall let that rest for a minute we'll get on the flight now we'll look at it right same seven minutes let's get this out I'm going to put it below you have a perfect perfect cooked piece of cod and I'm going to show you how perfect that's cooked but just have a look at those flakes still moist still juicy cooked all the way through look at it what more could you ask and that lovely brown butter on top you know in the lemon juice seriously couldn't get easier and the taste well I tell this world so yes you can cook your cod fillet in a pond without the scheme on I'm going
