hello again my name is John and welcome to another video with the Easter holiday it's just a couple of days away I thought I'd do a quick demo on how we make our hot cross buns these are very easy to meet cuz there's very little kneading involved you can't use a stand mixer to make these what I'm going to do these by hand here's a list of the ingredients you'll need it also won't be a list in the description box under the video right here we go start by adding all of the main ingredients to a ball and give it a good mix that's the flour yeast and sugar in mix that together with a whisk [Music] and includes the cinnamon the allspice and the salt the old spice you may know that as mixed spice powder and a final dry ingredient is the 250 grams that's 9 ounces of dried mixed fruit I'm using a mixture of dried pale and raisins you can add your own mixture and this is the zest of a whole lemon it gives a great flavor to the finished buns [Music] now on to the wet ingredients start with the warm milk which shall be about 40 degrees Celsius that's about 104 Fahrenheit followed by the vegetable oil under one beaten egg right I'll give that a good mix using my trusty wooden spoon handle it is a bit on a stiff side to mix but like I said you can't use a stand mixer right I'll tidy that up a bit and scrape down the sides of the bowl with a spatula cover it with Michel a cup and let it rise for 45 minutes in a warm draft-free spot if you do use a machine mix it until it just comes together and just let it rise in the mix of all but make sure it's covered [Music] after 45 minutes it should have at least doubled in size now turn it out onto a floured surface like I'm doing in a video and give it a few Falls this is just to get rid of all the Gus that's built up inside the door [Music] and that's it this door is now ready to be formed into bonds practically no work at all now if your ingredient quantities were correct at the start your finished door should we're just over 1200 grams that's 2 pound 10 ounces so to make 12 buns the mathematics is easy each bond will wear 100 grams that strain 1/2 ounces each [Music] okay I'll just wear them off and roll them into twelve balls ready to go into the bare contender eyes [Music] you'll also need a piece of oiled cling film or plastic wrap to cover the buns while they're risin [Music] place the dough balls in the deep oiled baking tin like the one I'm using I leave the tin dimensions in the description box under the video [Music] [Music] right cover the tin with the oiled plastic wrap and leave it in a warm draft-free place for at least one hour [Music] while I'm waiting for the buns to rise I'll mix up the ingredients for the crosses I'll also be making up the glaze for the top of the finished buns right for the crosses it's 100 grams of plain or all-purpose flour 2 teaspoons of icing or powdered sugar and 100 grams of water now give that a good mix and pour it into a piping bag are shown in the video this is a great way of filling a pipe in Park hands-free and note the upturned nozzle so the mixture doesn't run straight through now set that aside until you need it for the glaze it's simply 5 or 6 teaspoons of sugar dissolved in the same amount of water [Music] when there's only ten minutes left on the timer pre-heat your oven to 190 degrees Celsius that's 375 degrees Fahrenheit or gas mark 4 I'm setting mine to 170 as my oven is fan assisted and it runs about 20 degrees hotter than indicated on the dial orky as you can see they've risen beautifully and it's time to pipe the crosses across the top of the buns just copy my technique in the video it doesn't have to be crosses mine you can eat these buns anytime Leah just pipe any puttan you're like on the top when it comes to a gap in between the bonds just go straight across the mixture will find its own level as you can see try to keep the nozzle in straight level lines [Music] [Music] right get them into the preheated oven and set your timer for 15 minutes but turn it in around after 8 minutes for even cooking [Music] [Music] and that's all there is to cook in these hot cross buns and they look great on the smell of the spices is amazing now I put them on a wire rack and after 10 minutes I'll show you the best way to get them out of the tin without separating or damaging them okey it's been about 10 minutes and the tin is pretty cool but the buns are still fairly want to get them out I'll use another wire rack right first I'll flip it upside down then use another rack and flip it back again to right side up now I can clear them while they're still warm [Music] I know there was a lot of sugar went into this class but I barely use a quarter of what's in this cup on these twelve buns it's just to have a lot more to do off-camera nothing special about applying the clears just give it a good brush all over and it'll take about half an hour to set [Music] and this is another advantage of doing nice in the deep pond he can glaze them all at once [Music] okay I've got to try one of these while they're still warm one with a good helping of my homemade butter as you can see they are really soft and light and when you break one open the aroma of the spices is even stronger [Music] well just as on you these are gorgeous son gets the usual thumbs up I hope you try these no need Hot Cross Buns on their fantastic any time of the year not just at Easter I use the same recipe but make them twice the size and I call them tea cakes and tea cakes really are an English tradition of recipe and I'm not just
