whoa oh my god I was like it's just really cold hi I'm Kara Nicoletti hi I'm Wylie Dufresne formerly of w15 alder restaurants and currently of Deuce doughnuts and coffee here in Brooklyn today we're gonna make a nitro cheese plate yeah we are alright so what do we need to get started for this well so we're gonna use nitro a couple different ways gonna make a classic cheese plate with ricotta some toast some black pepper some honey some olive oil and some fruit we're gonna carbonate the fruit well make fizzy fruit and then we're gonna freeze the honey now honey normally doesn't than freeze and what we have here is liquid nitrogen liquid nitrogen is minus 321 degrees it's so cold that we can actually have crunchy honey which is gonna be fun first we're gonna carbonate our fruit and the way that works is the same way you would carbonate a liquid we've got grapes and some melon and smaran just you want to just put them in put them in there yeah so really what's happening is when you have carbonated water carbon dioxide has diffused into the water and so what we're gonna do is we're gonna actually use the water that's in these fruits and we're gonna carbonate the water inside the fruit so what we're gonna do is take our fruit it's in here so right now we want there to be sure co2 Nick pure carbon dioxide okay I said so we can go into the water here as opposed to what well there's some oxygen than there right now right so we're just gonna let it out that's it so now there's nothing in there right okay so we're gonna drop it in there and get it real cold but you could throw it in your fridge I wouldn't throw it in your freezer because you might forget about it so we're gonna put two in there and we're gonna charge it up so now we have we have our garnish of our fruit plate or jewel pop that got in there and we're just yeah we're gonna give it a couple hours sweet the longer you leave it in there again the more fizzy it will get while it's doing its thing we're gonna work on the rest of our cheese plate great we're gonna use liquid nitrogen for Archie hey now liquid nitrogen is really cold negative 321 yeah so that's that's cold we're gonna show you how cold that is okay so things things that have you know the liquid nitrogen really freezes it freezes the water in things right right because that's what freezes when water freezes so in our mints in our mints we have a lot of you know a decent amount of water in mint hmm here we have some pretzels no there's really not much moisture to speak of in a pretzel which is why they can sit on the shelf for so long oh that's so cold now that's just a thermos it's a thermos okay it's meant to hold cold liquids if they're mostly it's okay so now see that I mean it's pretty that's pretty Russia super brittle Wow smell that it's super bright this is compressed nitrogen under pressure it's turned into a liquid it looks like it's boiling but it's actually going from a liquid to a gas instantly but it's having a hard time because it wants to be in mmm-hmm a really cold place like you see it's much happier in this thermos container this how-to is inspired by Starbucks nitro cold brew nitro is different from other cold brews because it's poured from a tap that infuses the cold brew with nitrogen creating millions of micro bubbles that give it a frothy texture it's naturally sweet and doesn't need to be served with any sugar or milk making it the perfect drink for a savory afternoon snack this is very different nitrogen this is not what is in the coffee no this is a liquid and what's in the coffee is a gas okay again we're playing playing with the flavors of a cheese plate we're not these are all old friends mm-hmm some ricotta some cracked black pepper some Malden this is just a piece of bread I brushed it with olive oil and some salt and baked it all guys I'd like to hang out together same with the grapes yep but fun things happen through the honey when you drop it so you can see as it sits in there it starts to look pretty nice beautiful yeah it's really it's really pretty neat we're just gonna maybe make a few wanna help you just make a few crostini yep so as you as you wish just put some crostini together again nope no right or wrong I'm gonna put a little pepper on are you okay with that no black pepper yeah and some Malden and this is a ricotta yeah this is some soft ricotta cheese so just got those guys three little guys very very simple yep just put a little pepper a little salt on there we're gonna put the honey on a second but let's get our fruit okay so the fruit has been sitting in here and like carbonated hopefully it was in there for about three hours okay whoa it's all fizzy have an orange soda this is amazing if it is the second orange soda that is a really cool delicious that's fun mm-hmm Wow so that's honey frozen honey Wow looks like vermicelli noodles that is incredible it's so crunchy and then it goes straight back to honey in your mouth right Wow things don't last forever but but they but they are fun when when they do if this wanted truth I'm going full the other way yeah do it so you know that's our cheese plate that is a spin on a classic there's a savoriness to this whole thing that would be really nice with like a sweeter coffee yeah I think this would be like a great sort of technically snack and like a nice cold brew would be great so here we have it the nitro cheese plate the nitro cheese plate yeah we've just got some fizzy fruit some chewy honey mm-hmm served with a little bit of soft ricotta some cracked black pepper some
