in today's video we are trying out an experiment that you guys suggested can we freeze-dried cucumber and turn it into a pickle after the fact guys a while ago someone suggested that we try freeze drying cucumbers I think is similar to the idea of freeze drying watermelon where it's mostly water so we wanted to see what's left but they also suggested trying to pickle cucumbers that we had freeze-dried in case people don't know pickles are made by taking cucumbers and leaving them in a brine for a certain amount of time between 2 days and 2 months it depends on what process you're using if you're using a quick pickling process it can be 24 to 48 hours if you're canning it and you want it to be good indefinitely it's gonna take a little longer but you can leave it forever so we thought this would be interesting cuz things do change how they react when you freeze dry them and cucumbers are mostly water yeah like watermelon so this seemed fun so we're gonna try it this appears to be a jar pickles yes I made those these are made with pickled cucumbers cucumbers tiny that's it they're just made specifically for this these ones are seedless these ones are specifically made to have smaller seeds so that they're easier as a snack item these ones are just made to be pickles brine is something that you can use to preserve stuff and that's usually going to be salt based solution of some sort kind of you're going to use normally if you're pickling something is going to be vinegar and water in equal parts and then usually salt in sugar just kind of depends on where you want the ratios on that but it's chili flavor with that absolutely so all of these were put in a brine that I made a few of them are a little bit different so this was just a brine of equal water in vinegar when you mix water with cooking vinegar white vinegar normally has about a 5% acidity get to about 2.5 which is what you want for pickling in your brine then you add quite a bit of salt quite a bit of sugar if you want it and then this would had some seasonings a pickling spice it was made specifically for it in the canning area of the store so some things that you can add when you're making a brine and you're trying to soak stuff to preserve it yes you can add peppers you can add any sort of seasoning that you want if it's gonna fit in the jar something else that you want to add is pickling lime now pickling lime would use historically to keep a Christmas and a freshness to what you're pickling don't use it as much anymore now we're using basically this it's calcium fluoride the idea is basically you're introducing calcium to the pectin of whatever it is you're trying to tickle your fruit or vegetable it keeps it crisp it keeps it fresher and it also takes out any hassle you need of a pre-soak process so you just sort of stuff everything in you take a hot boiling brine you pour it over the top let it sit for a couple hours put the lids on stick in your fridge and a couple days later you've got pickles so I tried these ones earlier today they pretty much taste like pickles what you would expect a little fresher I actually like them more than store-bought pickles which I already love because we've tried to rehydrate food after it's been in the freezer I err I think as soon as we put the pickling cucumbers into it the the apples everything that we freeze-dried I think it's going to soak up that flavor like crazy but it's not going to end up as crisp as you want when it did again yeah when we've tried to rehydrate watermelon it ends up being really slimy and soggy doesn't have its normal crunching yeah so we rounding risks notwithstanding let's cut everything up put it on a freeze drying tray and then we're gonna pop in the freezer and see how they do [Music] [Music] our stuffs been through the freeze dryer just a little bit you said that you really wanted to try some pickles and bell peppers together there's apples in here and grapes I just started just putting stuff in a jar didn't do imagination there might be some other stuff in here it's good uh-huh that looks like the face of someone enjoying what they're eating I pre dread it it's just straight tastes like a pickle it's a pickle into the Apple pickle guys there's no apple flavor I'm gonna try some freeze-dried stuff while you enjoy that you try a little bit of freeze-dried bell pepper here they don't get like the same light airy crunchiness that some things do of apples for example you can see that they've mostly kept their shape I can cut through it and you can probably hear the crunch it has the light fluffy texture not a lot of food that we freeze dry gets it's pretty similar to astronaut ice cream in terms of texture honestly so our grapes do not seem to have completely freeze-dried for a little gummy and squishy still those aren't even raisins like you know how raisins are humiliated grapes these are worse so this like foam stuff eked out of a grape tastes good but just turned like gummy my mouth yep cucumber is almost entirely made of water and we've taken almost all the water out yeah but here's the thing we've done that why is this let me okay hang on I said almost all the water that's not close to almost we there's so much in there maybe we should have run it through twice but I think it's okay we're still just gonna because the chips I think got dried like these are absolutely these are like the styrofoam texture very lightweight these actually got blown away as you're trying to carry them yeah guys fun story about this morning is our freeze dryers upstairs and our studio is downstairs and you have to go outside to come back downstairs so I tried to carry this tray and a gust of wind hit it on the basketball court and we had to chase them so let's say cucumbers peppers grapes apples I like it a couple of cinnamon sticks into this one maybe into the grapes if we want it so for every full quart you're supposed to add 1/4 teaspoon it's the calcium chloride so you're gonna add just a sprinkle so then what we're gonna do is yeah a little bit of extra salt into these two and then for these ones let's add just a small amount of ginger okay so these have been sitting out for a little bit about 20 minutes everything is warm to the touch but not too hot I think we've had some texture changes maybe a little bit it's not what a pickle spear normally looks like that right there is like a full quarter of a cucumber yeah this reminds me of okra and Auggie just as good as a regular store-bought pickle or one of your homemade pickle spears mm-hmm uh-huh except way worse in every way have you ever had something they'd be slimy and crunchy at the same time look at that snap sour bell pepper perhaps better actually than that notice cuz there's some sugar in it mmm oh gosh yeah I got a mushy grate that's been soaking in vinegar for you oh thank god it absorbed nothing nothing yeah it's just a great that sort of has a little more liquid in it vinegar on the outside but yeah it was rolling around on your plate at a barbecue and it got like maybe some barbecue sauce on the outside that's it okay all right Apple which does seem to have absorbed quite a bit of liquid well you just squeezed all the liquid out [Music] you know pure vinegar in an apple sponge well that was even worse just to see what happens we're now going to leave them over the weekend see if anything changes guys we've left our homemade pickling concoctions going over the weekend and these are the ones that were freeze-dried so now we're going to test how our freeze-dried pickled things compared to our non freeze-dried pickled things does the freeze drying allow the pickling solution to get in and pickle it more thoroughly better do we still get any sort of crunch or have we ruined that by freeze drying it and popping all the little cells that make up the crunchy bits inside these fruits and vegetables so we've got a standard home pickled pickle a freeze-dried home pickled pickle which you can see squishes and a store-bought pickle here's an apple Goforth this was freeze-dried first do you want to try one ones that I made first and then try that I feel like I remember what they tasted like originally regular Apple that's been pickling for days and crunch to it let's see yep crunches just the way a pickled Apple should there's still a little bit of apple flavor to it the cinnamon is coming through I think I'm getting some of the gingers welcome I don't know if you can see but this is just folding around and knife whoa Wow oh my gosh that is intense vinegar rehydrated great I don't have high hopes for this that actually still tastes like a great dress this one doesn't that is weird Brees drawing it kept the grape flavor a lot of vinegar still some pepper flavor but Stephanie are there more flavorful than anything so far I feel like that could be really good in some kinds of second problem nope mm-hmm that was crunchy er like the freeze-dried pepper had more flavor more pepper flavor and was crunchy er than that it doesn't taste like it a wrong flavor like it doesn't taste like you invited and feel like oh that went bad or oh you weren't supposed to have that it's just different in a way I don't care for it this was our freeze-dried cucumber oh there's some juices just flowing right out of it like a lot take a look at the inside of this mess can't even slice through it it's too squishy it like squished and squashed around freeze-dried cucumber then pickled over the weekend [Music] no no no green what abomination Jew everything that's ever happened there's dr. pepper in there it's like a go get it super strong vinegar piccoli taste but like way too concentrated who freeze-drying cucumbers they become very lightweight mm-hmm very Airy I don't think they taste even a little bit good freeze-dried and then if you soak them in pickling brine this is they become awful guys you suggest this we tried it we hate it but we didn't know that we hated it beforehand so thanks the idea guys I learned how to pickle things kind of fun is there anything else that you want to see or
