greetings and welcome back carnivores to today's video i want to talk to you today about prime rib prime rib rib roast and standing rib all the same thing comes from a seven bone section of the front quarter carcass of beef and that's where the ribeye comes from and today i'm going to show you how to take the rib eye off the bones so let's get busy [Music] so again the rib end as you can see the eye itself is quite small but the cap is huge the cap is the money that's my favorite and from the loin end you can see the eye itself is quite huge and the cap is really really tiny so let's go ahead and start the way we did the last one by just pulling this piece of fat off [Music] a little bit heavier on this one than those on the other one but that's okay they're all the same we'll just come down here and expose the eye like we did before and i'm going to go ahead and go around these bones again because it just makes it a little bit easier and don't go too far but about that deep just around these little the ends of the rib bones makes your life easier when you're taking the bones off the uh rib eye and there we go and while i'm here i'm also going to take this skin off sometimes really sometimes it's really easy and sometimes it's just a hard time like today and here we go turn it over sometimes it's easier to work from the top like i said you want to keep your knife close to the to the bone so you're just releasing the meat from the bone and not actually scoring the uh the ribeye itself we go around the red bone at the end of the ribbon the knob of the rib bone and as you can see that's where i went in and around the nub of the rib bone to make it a little easier for me there we go there we go trim this off again that's just the heavy fat on top of the ribbons in the old days people would save that when i say old days i mean the 1800s people would save that fat and render it for tallow and make candles again we're plunging and pulling back punching and pulling back beautiful rib eye beautiful ribeye plunge plunge plunge plunge pull back a word about um prime rib the designation prime doesn't necessarily mean that it's uh a category of prime here in canada we have a grading system which is an alphabetical grading system and it goes from a through to d and sometimes i think even e but single a double and triple a being our three top grades here in canada for uh for beef in the states it's uh prime select and choice but here in canada the designation prime or the word primer the adjective prime on the prime rib does not pardon me necessarily mean that it's prime prime rib so just to clarify that another word about grading here in canada and in the states for that matter the usda that's the us department of agriculture and the cfia here in canada the canadian food inspection agency they designate that everything has to be if it's processed for human consumption it has to be federally inspected and uh but what people don't understand or don't realize is the grading is actually uh voluntary so beautiful marbling as i said before that white cardinal effect gets larger and larger as you get closer to this end the rib end and then it disappears but this cap right here that's the money yes for me it's beautiful so we got here 2 4 6 8 10 18 11 12 30 14 i get out of this one and there we go look at the marbling that is beautiful and this cap right here i keep talking about the cap but i prefer the cap over this over the over the eye the eye don't get me wrong this whole thing is the is the the the the top drawer as far as i'm concerned on the beef carcass um again forgive my shaky hands but i can't do anything about it put my hand down but this this cap that is uh that's it's so so so tender all right so recap again seven bone or in this case six i couldn't count the bones because the bones are upside down on the tray but anyway we got our six bone roast and we got 14 steaks 2 4 6 8 10 12 14 steaks and uh money all day long thanks for uh joining me and uh it's time to get these bad boys backpacked and in the freezer once again thanks for coming out please appreciate your support uh by liking and subscribing to my channel carnivore confidential thanks folks
